Welcome to the June edition of Around Lutterworth Magazine By the time you read this, June will have begun and Bank Holidays will be upon us again. This month we are celebrating the Queen’s Diamond Jubilee, the journey of the Olympic flame across our nation, the Wimbledon Tennis Tournament, Father’s Day and the longest day of the year. With all that’s going on in June, I hope you have time to flick through this month’s copy!

Everyone seems so busy - our team have been working away like beavers over the last couple of months on a number of projects that we hope will make your ‘Around’ experience more valuable and enjoyable. We take this opportunity to thank our readers and advertisers for bearing with us while we try to optimise our ‘behind the scenes’ structure. Once this scaffolding is in place, we can build greater things.

Our new website is up and running. It has a refreshing, bright home page and gives all the information readers and advertisers will need. Our latest magazines can also be viewed here. While talking about our strides forward I should mention that, this month we say goodbye and wish the best of luck to our graphic designer, Caroline, who is moving on to new challenges. More news on our new team next month!

As I mentioned in the last edition, Roy and I are investigating the best ways of helping local charitable organisations. Along this theme I, and five other ladies of varying ages, have

signed up for Rugby’s Race for Life and look forward to completing the 5km event on July 15th. We have called ourselves The Press Gang and we can be found through the Race for Life and JustGiving websites. Please visit the Race for Life/Cancer Research website if you have access, it’s full of information and inspirational articles.

Finally, I’d like to say a big thank you to Cllr Tony Hirons, Mayor of Lutterworth for contacting me recently. He very kindly gave me some information on Lutterworth’s Jubilee celebrations and offered to forward future details about ‘What’s On’ in Lutterworth for us to include in your magazine. We look forward to including an editorial and some photographs from the Jubilee celebrations in next month’s issue.

Seasonal Recipe

Pan-fried Mackerel Fillet with Lemon Spring Vegetables

Heat the butter in a sauté pan or deep frying pan. Gently cook the shallot for about 5 minutes until it starts to soften and becomes translucent. Add the garlic and cook for another couple of minutes.

Add the vegetable mix, cutting anything large like carrots, to match the size of the other vegetables. Stir for a minute or so, pour in the stock and lemon juice and add the zest. Season, then cover and cook for 5 minutes.

Spoon in the creme fraiche and dill and cook for another 3-4 minutes.

Heat another frying pan with the olive oil. Slice the mackerel fillet in half lengthways, taking out any bones you may find. Season the fish then pan-fry for 2 minutes on each side.

Serve the mackerel on a bed of the vegetables with plenty of lemon wedges and some new potatoes.

• 25g butter

• 1 banana shallot, peeled and sliced

• 1 clove garlic, peeled and crushed

• 400g mixed fresh vegetables like broad beans, carrots, peas, spring greens, broccoli

• 100ml stock

• Juice and zest of 1/2 lemon

• Sea salt and freshly ground pepper

• 150g creme fraiche

• 3-4 sprigs dill, roughly chopped

• 1/2 tbsp olive oil

• 2 large mackerel fillets
