How “Super” are your foods?

Ingredients:1 pound halved and pitted fresh sweet cherries (4 cups)1/3 cup sugar1 teaspoon finely chopped fresh rosemary2 teaspoons balsamic vinegarCoarse salt and ground pepper

Directions:1. In a small saucepan, combine cherries, sugar, fresh rosemary and 1 tablespoon water.2. Bring to a boil over high heat. Reduce heat to medium-low, cover and simmer until cherries are tender and liquid is slightly thickened, 12 to 15 minutes.3. Remove from heat and stir in vinegar; season lightly with salt and pepper. Let stand at room temperature until cool. Serve or store. Makes 1 cup.

Green leafy vegetables such as these contain a wide variety of vitamins, minerals and easily digestible proteins.

Greens: Spinach, Kale, Broccoli

Fruits: Cherries, Blueberries, Cranberries, Oranges, Apples

All of these fruits contain high concentrations of essential nutrients making them a smart snacking choice.

Proteins: Wild Salmon, Turkey, Beans

While these proteins are all very different, they possess significant health benefits making them “super foods.” Wild salmon is a great source of omega-3 fatty acids, a good fat that is essential for a healthy diet. Turkey is a lean meat with a high nutrient content. Beans are a great alternative to meat because they are a low-fat source of protein with a high concentration of nutrients.

This delicious and healthy recipe makes a cherry compote that can be spread over a wide variety of food, from crackers to turkey sandwiches!

Below are examples of super foods that are readily available in the average supermarket. Adding these to your diet will boost nutrient intake without a heavy increase in calorie consumption.

*If you have stage 4 or 5 kidney disease or are on dialysis, you may need to limit your intake of these foods due to high potassium and phosphorous content.
