The practice of blending Shiraz (a red wine grape called Syrah in France) with Viognier (a white wine grape) began because these two grapes grow alongside each other in the Northern Rhône Valley of France, their original home. Rhône winemakers often ferment the grapes together and, under French law, are allowed to blend up to 20 percent Viognier into their red wines. Because Viognier brings an aromatic boost to the wine, this practice has become popular in other countries as well, especially Australia. In fact, Australia has long been renowned as a great producer of Shiraz wines. Some of the most prized are blended with Viognier for a full bodied wine bursting with floral and fruit aromatics.

Australia Shiraz Viognier is stylish yet refined. It is lush with a tapestry of smooth tannins and succulent dried fruits, vanilla and black pepper.

Carménère is considered the national grape of Chile. Like many of the world’s leading grapes, it was born in the French wine region of Bordeaux. The grape was finicky in the French climate, and often had difficulties ripening. When the Phylloxera plague of 1857 wiped out most of Europe’s vineyards, Carménère was considered extinct. Luckily, before Phylloxera hit Europe, a few Carménère cuttings had been exported to Chile, whose wine region was just getting started. The vines flourished in the drier climate and were soon growing in most Chilean wine regions. But, up until 20 years ago, it was often mistaken for Merlot, despite their different appearance in the vineyard and distinct tastes in the glass.

Spain Tempranillo

Tempranillo is the signature wine grape in its native home of Spain, where they have been making it into wine for over 2,000 years. In all great Spanish wine regions, from Rioja, Navarra, Ribera del Duero through to Toro, La Mancha and Penedès, it is the defining grape of the best red wines. The name Tempranillo is derived from the word ”temprano”, which in Spanish means “early”, because it’s considered an early ripener among Spain’s red wine grapes. It was traditionally cultivated as a low bush vine dotting the Spanish landscape, but with modern viticultural practices, this is now changing. When Tempranillo is grown, with care, in the right spots, it produces extremely long-lived and deliciously fruity wines.

Germany Riesling

Riesling is an aromatic white wine grape variety that originated in the Rhine region of Germany, where it is still the most planted grape variety grown throughout the country. In Germany’s most famous winemaking region, the Mosel, it makes up a whopping 60% of total plantings. While it is now also grown in almost every cool wine making region in the world, German Rieslings are still considered amongst the finest. In the best vintages, German Rieslings are prized by wine collectors the world over. Riesling typically displays flowery, almost perfumed, aromas as well as high acidity. Because of this hallmark acidity, it can be used to make dry, semi-sweet and sweet wines.

That is why for our RQ2017, we have chosen yeasts that will enhance the varietal character of the grapes to ensure your wine properly replicates the wines made in the famous winemaking regions of France. During fermentation of grape juice, yeast produce small amounts of volatile compounds that contribute characteristics to a wine’s aromas are called esters, aldehydes and ketones. Advances in understanding of how yeast control the formation of these aroma compounds has lead to the development of new yeast strains which can alter the emphasis and enhance of the various aroma notes in the wine.

Bourgovin RC 212 (red kits)

This yeast was specifically developed in Burgundy, France for red wine fermentations to enhance varietal character by emphasizing ripe berry and fruit aromas. It also promotes good color stability and extraction.

QA23 (white kit)

This yeast was first isolated in the Portuguese vineyards of Vinho Verde. It is best known for its low nutrient and oxygen requirements and its ability to ferment at lower temperatures (15°C/59°F). It creates wines with floral, citrus and tropical fruit flavors.

• The ideal fermentation temperature for RC212 is 20°C-30°C /(68°F-86°F) while QA23 will ferment best between 15°C-25°C (59°F-77°F).

• If using RC212 ensure that juice is well mixed for 30 seconds prior to inoculation.

• Ensure that juice temperature is between 18°C-23°C (64°F-73°F) for both yeast strains before inoculation.

• Keep fermenters away from areas prone to temperature fluctuations (doors and windows).

• Both yeast strains will have a short lag phase with fermentation starting within 24 hours of inoculation.

• If using RC212 mix fermenter every other day with a long handled spoon to promote a clean and healthy fermentation.

Wine is aged together with wood to enhance the flavor, aroma and complexity of the wine through the extraction of substances from the wood into the wine.

Hungarian Oak is becoming more popular for oak ageing premium wines because it is known to impart more subtle flavors and firmer, but silkier tannins, similar to French oak. Hungarian oak contributes flavors such as vanilla, mocha, leather, bitter chocolate, and hints of black pepper.

American oak is used by many winemakers for the aromatic sweetness it contributes to the wine. On the palate, American oak provides a tannin structure that accentuates the fruit on the mid palate, while on the nose it will contribute aromas of cedar, sweet spices, mocha, and coconut.

The GenuWine Winery Grape Skins included in our three red wine kits are made through a patented process of gently drying crushed whole grape skins to retain original color and nutritional integrity. The skins are processed to maximize color and flavor extraction so that all their goodness can be extracted in a five or six day fermentation period.

Grape skins will add smooth tannins, robust color and rich aromas to your red wines, making them more complex and fuller-bodied. These bigger, bolder red wines will drink well while still young, but the goodness from the skins will also continue to enhance the flavor of the wine when aged.
