To know how to make sticky rice tapai

Materials White Sticky rice

Yeast of tapai
Procedure First, wash the sticky rice, then soak it in the water about 2 hours. While
waiting, clean the banana leaves.
Second, cook the sticky rice until-well done.
Next, cool and lay the cooked sticky rice on the tray.
Then pour the yeast of tapai, stir it.
Pack it with banana leaves, store it in the cardboard
and let stand for 2 days.

Sticky rice start to react with the yeast that we add, too many yeast can make sticky rice becomes too soft and uncomfortable, while the lack of yeast causes become stiff and not sticky sweet.

Sticky rice was reacted with yeast and convert starch into alcohol and glucose, but the work of this yeast is not maximized, a sense of tapai not maximized, we have to wait onemore day

Actually, this fermentation process depends on individual taste, but in our opinion, the three-day fermentation was making sticky rice into tapai a delicious, sweet and alcoholic that fit. if the fermentation process is too long, then the alcohol content and glucose resulted in excessive tapai tape into bad taste, it might not work
ConclusionSticky rice tapai is fermentation product with the help of tapai yeast that
produces enzymes that can change flour to sugar and alcohol. Without tapai yeast we can’t make tapai. We also must make tapai with true steps for a good result. Too many yeast can make sticky rice becomes too soft and uncomfortable, while the lack of yeast causes become stiff and not sticky sweet
