PestoPesto is an extremely forgiving recipe. Feel free to experiment with it according to taste and availability of ingredients.

2 c. loosely packed fresh basil leaves, arugula or spinach leaves¼ c. olive oil¼ c. grated Parmesan cheese2 tbsp. pine nuts, roasted1 clove garlic, roasted½ tsp. salt

In food processor at medium speed, blend ingredients with ¼ c. hot tap water until smooth. Makes about ¾ c., enough to serve over one pound of pasta.

Herb Marinated Chicken Kabobs Chop fresh rosemary, oregano, basil and onions. Add olive oil, the juice of one lemon, and salt and pepper. Blend ingredients. Cut up chicken breasts into cubes and add to herb mixture. Add the juiced lemon, quartered, into mix. Toss chicken until well coated. Marinate in refrigerator for one to two days. Place chicken cubes onto presoaked wooden skewers and grill on high until done, but tender. The amount of grilling time will vary according to the size of your cubes. Keep a close watch on the chicken while grilling.

Tomato Basil SaladSlice ripe red tomatoes about ¼" thick and lay out single layer onto platter. Add finely sliced red onion, thin sliced fresh basil leaves and salt and pepper to taste. Drizzle with equal amounts of red balsamic vinegar and extra virgin olive oil. Garnish with fresh chive blossoms, torn apart. Allow to sit awhile for flavors to blend. Adding thin slices of fresh mozzarella cheese is optional.
