As any Taoseño can tell you, Thanksgiving through New Year’s Day is an immensely special time in our

neck of the woods. The joy and wonder of the holiday season here matches anywhere in the world.

When the temperature dips below freezing, the Enchanted Circle lights farolitos, luminarias, and other forms of twinkling lights. No matter the power source, the feeling is electric.

The town of Taos gets things started with the 28th annual Yuletide Caroling and Tree Lighting on Dec. 5 (page. 14). That same night, the charitable and fun Festival of Trees and Wreaths will take place at El Monte Sagrado Living Resort and Spa (page 8).

Every weekend has something

to offer for holiday revelers, from time-honored traditions such as Lighting Ledoux (page 40) and Bonfires on Bent (page 50), to events that express the more charitable and giving side of Taos, like Taos Feeds Taos (page 28) and various local toy drives (page 54).

This issue of Taos Aglow also offers a primer on various Spanish-language terms you might hear during the holidays in our part of the world (page 12) and recipes for the would-be chefs among us (page 34).

We also let readers know how and where to get involved with our volunteer directory (page 20) and when and where to dine out with our restaurant directory (page 30).

There are other holiday parties and traditions we hype

Festival of Trees and WreathsA magical event benefitting local charities

For the third-straight year, The Taos County Chamber of Commerce is hosting the Festival of Trees and Wreaths.

One of Taos’ most beloved holiday traditions, last year’s event elevated community awareness and raised more than $36,000 for local nonprofits.

The premise of the event is the same as it has always been (The Taos News put on the event during its first decade); organizations and businesses decorate a tree or wreath, which will be bid on during

the silent auction. The proceeds of the auction go to the nonprofit or charity that was designated by the tree-decorating group. Following the auction, charities often benefit once again, as buyers sometimes donate the trees and wreaths back to nonprofits.

The festival returns to the El Monte Sagrado Living Resort and Spa. The community is welcome to view and bid on the trees and wreaths in the resort’s conference center up until the Community

Festival of Trees and Wreaths

Holiday Party on Dec. 5, when the silent bidding really heats up. Entry tickets to the party are $20 per person.

Entertainment at the Community Holiday Party will be provided by the Jimmy Stadler Band and party-goers will enjoy hors d’ouevres and dessert bites while bidding on their favorite trees and wreaths. Entry includes two drink tickets for beer or wine.

Taos Ski Valley, Inc. will once again be running a shuttle van from

the free town of Taos parking lot on Kit Carson Road to the El Monte Sagrado Living Resort & Spa, and a photo booth will be provided by Sean Kelly Portraits photographer Chuck McLaughlin.

The Silent Auction bidding will close at 9 p.m. during the Community Holiday Party and the winning bidders and raffle prize winner will be announced.

Festivities get started in earnest at El Monte Sagrado on Thursday, Dec.

4, from 4 to 6 p.m. The Children’s Party will offer youth a chance to meet Santa Claus, enjoy holiday arts and crafts, and a snack.

The free children’s party is sponsored by the Taos County Chamber of Commerce, Twirl Toystore and Playspace, Moby Dickens Bookstore and El Monte Sagrado.

This year, the visit from Santa is sponsored by Taos Health Systems. This fun event gives kids

an opportunity to see and enjoy the trees and wreaths.

Come out to show your support for the many nonprofits who work diligently in the background to make Taos County a better place.

The culture of Northern New Mexico has been strongly influenced by the region’s Native and Hispanic

heritages. As such, even the vocabulary of the holidays can take on an almost foreign feeling for the average visitor.

Many of the terms in this guide, for instance, have their origins in our Spanish culture. With that in mind, here is a glossary of seasonal terms you’ll want to learn in order to enjoy the holiday season in Taos.

Bartolo: The shepard leader in the play “Los Pastores.”

Belén: Bethlehem

Biscochitos: Homemade, anise-flavored cookies that are a staple in many New Mexican households during the holidays.

Chile verde, chile colorado: Green chile, red chile.

Chocolate casero: Homemade hot chocolate.

Dando los Días: New Year’s Eve singing that honors neighbors and friends.

Día de Accíon de Gracias: Thanksgiving Day.

Emanuel: Emmanuel, the newborn savior, i.e. Jesus.

Empanaditas: Sweet turnovers made with mince meat, piñon, raisins and spices.

Farolitos: Little candles in

paper bags that line roads and buildings (in the southern part of the state, a farolito is a bonfire).

Felíz Navidad: Merry Christmas.

Los Comanches: The Comanches, but also a variety of Hispanicized Plains and nomadic Native American singing, dancing and drumming that takes place on New Year’s Day in Ranchos de Taos.

Los Matachines: The literal translation is “masked dancers,” but it is also the name of a pageant performed at Christmas by Pueblo Indians, and sometimes by Hispanic villagers.

Los Pastores: “Shepherds,” but in the holiday context it is a Spanish-language play about the shepherds going to Bethlehem to honor the Christ child.

Luminarias: Vigil fires of aromatic piñon wood (just as farolitos are bonfires in the

southern part of New Mexico, luminarias are candles in paper bags there as well; it’s simply reversed).

Gila: The shepherd cook in the play “Los Pastores.”

Hermitaño: “Los Pastores” spiritual leader, the hermit.

Las Posadas: From the Spanish word posada, meaning shelter — a Spanish-language pageant about the search for shelter by Joseph and Mary, as Jesus was about to be born.

Misa de Gallo: Midnight Mass.

Noche Buena: Christmas Eve.

Ocote: Pitch wood, used in luminarias.

Prospero Año Nuevo: Prosperous New Year.

Vino de Capulín: Chokecherry wine, a local staple.

The 2014 Taos Holiday season will officially kick off with the annual lighting of the town Christmas tree during the 28th annual Yuletide Caroling and Tree Lighting on Friday,

Dec. 5, from 4 to 6 p.m. at the Historic Taos Plaza.

Join Mayor Dan Barrone and the your neighbors for festive entertainment and more. Michael Dean from 95.9 The Mountain will be the event’s emcee, and the sound system will be provided by Eric Cortez

Mr. and Mrs. Claus are sure to make an appearance and there will be complimentary hot chocolate and other snacks around the plaza. Many businesses on Taos Plaza will be open late for the event and vehicles will not be allowed in the plaza during festivities. Special parking arrangements will be provided for people requiring ADA access to the event.

The Taos Art Museum Nutcracker Holiday Artist Market

It’s great to celebrate the holiday season, but it’s also great to spend some time celebrating unique and local art. The holidays are just

around the corner — and quite literally, so is the Taos Art Museum at Fechin House.

This winter season, the home of famed artist Nicolai Fechin (included on the National Register of Historic Places) will be showcasing an exemplary collection of pieces as part of its first annual Nutcracker Holiday Artist Market.

Come view crafts inspired by the same Russian and Southwestern traditions that enriched the design of the renowned Russian-American artist, Fechin. The Holiday Market will feature artwork ranging from wood, pottery, jewelry and tin to prints, photography, and fiber. People of all ages are invited to visit the gallery and purchase handmade pieces that are created by local artists (as gifts or as something for yourself), all while enjoying the beauty and magnificence of Fechin’s studio. The museum store has many festive holiday souvenirs to offer shoppers.

In the festive spirit of the holidays, the Nutcracker Holiday Artist Market will be offering holiday merchandise and free gift wrapping, as well as raffles with prizes such as gift certificates from local restaurants. Drawings for free Taos Art Museum memberships will also be held at the event. All members will receive a 10 percent discount on all purchases in both the Holiday Market and the Museum Store.

The Nutcracker Holiday Artist Market will be held at the Taos Art Museum at Fechin House from Dec. 5 through Dec. 14. It will be open to the public from 10 a.m. to 4 p.m., Tuesday through Sunday. For more information, call (575) 758-2690 ext. 101, or visit taosmuseums.org.

Make the holiday special for others

There are people and animals and organizations in our community that need help year round, but the holidays are always

a special time to start your own tradition of service community. Making the season special for those in need has a way of making your own holidays more special.

Whether it’s putting food on the tables for underprivileged families with Taos Feeds Taos or putting in some time at Holy Cross Hospital as a volunteer, there are numerous ways to be involved in your community this holiday season.

An extra hour or two of your time every week can make a meaningful difference in the lives of many, including yourself. Volunteering also sets a great example for our children, it can even be a great family activity.

Here is a partial list of organizations and causes that could use your help this holiday season (don’t forget the toy drives on page 54 and the Festival of Trees and Wreaths on page 8). Additional opportunities can be found in the Volunteer Opportunities section of The Taos News each week.

Hospice Volunteer Orientation. Find out if hospice is right for you at Mountain Home Health Office, 630 Paseo del Pueblo Sur, Suite 180; for ages 18 and older. Taos’ professional hospice team serves hospice patients and their families throughout Taos County. As a volunteer you become part of the team and receive hours of training and support so you can offer comfort and companionship to people on their end-of-life journey and their families. Adapted Tango is a system for learning and teaching Argentine Tango to people with Parkinson’s disease and other neurological challenges to gait and balance. For each student with gait difficulty, a volunteer is needed to dance with them. Donations welcome. Must be preregistered at [email protected]. Call (575) 613-0250.

Taos Living Center. Community members over age 21 are invited to play Scrabble, read to residents, polish fingernails, assist

with art classes, Bingo, parties and occasionally foster a pet. Call (575) 758-2300, ext. 209.

Taos Retirement Village Medical Center is looking for volunteers over the age of 21 to read, play board games, visit with our resident’s and assist with other activities. We will work with you and your schedule. Call Bonnie at (575) 758-8248 or stop by Taos Retirement Village, 414 Camino de la Placita, Taos.

Habitat for Humanity. Help a Taos family realize their dream of owning a home and paying an affordable mortgage in their hometown. No experience necessary, training and friendly, patient supervision provided. Call Susan Nuss at (575) 758-7827 or email [email protected] or visit the website taoshabitat.org.

Holy Cross Hospital Auxiliary seeks volunteers to serve their community hospital. Adult men and women needed in the Gift Shop, Day Surgery and as ED Patient Advocates or Lab Patient Advocates. Taos Feeds Taos Making the holidays better for local families

Taos Feeds Taos was founded in 1986, the brainchild of Jim Ulmer, a member of the local chapter of Veterans of

Foreign Wars. With the support of leading members of the VFW, Kiwanis Club, New Mexico National Guard, town of Taos, Taos Municipal Schools, local churches and other organizations, that first year provided food baskets for 300 Taos families.

This year marks the organization’s 29th year of helping needy Taos County families at

Christmastime. Taos Feeds Taos will give away 1,100 boxes of food at Taos Armory on Dec. 18 and 19. The project is a community effort: literally tons of nonperishable foods are collected at schools and local businesses, and up to $55,000 in cash donations are collected, with which food is then purchased from Taos grocery stores, each of which provides heavily-discounted prices on bulk food for the effort.

“The whole community gets together to make it happen,” says Francis Córdova, president of TFT.

All activities will happen at the National Guard Armory on the road to the Country Club and up the road at UNM Klauer Campus, 1145 State Road 110. Since its earliest days, the National Guard Armory has been used as the place to assemble and distribute baskets, and Taos area veterans and active soldiers have always played an important role. And for the last 10 years Kit Carson

Electric employees have contributed countless volunteer hours.

Taos Feeds Taos will present its seventh-annual food drive and benefit show with local band Last to Know on Saturday, Dec. 6 at Taos Mesa Brewing. Admission to the show is free with five cans or five pounds of nonperishable food.

Taos Community ChorusWinter Concert Season 2014

The Taos Community Chorus begins its 2014 Winter Concert Season the first weekend in December, with an

enchanting holiday program. Guest conductor Ryan Allais, collaborative pianist Claire Detels, and the TCC present “On a Winter’s Eve,” featuring Schubert’s “Mass in G,” Gustav Holst’s “Christmas Day,” Morten Lauridson’s “O Magnum Mysterium,” and Paul Halley’s “Freedom Trilogy.”

Concert dates are Saturday,

Dec. 6, at the historic La Santísima Trinidad Church in Arroyo Seco; Sunday, Dec. 7, at Our Lady of Guadalupe Church in Taos; Saturday, Dec. 13, at First Presbyterian Church of Taos; and Sunday, Dec. 14, at St. James Episcopal Church in Taos. All concerts begin at 3 p.m.

And, in the truest spirit of the season, the TCC will also be hosting a community “Messiah Sing-Along” this season, with Allais as guest conductor.

Taos Community Chorus

The chorus invites the community to come lift their voices in Handel’s inspiring oratorio and sing some of the

most well-known choruses from this masterwork. The “Messiah Sing-Along” is Sunday, Dec. 21, from 3 to 4:30 p.m. at St. James Episcopal Church of Taos. Singers should bring their scores, or they may borrow one at the door and listeners are welcome. Admission is free, with a suggested donation of $10.

Allais is a Taos High graduate and the current head band and choir director for Taos Municipal Schools. Singers from the Taos High School choir are currently

singing with TCC and the entire Taos High Choir will join TCC for the Sunday performances this season. In addition to working with Taos Municipal Schools, Allais is minister of Music at First Presbyterian Church of Taos. He attended Taos Opera Institute — a one-month intensive summer training in Taos Ski Valley — and joined the Santa Fe Opera cast this past summer as a chorister for Beethoven’s Fidelio.

Collaborative pianist Claire Detels will accompany the chorus, displaying her expressive and fluid expertise in playing music from a range of genres and eras. Soloists for Schubert’s work include soprano Julie Greer, tenor Bob Draper and baritone Chris Wyndham.

“Christmas Day” will feature soprano

Isabella Draper, contralto Julia Lacy Armstrong, tenor Francis Donald and baritone Chris Wyndham.

“Freedom Trilogy” will bring to the forefront smaller ensembles within the choir as well as alto Jutka Devenyi, contralto Julia Lacy Armstrong, and mezzo-soprano Elizabeth Calvert. Surprise local instrumentals will add some exciting texture to several pieces.

The TCC continues its 36th year of bringing quality choral concerts to the Taos community. Singers, ages 14-85, gather as volunteers each Monday evening for rehearsal. Choristers come from all parts of Taos County and many different occupations and life experiences. TCC is a nonprofit organization, funded by the singers,

ticket sales and individual and business donations. The chorus is also supported in part by Taos Community Foundation and New Mexico Arts, a division of the Department of Cultural Affairs, and the National Endowment for the Arts.

Tickets to “On a Winter’s Eve” are $15 at the door, $12 in advance, $10 seniors and students, children 12 and under free. Advance tickets are available at Que Pasa, 338 Paseo del Pueblo Sur, or through chorus members.

Admission to the “Messiah Sing-Along” is free, with a suggested $10 donation. Bring your own Messiah Score, or borrow one at the door.

Holiday treats with Alexandra Rose

A few years ago, The Taos News ran a holiday feature on self-taught chef Alexandra Rose. Rose shared

her story with us and a few great holiday recipes as well.

Due to the popularity of those recipes, we thought Taos Aglow might be an appropriate setting for sharing those recipes once again. Rose was even kind enough to bring by another holiday recipe, a yule log she found in a church cookbook from Connecticut.

Rose is a regular contestant in the Taos County Fair and she bakes at the Taos Food Center, a 5,000-square-foot commercial kitchen that is part of the Taos County Economic Development Corporation. For the article in 2012, Rose even came up with a special sugar cookie that she dubbed The Taos News butter cookie. We hope you enjoy her recipes as much as we have.

Alexandra’s meringues4 egg whites

1 cup white granulated sugar

Preheat oven to 250 degrees.

Beat egg whites till not completely stiff.

While you are still beating them, pour the sugar slowly.

Lay down a wax paper and spoon the meringues one a few inches from the other.

Leave them in the oven an hour or more.

When they are hard, remove them.

One can incorporate anything in them, such as nuts, raisins, or chocolate chips, or top them with sprinkles and eventually tie them side by side (using a very thin needle, Rose notes) and make garlands for the Christmas tree or any other occasion.

Alexandra’s Taos News Butter Cookies1/2 pound unsalted butter

1 cup white granulated sugar

2 cups white flour

2 egg yolks

Pinch of salt

Preheat oven to 350 degrees.

Beat together the butter and sugar until well-blended and fluffy. Add the egg yolks and beat again. Add the flour, blend well.

Roll the pastry dough to 1/4-inch thickness or any thickness you want, and cut with cookie shapes.

Cook in oven at 350 degrees for 15 to 20 minutes, then take out and cool.

While it is cooling, prepare different colors to decorate the cookies: in one plate put about one cup of white powdered sugar and mix it with white of egg till it is the consistency of sour cream. In another plate form different

sections of what you just prepared and put in each section one or two drops of color; mix well. Then, form designs on the cookies using these colors with the flat part or tip of a knife or toothpicks.

Spikkelaba —Norwegian reindeer cookie

(Rose adapted this old Norwegian recipe to create fun reindeer cookies — Norwegians get enough of reindeers as it is)

Boil together:1/4 cup of dark molasses

1/4 cup of sugar

1/4 cup of heavy cream

1/4 cup of butter

Cool to lukewarm and add:

1/4 teaspoon powdered cloves

1/4 teaspoon powdered ginger

1/4 teaspoon cinnamon

1/4 teaspoon cardamom

1/4 teaspoon nutmeg

Add scant 1 3/4 cup of flour.

Let stand covered in a warm place for a few hours or overnight.

Roll thin to 1/4-inch thickness, cut with cookie cutter and place on ungreased cookie sheet. Rub over the cookie dough with 1 egg white blended with a tablespoon of warm water. Place flaked almonds or any other decoration on the surface. Rose suggests using some egg white on almond slivers, prior to cooking, to press them to the heads of the

reindeer to make antlers.

Cook in oven at 375 degrees for 10 to 15 minutes.

Buche de Noel (Christmas Log)

3 eggs

1 cup sugar

1/3 cup cold water

1 teaspoon vanilla extract

1 cup sifted cake flour

1/4 cup unsweetened dry cocoa

1 teaspoon baking powder

1/4 teaspoon salt

Confectioners’ sugar

Mocha Butter Cream (recipe follows)

Whipped Cream Topping (recipe follows)

Pistachios, finely chopped, for garnish

Beat the eggs in a large bowl with an electric mixer at high speed until light and fluffy. Gradually beat in the sugar and continue to beat until thick and pale, about 8 to 10 minutes. Stir in the water and vanilla.

Sift the flour with the cocoa,baking powder, and salt. Fold into the egg mixture.

Grease a 15 x 10 1 inch jelly roll pan; line the bottom with waxed paper and grease the paper. Pour in the batter and spread evenly.

Bake in a preheated 375 degree oven for 12 to 15 minutes, or until the center springs back when lightly pressed.

Loosen the cake around the edges with a knife, then invert the pan onto a towel dusted with confectioners’ sugar. Peel off the waxed paper. Trim the edges of the cake for easier rolling. Roll up from the long side with the towel, jelly roll fashion. Cool.

When the cake is completely cool, carefully unroll and spread evenly with the Mocha Butter Cream. Refold and place in refrigerator; chill at least 24 hours.

An hour or more before serving, spread the log with the Whipped Cream Topping. Use the lines of a fork to create a bark-like appearance. Sprinkle the top (at the ends only) with the chopped pistachios, to resemble moss. Chill until ready to serve. (makes 8-10servings)

Rose says: “The Yule log of Christmas past is recreated with a chocolate cake roll which is filled, then coated with a frosting that is striated to resemble the bark, then garnished with chopped pistachios to suggest green moss. One can put tiny meringues under the frosting to resemble knots on the bark.”

Mocha Butter Cream1 cup (2 sticks) sweet butter, softened

3/4 cup sifted confectioners’ sugar

1 tablespoon instant coffee dissolved in 1 1/2 teaspoons hot water

2 egg whites

Beat the butter with the sugar until light and fluffy.  Blend in the dissolved coffee; then beat in the egg whites until the mixture is smooth.

Whipped Cream Topping1 cup heavy cream

1/4 cup sifted confectioners’ sugar

1/4 cup unsweetened dry cocoa

4 tablespoons creme de cacao (light or dark)

Celebrate the holidays with the Historic Taos Inn

The Christmas Tree lighting at The Historic Taos Inn is a tradition that many Taoseños look forward to year after year.

This Year, the tree lighting will be held on Saturday, Dec. 6, from 6:30 to 7 p.m. There will be carols with Jimmy Stadler followed by the lighting and much frivolity and fun.

Last year, many people had tears in their eyes as the crowd joined in for a sing-along of “So this is Christmas” by John Lennon as the tree was lit. Jimmy Stadler is the perfect host for this true Taos event. He brings a page of lyrics for everyone and his middle school/elementary students come out to play with him for the special evening.

The Taos Gospel Choir, led

by Mary Bruscini will play the following night on Sunday, Dec. 7, from 6:30 to 9:30 p.m. This is the choir’s annual Christmas performance so don’t miss this opportunity to witness the finest singers in Taos joining together for a harmonious night celebrating the spirit.

Additionally, New Year’s Eve at Taos Inn will start with an early show, from 4:30 to 6:30 p.m. by traveling musician Bryan Hayes, a Memphis tenor with plenty of folk/rock charm.

Headlining the night is The Rudy Boy Experiment — Southwest Blues rock innovators from Santa Fe — from 8 p.m. until midnight. The Taos Inn will bring in the New Year with party favors and a champagne toast.

Lighting LedouxA holiday reunion for the whole community

One of Taos’ most unique and beautiful holiday traditions, Lighting Ledoux returns to Ledoux Street — just

one block south of Taos Plaza — Saturday, Dec. 6, from 5 to 7 p.m.

The sense that something special is about to happen begins during the afternoon, when farolitos (small paper lanterns — also known as luminarias to some) begin to appear in front of the museums, galleries, and boutiques lining Ledoux Street — Taos’ oldest street. Around that time the street is closed to vehicles, leaving it open only to pedestrians. By 5 p.m., the farolitos are lit, casting an elegant glow down this curving, historic street. Just as the sun is setting

and a chill grips the air, bonfires (known locally as luminarias but as farolitos in other parts of the state) begin to punctuate the courtyards lining the street. And then the action begins.

A joyful parade originating at Taos Plaza leads Father Winter along Ledoux Street to The Harwood Museum of Art, where he spends the rest of the evening hearing children’s holiday wishes in the museum’s Arthur Bell Auditorium. The street fills with community members greeting each other during this very special holiday block party, with the occasional sound of bagpipes or Christmas carols animating the

spontaneous celebrations. And the Ledoux Street hosts open their doors for warmth, refreshments, and a range of special activities. Lighting Ledoux highlights this year will include:

Reneux Consignment will offer a celestial-themed runway show from 6 to 7 p.m.

Shree Yoga will create an altar space for wishes and prayers to be shared and sent out to the world. Lighting Ledoux celebrants are invited to light a candle, scribe their dreams and step into the future with love and light.

OptiMysm will offer live music all evening, featuring the Pott Creek Band and others. Savory and sweet treats will be served, along with a 20 percent Lighting Ledoux

discount.

203 Fine Art will light the way with a bonfire at the top of Ledoux Street.

Inger Jirby Gallery and Sculpture Garden will be roasting marshmallows at its bonfire, and playing and singing Christmas Carols.

Black Mesa Winery’s tasting room will serve hot cider and cookies, sell glasses of hot mulled wine (and other wine selections) to adults 21 and over, and feature live music by Bittersweet Highway from 5 to 8 p.m.

Linda Rauch Gallery will be offer refreshments, music, and an exhibition of Linda Rauch’s work entitled “Taos Miniatures and

Watercolors.”

The fun continues at The Harwood Museum of Art, which will be completely open and offering free admission to its popular ¡Orale! Kings and Queens of Cool exhibitions, along with art-making for the whole family in its Fern Hogue Mitchell Education Center. And, while the Museum’s Arthur Bell Auditorium is filled with children visiting Father Winter, its galleries will come alive at 6 p.m., with the sounds of Taos Youth Music School’s brand new World Music Choir, comprised of children in grades three through six. TYMS’ program, entitled “Sing Free,” will include songs from Afghanistan, Africa, Mexico, and a few surprises as well. “It’s a very

enthusiastic group, bursting to share what we’ve been learning,” says choir director Tara Somerville.

The best part of Lighting Ledoux, however, is the opportunity that it provides for Taos’ community to come together.

“During Lighting Ledoux, The Harwood Museum of Art welcomes more than 1,200 people over the course of two hours,” says Harwood Museum of Art Director Susan Longhenry. “It’s a very sweet shared experience that feels, in many ways, like a reunion — since we see many of these people every year. I think that’s what Lighting Ledoux is about for us.”

Taos Herb celebrates its fifth annual

cookie contest

On Dec. 11, Taos Herb Company will be hosting its annual Christmas holiday biscochito contest. In

the spirit of fun and the upcoming holidays, the business invites the honorable expert cookie tasters from Ancianos Senior Center to choose the best biscochito from the many variations of this traditional New Mexico Christmas cookie from Northern New Mexico bakers.

Based on their highly experienced biscochito taste buds, these seniors will select the most perfectly prepared holiday biscochito.

While many cultures have a traditional short bread recipe, the biscochito cookie, which has its roots in the Spanish explorers who came to New Mexico in the 16th century, is uniquely delicious. At that time they were called mantecosos, which translates in to “buttery ones” or mantecados, which refers to butter shortbread. Here in New Mexico Biscochitos are commonly thought of as THE Christmas cookie, but this yummy treat can be found at many other celebrations such as weddings, quinceañeras, baptisms and other celebrations through out the year.

The current biscochito maintains the quality of having that melt in

your mouth goodness that comes from being made with butter or lard, laced with the palette pleasing taste of anise seed. In fact, it is the anise seed (pimpinella anisum) that distinguishes the biscochito from other short bread cookies, but most biscochito cooks know that other secret ingredients may be included to make their recipe uniquely different.

Anis seeds have a distinct licorice-like flavor. It is interesting to note that the aromatic seeds of anise are useful to relax tummy cramps and as a tea for colicky babies. It is also an old-time remedy for hiccups. Anise is related to carrots, celery and our own osha de la sierra.

The contest will take place at Taos Herb Company on Thursday, Dec. 11 at 1:30 p.m. Cookies must be brought to Taos Herb Company on the day of the contest by 10 a.m..

Biscochitos1 lb butter, lard or shortening1 ½ cups sugar2 eggs2 tbl anise seed½ cup water

6 cups unbleached flour1 tbl baking powder1 tsp salt1/4 cup sugar mixed with 1-2 tsp cinnamon for dredging

Sift together flour, baking powder and salt. Cream the butter, lard or shortening with sugar and anise seeds. In separate bowl beat eggs until light and fluffy and add to the creamed mixture. Add dry ingredients and water to form stiff dough. (Add more water as necessary.)

Form into a ball, wrap in plastic wrap and refrigerate overnight.

The next day, preheat the oven to 350º F. Have ready 2 ungreased cookie sheets. Let dough stand at room temperature till soft enough to roll out ; divide into quarters and roll to 1/8” thickness. Cut out with 2 ½”-3” cutter and bake 10-15 minutes, or until cookies are pale blond on top, golden on bottom. Sprinkle with sugar/cinnamon while still warm. Makes about 4-5 dozen cookies

The magic of the holidaysThe magic of Twirl!

There will also be seasonal craft

activities from 11 a.m. to 1 p.m. on Saturday, Dec. 6 and Dec. 20. There is no charge for any of these events and all materials are free, but participants are encouraged to make a donation to support the Dreamtree Project.

In mid-afternoon, the Aztec Dancers will entertain and later Billy Archuleta and the Guadalupe Choir will offer holiday songs. Even later, the Taos Community Chorus will harmonize their way through favorite holiday tunes.

Throughout the evening, all caroling groups are welcome to stroll the streets or gather around a bonfire and join in offering songs for everyone to sing along.

Festivities will begin with “Santa Paws” in front of Moby Dickens, from noon until 4 p.m. Furry family friends are invited to have their

picture taken with Santa Paws. Pets will also be available for adoption at this free event and volunteers will tell you about Taos’ many services for our animal friends. Hot beverages and snacks will be served outside and bonfires (luminarias) will keep everyone warm and add to the holiday cheer.

The main reception will be from 4 to 7 p.m. Farolitos (candle-lit paper bags) will glow and there will be chile at Mudd n Flood on Bent Street, and posole near La Tierra Minerals at the John Dunn Shops.

And as it has for 25 years, Bent Street Café & Deli will offer tamales, chile, holiday cookies and hot cider and hot chocolate at the

junction of John Dunn Way and Bent Street.

This celebration and feast is offered by the 40 Bent Street and John Dunn galleries, restaurants and shops to thank everyone for their friendship and support all year, to make new friends, and to celebrate the light within and without.

Bent Street and the John Dunn shops are all locally owned by Taos friends and neighbors. They offer a wide variety of unique, quality gifts in all price ranges.

The Lujan’s family Angel Tree Project

The Angel Tree Project, created by Jerry and Shirley Lujan 18 years ago in Taos Pueblo, now includes Taos and Rio Arriba counties. The goal is to offer clothes, gifts and household items to disadvantaged children, special need citizens and the elderly.

“Toys, of course, are also a very important part of the project,” said Shirley Lujan. “We want all the children in our community to receive a special holiday gift. CAV: taking the stress off of busy moms

Community Against Violence is also hosting its annual 18th Angel Tree holiday gift-giving for families with children who are survivors of domestic and/ or sexual violence.

“To participate, pass by the CAV office on 945 Salazar Road and pick up an ‘angel card’ so you can buy a gift for a boy or a girl,” said Loretta Romo, CAV service data manager.

Gifts can be wrapped or unwrapped.

“A children’s advocate and I started the toy drive in 1997 when we realized that the kids who were staying here were not going to get any presents unless we did something about it,” said Romo. “We asked for, and received, tremendous community support, and we have kept doing it all these years. There is nothing more rewarding than to see the kids’ faces when they open their gifts, especially those children who have to stay in the shelter at that time of the year. It’s hard enough for them not to be at home, so we try to take the stress off of their already busy moms.”

Gift cards for Bealls or any other store are very much in demand, but some requests are quite specific.

For example, a boy, 15 years old, is asking for “anything Patriots.” A girl, 16, would like a DVD copy of “The Fault in Our Stars.” Another girl, also 15, would like a DVD copy of “Bless Me Ultima.”

“Gift for teenagers are the hardest to fill, but of course we appreciate any kind of items, and monetary donations that will be used to buy gift for the children,” said Romo.

Last year was even more special at CAV because Santa paid a visit to the shelter, to the children’s delight.

“We are hoping to have him back this year as well,” said Romo. “Those kids need all the help and happiness we can bring to them. So our message to the community is: don’t forget our angels!”

One of the best ways of getting into the spirit of the season is performing in, or just watching, a Christmas

play. A local favorite is Los Pastores, which revolves around the shepherds’ journey to Bethlehem in search of the baby Jesus.

The play was staged in New Mexico for the first time in the 1600s.

“Many people who lived in Northern New Mexico at that time were farmers and shepherds themselves,” said Enrique Lamadrid, a cultural historian and professor from the University of New Mexico. “So it was easy for them to identify themselves with the characters of the play and their struggles.”

Los Pastores in TaosThe Córdova family (Arsenio,

his wife Kathy and their daughter Tessa) has been instrumental in keeping the play alive in Taos for the last 34 years with their company, Sangre de Cristo Liturgies.

“As far as I know, there are only two theater groups in all New Mexico that present this play every year,” says Arsenio Córdova, the director. “One from Belen and ours here in Taos.”

Over the last three decades, Córdova has trained more than 500 actors for Los Pastores. They range from 3-year-old kids to people in their 80s like Juanita Domínguez, who is 82 years old and will play Lucifer this season.

“Juanita is one of our best actors,” said Córdova. “She was part of the Cesar Chávez movement and the Luis Váldez’s theater troupe. Her husband also acted in Los Pastores until he passed away.”

The musicLos Pastores is considered

one of the most musical of all the morality plays from the 16th century.

“Some of the songs we sing today are very old, but there are also several pieces that I composed for the play,” said Córdova.

Córdova’s music has traveled the world. When Pope John Paul II died, a rendition of Córdova’s song, “Que los angeles te lleven al Paraiso” (May the angels lead you to Paradise), was played at his funeral.

Though Córdova has kept true to Los Pastores script, he has also made a few additions and changes.

“In the original play, the characters of Mary and Joseph didn’t say anything, but I composed a song in which they welcome the shepherds,” he said.

He also added “Pastorcitos de Judea,” a Spanish villancico or Christmas song that he heard in Mexico.

The theater groupSangre de Cristo Liturgies is

devoted to the preservation of the history, traditions and culture of New Mexico.

They took part in the Fiestas de Taos 2014 Royal Pageant. Last July, the group accompanied Jenna Rose Louisa Amelia Peralta, who would be crowned Reina, during the talent competition, when she sang a Los Pastores song entitled “Cielo Soberano.”

“Jenna and her sister Juliette, who was also a Reina de Taos in 2012, have played in the Sangre de Cristo Liturgies for many years,” said Córdova.

Tessa Córdova, the faithful shepherdess Gila

Theresa (Tessa) Córdova has a doctorate in American Studies from the University of New Mexico and has been performing in productions sponsored by Sangre de Cristo Liturgies for 34 years—she started as a little girl.

“It’s in my blood,” she said. “En mi sangre y en mi cultura.”

Like many members of Sangre de Cristo Liturgies, Córdova has taken on several roles throughout her life, but the one she has played for the longest time is Gila, the young shepherdess.

“I think that the children who grew up acting in the play are all pastores, in a sense,” she said. “Like the shepherds, we proclaim the good news. And we are also like

a family, a family that keeps getting bigger every year because many actors now bring their children so they can take part in the play as well.”

They often travel together, taking Los Pastores to different towns in New Mexico and Colorado.

“Traveling and rehearsing have helped us become very close to each other,” she said. “We eat together, we pray together … We always say something positive after the rehearsals. There is no room for negativity among us.”

Now she is the play’s musical director and co-directs it with her father.

Las PosadasAnother popular tradition is

Las Posadas, a celebration that reenacts the holy family’s quest for lodging in Bethlehem. It is performed for nine consecutive nights before Christmas.

The participants are divided into two groups, those looking for shelter with Mary and Joseph (los posadistas) and the innkeepers, or posaderos, who refuse to let them in until the last night, when they are finally welcomed and offered hot chocolate and biscochitos.

Larry Torres, a UNM-Taos professor, distinguished scholar and recently ordained deacon, has been leading Las Posadas at the Holy Trinity Parish in Arroyo Seco for more than 30 years. He also wrote “Las Posadas, a Hispanic Christmas Tradition,” about the origins and meaning of the play. The book is available at Amazon.com.

Celebrate Chanukah An observation of peace and good will

Chanukah is a special holiday season for the Jewish community. Since it typically falls in December, it erroneously

draws comparisons to the Christian holiday Christmas. However, other than proximity on the calendar, Chanukah shares very little with Christmas.

The holiday commemorates the rededication of the Holy Temple in Jerusalem in the second century B.C. The word itself means “dedication” in Hebrew, and traditionally Chanukah begins on

the 25th of Kislev on the Hebrew calendar, which is normally in November or December.

As rich a cultural and religious holiday as you will find, Chanukah is also known as the Festival of Lights. And, like anywhere, Taos has developed its own Chanukah traditions.

For the 13th year in a row, the annual Peace Chanukah will be presented by the Taos Jewish Center. The celebration brings together speakers and participants

Celebrate Chanukah

alike — from all faiths and traditions — to experience the lighting of the Chanukah candles, coupled with story, song, and prayer.

“Peace Chanukah was first celebrated on the East Coast following the 9/11 attacks in 2001 to bring people together. It was brought to Taos and started here in Taos under the auspices of the Taos Jewish Center in December of 2002,” says Gary Atias, president of the Taos Jewish Center. “We have continued this tradition every year since then. As far as we know, nowhere else are they still doing it.”

Speakers at the event will include those from various

Christian Churches, the Unitarian Congregation of Taos, Taos Pueblo, the Interspiritual Movement and the Hindu, Muslim and Buddhist communities. Led by a “choir” of skilled Taos performers, guests will sing songs and recite prayers. Song sheets will be provided so everyone can sing along.

This year, Chanukah begins Tuesday, Dec. 16, and lasts for eight nights. Peace Chanukah will be held on the second night, Wednesday, Dec. 17. Audience members are encouraged to bring menorahs (candles will be provided), which will be lit during the ceremony. Those who are able are asked to bring non-

perishable food items to put toward a collection for the Shared Table and the Taos Coalition to End Homelessness.

“It’s very moving to be in the lovely big room lit up with Chanukah lights and filled with beautiful music, powerful words and a ‘congregation’ representing many parts of our wonderful Taos community,” says event coordinator Bette Myerson.

Anyone and everyone is welcome to join Peace Chanukah.

The celebration of Chanukah commemorates a miracle that Jews believe occured in the temple: When the Jews first returned to the Holy Temple after defeating

Hellenist Syrians who made it illegal for Jews to worship, they found only enough oil to light the temple’s menorah for one day. Miraculously, the flamed remained lit for eight days and nights, giving them enough time to find more oil to sustain the fire.

Chanukah celebrations include games, gifts, traditional foods and lighting a new candle on the menorah each night. And traditionally, the holiday is celebrated more in the home than in public.

The holiday differentTaos Pueblo

Some say you’ve never really seen Taos Pueblo unless you have been there during Christmas time. The season is one of the best

times to experience the rich culture and atmosphere that Taos Pueblo has to offer.

On Christmas Eve, the Procession of the Virgin Mary occurs. At around sunset, the procession begins outside the San Geronimo Church. Leading the ceremony is a group of Pueblo men carrying hunting rifles, which are fired into the air every few seconds.

Following them is a statue of the Virgin Mary upon a dais, and accompanying the procession are drummers, dancers, and singers — who are often then joined by visitors. For those who would rather spectate, they can stay warm next to bonfires that are spread throughout the area (though be sure to wear warm clothes either way — Christmas Eve is often one of the coldest nights of the year).

The next day, on Christmas, visitors can return for either the

Deer or Matachines Dance. Then, for more celebration, the Turtle Dance is held on Jan. 1, New Year’s Day (tentatively at dawn). Soon after, on Jan. 6, the Buffalo or Deer Dance will be held. As the date approaches, call Taos Pueblo at (575) 758-1028 for times. All these events have free admission,

but the Pueblo asks that there be no cameras, cell phones, or any recording device at Christmas Eve or any other religious ceremony.

During the winter season, make sure to stop by the shops at Taos Pueblo. They offer some unique gifts, and the Pueblo takes care to make sure all are Native-made.

Every cent of profit goes directly to the shopkeeper or artist. The holiday season makes for a great time to discover the history, culture, and art of Taos Pueblo that make it a National Historic Landmark and a UNESCO World Heritage Site.

Torchlight ParadesShining beacons on the hill

A common sight at ski resorts for many years has been the torchlight parade, late evening events that light up the

slopes as lines of skiers make a run down the mountain with only flares to light their lines.

Some resorts will offer fireworks to light up the night a bit more. Taos Ski Valley, Red River Ski Area and Angel Fire Resort all feature torchlight parades during the holiday season.

The Red River torchlight has been taking place for more than 30 years. The resort offers a torchlight every Saturday through the ski season, beginning at 7 p.m.

and special torchlight parades on Christmas Eve and New Year’s Eve. The skiers are usually locals and employees of the resort, which is true also at Angel Fire and TSV.

TSV, similarly, has held torchlight parades for more than three decades, with parades taking place Christmas Eve, New Year’s Eve and then again in March to celebrate founder Ernie Blake’s birthday.

Angel Fire holds torchlight parades on Christmas Eve and New Year’s Eve, with an impressive fireworks display to round out the scene.

If you have the opportunity to catch a torchlight parade, you’ll be glad you did.
