    Pantry Diving/Emergency Thriving

    This is a compilation of ideas from many different sources. There is nothingnew under the sun. You will find all items on our monthly acquisition lists. If

    you keep up with the program, within a year you can be prepared for mostemergencies, short or long term.

    Too often we bask in our comfortable complacency and rationalize that theravages of war, economic disaster, famine, and earthquake cannot happenhere. Those who believe this are either not acquainted with the revelationsof the Lord, or they do not believe them. Those who smugly think thesecalamities will not happen, that they somehow will be set aside because

    of the righteousness of the Saints, are deceived and will rue the day

    they harbored such a delusion. The Lord has warned and forewarned usagainst a day of great tribulation and given us counsel, through His servants,on how we can be prepared for these difficult times. Have we heeded Hiscounsel? Teachings of Ezra Taft Benson, p.706

    In emergency preparedness, a 72-hour kit is widely considered the firststep in becoming prepared. Sitting in a closet by the front door, a smallevacuation trailer on the side of the house, or a shed in the back yard, it canbe grabbed at a moments notice if you must depart with little or no warning.It has happened before; a home catches fire in the middle of the night.

    After getting everyone out, fire fighters do their level best to put the fireout. However, everything inside is totally destroyed by flames, smoke,and/or water. Losing everything, the family now only possesses the pajamason their backs. They didnt have time to grab shoes to protect their feet andwish they had a good 5-day kit. Fortunately, the whole community is pullingtogether for them.

    However, not everyone is this lucky. Sometimes, whole communities areaffected at the same time. It has happened before; a chemical leak forcesthe entire town to evacuate. The family hitches their little emergency

    trailer to their vehicle and leave for an unexpected camping trip. What fun!Everyone believes they live in a place where disasters will never happen. 72-hour kits or better yet, deluxe 5-day kits can be really handy whether youlive in tornado or hurricane alley or peaceful valley.

    A deluxe 5-day kit should contain all the essential things your family mayneed to take you through 5 days of being on your own. Theres a reasonbehind the length of time the kits contents should last. It generally takesthe disaster relief agencies at least 3-4 days to move in and set up before

    offering assistance. Planning for 5 days, you give yourself a little moreinsurance. Generally speaking, youre on your own during this time. Dependingon how bad the situation is, it could even be longer. Its important for yourfamilys welfare to have a 3-5 day emergency evacuation kit. In any type ofdisaster, things wont feel so bad with the necessities to sustain yourfamilys lives and a bit of home comfort. Prepare now for lifes surprises.

    First Aid Kit

    Personal and family scripture reading and prayer are the best first aid;include mini Book of Mormon.Contact Ginger Conrad for instructions on making and using an herbal firstaid kit. When there is no doctor, it is nice to be able to care for familymembers with confidence.Otherwise buy a prepared kit or design your own.

    Light, Heat, Fire Making

    Hold a family home evening to learn to build a Boy Scout style campfire.Include in your kit waterproof matches and fire starters. Lanterns are nicebut not necessary. Small LED flashlights are a good choice. Check batteries

    every six months.

    Navigation

    Maps of local area and compass. Learn the skills in the Boy Scoutorienteering merit badge pamphlet together as a family. Also include a map

    of the state and nearby states. We have one with all 50 states and parts ofCanada and Mexico from Wal-Mart for less than $10.

    Pack

    If storing packs in the garage, shed, or trailer, encase in a lawn and leaf bagto deter pests and dust. Obtain a backpack or suitcase on wheels (or awagon) suitable for each person, which will hold each persons person gear:waterproof matches, mini backpack stove and fuel for boiling water only,clothing, space blanket, sleeping bag and pad, pup tent, hygiene items,stainless steel bowl/pot and spoon, flash light, mini first aid, minimal rations:5-10 granola bars, 5-10 bags dried fruit with nuts, 5-10 Peanut Butterpackets, 5 honey packets, 1 package crackers, 5 boxes raisins, 5-10 instanthot cereal in 5 heavy duty zip lock baggies, and 5 instant soup packets mixedwith 5 portions of dehydrated refried beans and 5 portions instant rice in 5heavy duty zip lock baggies. The baggie becomes the cook pot and bowl. Ifthings are difficult to fit in the pack, put the various category items in

    gallon sized zip lock bags and suck the air out. This also keeps bugs and dustout during storage and water out in other cases.

    Shelter

    Tent of some sort: individual pup tent, 3 man backpacking tent, familycamping tent, or permanent wall tent

    Pantry Box

    The pantry box is made from a 50-gallon rubber maid tote and should bestored out of the elements. The following should feed 4 adults or 2 adultsand 3 or 4 smallish children adequately. If everything else is stored in anoutdoor shed or tiny trailer, the pantry box can be grabbed on the way outof the house. A second tote should be made to contain the butane stove, 3-5canisters of fuel, can opener, dishpan, towel, soap, spices, and extra cannedfruits or vegetables that dont make up the main dish. Also, include a fewtreats; rice crackers, salsa, and bean dip or cookies. A little celebrationalleviates stress. Put small amounts of listed spices in tiny snack bags and fill

    spaces. Use stove only as long as necessary to conserve fuel.

    Recipes

    These recipes are not perfect, although we think they are tasty. Of course

    they would be more nutritious if they had fresh produce and all home cookedingredients. In an emergency situation, some compromise is necessary. Whilethe recipes reflect the tastes of my family, you may wish to test and refinethese recipes to determine your familys preferences. To keep costs down,they dont contain meat but all have sufficient protein and other nutrients.If you like, you can add canned tuna, chicken, bacon, or beef. You can pantry-fy family favorites by substituting canned ingredients for fresh in manyinstances. Constipation is the beginning of most disease and illness. Stresscan cause or exacerbate this condition, making it imperative to include

    plenty of fibrous whole grains, legumes, fruits and vegetables in anemergency. Remember to drink plenty of water from a safe source, as well.

    King's Chowder

    1 t. onion powder1/4 t. dried thyme1 can cubed potatoes1 can white beans2 cubes bullion+4 c. water1 small can mushrooms1 2oz. jar pimentos, drained1 c. dehydrated broccoli/peas/spinach/etc., rehydratedDash CayenneSalt and Pepper to taste

    Mash beans with a fork until as smooth as possible in your soup pot. Stir in

    other ingredients and simmer until heated. Add more water if it is too thick.Season with cayenne, salt, and pepper to taste. If you are like me and alwayshave sprouts growing in your kitchen, you can still eat fresh greens with thismeal. Anyone can grow sprouts in a sprout bag if the weather is belowfreezing. Vegan backpackers do it all the time. Serve this with applesauceand marinated artichokes. Minced marinated artichokes are wonderful with a

    big bowl of sprouts. Brown rice crackers are great beside a bowl of soup.Emergencies are prime time for constipation because of stress and the lackof fiber in the typical bug out kit. Don't go there and add more stress.

    Instant Chili

    2 cans black or pinto beans16 oz. canned salsa1-2 t. chili powder

    Pantry Diving/Emergency Thriving instructions:

    Mix everything together with a bit of water if needed and heat through.

    Serve over polenta with cinnamon peaches on the side

    There are two ways to make polenta in circumstances with no electricity.Molino makes a decent instant polenta, which we have in our emergency kit.However, if 1 part coarsely ground polenta or amaranth is soaked in 2 partswater 8-24 hours with a pinch of pickling lime, it is very quick to cook. Bringit to a boil, put the lid on and let it sit for 15-20 min. Delicious.

    Pad Thai

    8 oz. Tinkyada brown rice fettuccine1/4 t. powdered garlic1/4 t. powdered ginger1 small can mushrooms1/4 t. powdered onion2 cans stir fry veggies: bean sprouts, baby corn, water chestnuts, etc.1/2 c. water with 1/4 t. honey1-2 T. gluten free tamari or soy sauce1/2 t. red pepper flakes (optional-add more or less to taste)

    2 T. natural peanut butter (no added salt, sugar, or fats) This can be foundin little packets.

    Boil water for noodles. Add noodles and put a lid on the Pot. Cover pot with ablanket or something. Let sit for 20 min. Heat other ingredients until hot.Drain noodles and add to veggies. Serve with canned pineapple and mandarinorange salad.

    Fried Rice

    2 cooked brown rice bowls1/4 t. powdered garlic1/4 t. powdered ginger1 small can mushrooms1/4 t. powdered onion2 cans stir fry veggies: bean sprouts, baby corn, water chestnuts, etc.

    1/2 c. water with 1/4 t. honey1-2 T. gluten free soy sauce or tamari1/2 t. red pepper flakes (optional-add more or less to taste)1 t. toasted sesame seeds

    Pantry Diving/Emergency Thriving instructions:

    Heat all ingredients until hot. Serve with canned pineapple and mandarinorange salad.

    Three Sisters

    In Native American heritage, squash, corn, and beans are known as thethree sisters. These crops and other fall-harvested vegetables are whatthe Pilgrims and Natives celebrated at the first Thanksgiving.

    1 lb. winter squash (optional) t. powdered onion t. powdered garlic

    1 2 oz. jar pimento1 pt. tomatoes, with liquid, pureed1 16 oz. pinto beans1 16 oz. can hominy1 bullion cube1 small can chopped green chilies

    Pantry Diving/Emergency Thriving Instructions:

    Cut squash into small cubes. Stir all ingredients together in a soup pot andheat until bubbly. Winter squash is very tasty raw or cooked just untilwarmed.

    Enchilada Pie

    9 shelf stable corn tortillas or 1 recipe polenta1 can pinto beans1 small can chopped green chilies1 t. cumin1 t. oregano1/4 t. smoked paprika t. powdered onion t. powdered garlic1 cooked brown rice bowls1 16 oz. can enchilada sauce

    Pantry Diving/Emergency Thriving Instructions:

    Mix and mash beans with pepper, onion and garlic powder, smoked paprika,cumin, and oregano. Either in a large skillet or a square baking pan, put a bitof sauce on the bottom. Arrange tortillas. Layer beans, rice, sauce, tortillas,sauce, beans, rice. Cover and cook on stove burner for 10 min. Or put in Sun

    Oven until bubbly.

    Hurry Curry

    2 c. water (can use veggie water if water is at a premium)

    Pantry Diving/Emergency Thriving Instructions:

    Put all ingredients into your pan and heat until bubbly. Mash the potatoesand beans a bit to thicken the sauce. Serve over brown rice bowls withcanned pears on the side.

    Falafel

    1 can chick peas/garbanzo beans, drained1 clove garlic, pressed (or 1 t. powdered)1 t. dried mintsalt and pepper to taste cup brown rice floura few drops olive oil

    Pantry Diving/Emergency Thriving instructions:

    Oil and heat pan over medium low heat. Mash ingredients to a paste and cookby 1T. patties until brown on each side. Serve with brown rice, peas, andfruit cocktail.

    Spaghetti Marinara

    1 lb. whole grain or brown rice spaghetti noodles1 large can pack of tomato pureedried mushrooms, peppers, celery, and carrot to tastegarlic, red pepper flakes, onion, Italian herbs, salt and pepper to taste

    Pasta a Cici

    1 t. powdered garlic1 t. powdered onion1 16 oz. can diced tomatoes1/8 t. red pepper flakes1 T. dried parsleysalt and pepper to taste

    Pantry Diving/Emergency Thriving instructions:

    Boil water for noodles. Add noodles and put a lid on the Pot. Cover pot with ablanket or something. Let sit for 20 min. Heat other ingredients until hotand tender, mashing the chicks a bit. Drain noodles and add to sauce. Servewith French cut green beans and spiced peaches.

    Fruited Hot Cereal

    Pantry Diving/Emergency Thriving instructions:

    If you are preparing the emergency packs according to the above

    instructions, each person should have 5-10 instant hot cereal packets intheir backpack. To make this more interesting, we add a variety of driedfruits. Our newest favorite is Plum Amazins. We also like apples, figs, dates,apricots, blue berries, cherries, cranberries, and raisins. Since oatmeal is outaround here, we rely on instant polenta, which we dress with dried fruits,cinnamon, and a tiny bit of real maple syrup or honey. I found the cutest tiny

    in maple leaf syrup bottles to add a little cheer to what could be adiscouraging situation.

    Emergency Green Drink/Smoothie

    The secret to vibrant health is found in greens. A breakfast of hot cereal isalways welcome, but in our home all breakfasts start with a large greensmoothie. How this might be accomplished in our pantry diving/emergencythriving meal box? My solution is dehydrating like Dr. Schultz and his superfood. I don't want to buy a pre-made super food, because many containwheat grass and barley grass, no-nos for me. Also, I don't know if they havebeen dehydrated below 120F, which in effect makes them still raw.

    Our smoothies contain a pound of leafy greens, water, an orange with a bitof the peel, a banana, and 1 c. cherries or blue berries, making 2 quarts.When dehydrated at a low heat and powdered in the blender, it is reducedto about 2 cups. I divide this into 4 portions of c. each plus 1 t. spirelinapowder. 1 t. kelp, and 1 t. chia seeds. We usually use flax seeds, but theygo rancid if ground. Chia seeds don't need pre-grinding to be digested,making the perfect addition to my emergency smoothie recipe. To prepare,reconstitute c. green powder with 8-16 oz. water. In our family, we wouldwant two of these packets per day to maintain optimum health.

    If you have read this far, you are a smoothie nut like me. I admit it doesn'ttaste as good as a real smoothie. However, it will give the nutrition and fibera body desperately needs in a bug out situation. Excellent nutrition helps onecope and thrive in a more serene manner.
