ChevalierIn the 17th century, Frances chevaliers -or knights- wore wide-brimmed hats, a sign of their nobility and elaborate taste. Each hat was adorned with an ostrich feather on the left, while the right side was pinned down to give the knight freedom to move during swordfights. Chevalier cheeses capture a little bit of that French noblesse.
Chevalier Double Cream Brie is a soft cheese that is rich, and features a pronounced cream and hazelnut taste.

Kaserei ChampignonJulius Hirschle, founder, traveled from Germany to France to learn how to make camembert cheese in the early 1900s. He thought that milk from the Bavarian Alps could even improve the taste of the product, so when he came back to Bavaria, he started creating his own. OkaIt was in 1893, in an abbey protected by two mountains, that a small group of monks created OKA, one of Quebecs very first fine cheeses. Its secret? The know-how and patience of the Trappist monks, who baptized each cheese in a special wash that gave OKA its unforgettable taste and unique aroma. Today, this Quebec tradition continues to be crafted in the very same cellars of the Cistercian Abbey.
