 Gazpacho Soup What is Gazpacho Soup? Gazpacho is a cold soup originating from Spain. Traditionally, this is a refreshing summer dish because it requires no cooking. It has many health benefits because it’s packed with vitamins, minerals and phytochemicals. Gazpacho is a solid source of antioxidants. The carotenoids in addition to copper and manganese all have antioxidant functions. This soup is great for making with children because it requires no heat source, it’s packed with fresh and easy to find ingredients, tastes great and is simple to make. Reserve a small amount of finely diced vegetables and put aside to use later as garnish. Depending on size of blender you may have to blend in batches and mix final product together in a large bowl. After that, season with salt and pepper according to your taste and blend again if needed.
