POLISH CUISINE

Traditional Polish cuisine isn’t’ very fit, but it is tasty.

A little bit of Polish history will help you to understand the

phenomenon of Polish food.

In the middle ages, Polish people ate wheat, meat, fruits, herbs,

honey, and spices – everything was local and grew out of Polish

soil . Those times Polish food was quite spicy and calorific. What’s

interesting, Polish people were drinking a lot of local beer then

(not wine as in most European countries). Meat, fish, and

vegetables were preserved with salt or by the sun drying

process. Over the years other countries influenced Polish cuisine.

And so Polish food is the effect of cooking traditions of our

neighboring nations including Czech, German and Austro-

Hungarian.

Traditional Polish dishes are:

★ PICKLED CUCUMBERS (ogórki kiszone)- cucumbers, water,

salt, garlic, di l l and horseradish are combined and left for a

couple of weeks to make dil l pickles

★ POLISH HUNTER’S STEW (bigos) – sauerkraut is the main

ingredient but it is a mix of mushrooms, pork meat,

sausage, dried plums, bay leaf and sometimes red wine

★ POLISH DUMPLINGS (pierogi) – are usually stuffed with

cottage cheese and potatoes or meat or fruit. At

Christmas the stuffing is sauerkraut and mushrooms



★ PORK CHOP (kotlet schabowy) - breaded pork served with a

side of boi led, mashed or fried potatoes and one or more

salads called surówka
