Who knew what we love would be so intimately connected to what we hate. I know we allknow they are connected, but I saw it more clearly when I watched a veterinarian on televisionanswer the question, “what do you love the most about your job?” and she said, “I lovewhen I know for certain what’s going on, for instance, when I see something in a pet’sstomach, take it to surgery and remove the object and the pet is cured! It makes me feelgreat!” It’s a common question for a vet to hear. I’ve answered it quite a few times myself. Nopat answer – always something different, but along the same lines as the TV vet. Below aresome of my loves, which as it follows, are coupled with my hates.
I love to see families get new puppies. I hate when families get more pets when they can’thandle the pets they already have.
I love when I talk someone into running a test for their pet that turns out to provide themissing piece which explains the whole case. I hate when the test is unhelpful and I feellike I’ve wasted your money and eroded your confidence.
I love when I recognize people and remember everything about them. I hate when I seesomeone I really, really know but just can’t think of their name at the moment.
I love when you tell me I’m the best vet you’ve ever met. I hate when you refuse to see myassociates on my day off because you think I’m the best vet.
I love when you bring your child to the visits. I hate when you let your child run our visits.
I love when I understand your pet’s sickness and am able to help. I hate when I just can’tfigure out what’s going on and I am not successful.
I love the winter when your pet’s skin and ears are looking great. I hate the spring/summer/fall when you are frustrated and your pet is suffering and our options are few.

I hate when he doesn’t eat my offeringsand we find out that all your fears were justified.
I love talking to my clients, catching up, shakinghands, and giving hugs.

November finds us getting into the Holiday spirit. Thanksgiving is on the way which reminds us of family, friends, turkey, pumpkin and – leftovers. The following recipes are sure to warm your family, and one even usesThanksgiving leftovers to create a kids’ favorite.
GoTo for eating in…
Pumpkin and Shrimp Bisque
2 tblsp olive oil
1 lb shrimp (peeled, deveined, and roughly chopped, shells reserved)
1/2 cup dry white wine
4 cups shrimp stock (or chicken stock or dashi)
1 pinch saffron
1 onion (coarsely chopped)
1 carrot (coarsely chopped)
2 stalks celery (coarsely chopped)
2 bay leaves
2 sprigs sage
2 cups pumpkin puree
1/2 cup heavy cream
1 pinch cayenne pepper
1 tblsp lemon juice
salt and pepper to taste
1 tblsp olive oil
1 batch sage gremolata (see below)
1. Heat the oil in a pan at medium-high heat.
2. Add the shrimp shells and cook until they turn pink and then just start to turn brown, about 3-4 minutes.
3. Add the white wine and simmer until it has evaporated, about 4-6 minutes.
4. Add the broth, saffron, onion, carrot, celery, bay leaves, and sage, bring to a boil, reduce the heat and simmer,
covered for 30 minutes.
5. Strain the solids from the stock and return the stock to the sauce pan.
6. Mix in pumpkin puree, heavy cream and cayenne. Simmer on low 10 minutes.
7. Add the lemon juice and season with salt and pepper.
8. Heat the oil in a pan.
9. Add the shrimp and saute at medium heat until cooked, about 2-3 minutes.
10. Divide the shrimp between 4 bowls, pour the bisque over them and garnish with the sage gremolata.
Sage Gremolata (makes 1/4 cup)
1/4 cup sage (chopped) 1/2 lemon (zest only)
1 clove garlic (chopped) 1 tablespoon pine nuts (toasted)
Mix all ingredients together and use for garnish.

Thanksgiving Leftover Pizza1 (11-oz.) can refrigerated thin pizza crust doughDesired toppings
Preheat oven to 450°. Unroll dough; pat to an even thickness on a lightly-greasedbaking sheet. Bake 10 to 12 minutes or until lightly browned. Top and bake asdirected in recipes below.
Turkey Club Pizza: Stir together 1/4 cup mayonnaise and 3 Tbsp. refrigerated pesto sauce; spread over crust.Top with 2 cups cubed cooked turkey, 2 thinly-sliced plum tomatoes, and 1/4 cup thinly-sliced red onion. Bake6 to 8 minutes. Sprinkle with 1 1/2 cups (6 oz.) shredded colby Jack cheese and 4 cooked and crumbled baconslices. Bake until cheese melts. Top with chopped fresh avocado.Mexican Pizza: Sauté 1/2 lb. sliced smoked chorizo sausage and 1/2 cup thinly-sliced sweet onion in 2 tsp. hot olive oil until onion is tender; drain. Combine 4 oz. softened cream cheese, 1 cup (4 oz.) shredded Monterey Jack cheese, 1/4 cup chopped fresh cilantro, 1/2 tsp. lime zest, and 1 Tbsp. lime juice;spread over crust. Top with sausage mixture and 1 1/2 cups fresh corn kernels. Bake 8 to 10 minutes. Sprinklewith fresh cilantro leaves.
Shrimp-Pesto Pizza: Spread 3 Tbsp. refrigerated pesto sauce over crust. Top crust with 1/2 lb. peeled andcooked, medium-size shrimp (4 1/50 count) and 1 cup halved grape tomatoes. Bake 8 to 10 minutes. Sprinklewith 1/3 cup freshly-grated parmesan cheese and 1/4 cup chopped fresh basil.
Rocky Road Brownies
• 1 cup less 1 tablespoon all-purpose flour • 1/4 tsp baking powder
• 1/4 tsp salt • 4 1/2 tblsp unsalted butter
• 1/2 cup plus 1 tablespoon unsweetened cocoa powder
• 1 1/4 cups sugar • 1 large egg
• 2 large egg whites • 2 tsp vanilla extract
• 8 regular-size marshmallows
• 2/3 cup coarsely chopped walnuts or pecans • 1/3 cup chopped bittersweet or semisweet chocolate chips
1. Line an 8-inch-square baking pan with parchment or foil coated with cooking spray. (Leave an overhang to lift
the brownies out later with the liner.) Position a rack in center of oven and preheat to 350°F.
2. Thoroughly whisk flour, baking powder and salt in a small bowl.
3. Melt butter in medium saucepan until sizzling. Remove from heat; stir in cocoa, then sugar. Add egg, egg whites
and vanilla. Stir briskly until smooth and glossy. Add flour mixture until just incorporated, then stir briskly for
about 50 strokes. Scrape batter into prepared pan; spread evenly. Batter will be very shallow. If time allows,
cover pan and refrigerate up to 12 hours to hydrates cocoa powder and flour and brings flavors into sharper
focus.) Remove from the refrigerator about 30 minutes before baking; in preheated 350°F oven.
4. Quarter marshmallows with oiled knife. Distribute pieces over batter, pressing them in. Distribute nuts and
chocolate chips around marshmallows.
5. Bake until marshmallows are golden brown, 25 to 35 minutes. Let cool completely in the pan on a wire rack for
about 2 hours. Lift the ends of the pan liner and transfer to a cutting board. Cut into 16 brownies.
