How is tea processed?Only real tea comes from the Camellia Sinensis plant. The type of tea is determined bythe way it is processed. Below is a chart that shows the steps that each of the varieties of tea must go through. Thetea with the least oxidation is white tea, then green tea, oolong, and black tea with the most oxidation. Our suppliersonly buy from estates with the highest quality standards. Natural fertilizers are used to improve quality and increaseyield.

Frequently Asked Questions About Brewing Tea

What is the difference between a tea bag and loose leaf tea?For over 5,000 years, tea has been brewed using whole leaf tea. A tea andcoffee merchant, Thomas Sullivan, tried to cut sampling costs by putting looseleaf tea in small silk sacks. In 1904 the tea bag began to be used commercially.Because the loose tea leaf could not expand, cheaper grades of tea were used.Because size no longer mattered, merchants could use the fannings or dust atthe bottom of the barrel. With loose leaf tea you can see what you get and the

leaves are able to unfold and release their anti-oxidants and flavor. Becauseloose leaf tea may be infused more than once it is more economical than theinferior tea bag. Each type of tea must be brewed at the proper temperature andlength of time.

What teas are infused at 180 degrees?White and Green Teas. White and Green tea leaves are not dried as long as Black and Herbal teas. Thereforethe leaves are green and tender. Using boiling water on them can scald the leaves. To obtain the best flavor fromyour White and Green tea, infuse the leaves in water that is no hotter than 180 degrees.

How do I know when the water is 180 degrees?You will know when it is 180 degrees when you hear your water kettle start to make asizzling sound. 180 degrees is just before the water starts to boil. You will start to see large

bubbles the size of fish eyes start to dance or try to rise to the surface of the water but theywill not break the surface at 180 degrees. What teas are brewed at 212 degrees or in boiling water?Black and Herbal Teas. Black and Herbal tea leaves are dried longer until they turn a dark brown/black color.Therefore the leaves are heartier and using boiling water on them is the best way to infuse the flavor from them.When your water is at a rolling boil, the temperature is perfect. (Black and Green teas that are combined or Oolongteas can be brewed at 190 degrees or let water set a minute after boiling.)

How long do I infuse each type of tea with the appropriate temperature water?

White and Green Tea Infuse for 3 minutes in 180 degree water. If infused longer than 3minutes, White and Green tea can become bitter. (Black and Green combination teas or Oolongteas are treated like green and should be brewed 3 minutes at 190 degrees.)Black Tea, Rooibos and Caf Collection Teas Infuse 4-5 minutes in 212-degree water (boilingwater). If infused longer than 5 minutes, Black tea can become bitter. Rooibos just becomesstronger.Herbal Tea (Tisanes) Infuse for 5-7 or more minutes in 212-degree water (boiling water).Infusing herbal tea longer than 7 minutes will NOT make it bitter, only stronger. (Tisanes andRooibos can be brewed for up to 15 minutes without becoming bitter to make ice tea.)

What do I do if I like my tea stronger?For White, Green, and Black Tea, do not infuse it longer, add more tea leaves to your infusing ring, ball, or teapotand then infuse it at the right temperature and length of time. On the back of each bag of tea you purchase fromHeavenly Special Teasyou will the proper brewing instructions for you to obtain the perfect cup of tea.

For Rooibos and Herbal Tea Since Rooibos and herbal tea do not really contain any tea leaves from the teaplant, but, instead, contain herbs, spices, roots, fruits, etc.; the longer you infuse the tea the stronger the tea willbecome.

What teas can I re-infuse?White and Green Teacan be re-infused 3-4 times, so instead of throwing those infused tea leaves away, simply setthem aside and re-infuse them with water for a second cup of tea. Each time you infuse your tea; more antioxidantsare released with less caffeine. In fact if you are not re-infusing your tea, you are wasting it. How many store boughttea bags do you know that you can re-infuse this many times!Black Tea and Caf Collectioncan be infused a second time with some loss of flavor. Adding a pinch of fresh tea tothe used leaves helps perk them up.Herbal (Tisanes) Tea and Rooibosdo not really contain any tea leaves from the tea plant so it does not re-infusewell. You can try to re-infuse it one additional time, but the tea you receive from the second infusion will be weaker.
