All of them are salad, so it will be very nutritious dish for you. So here is the quinoa salad recipe. Quinoa Salad with Shaved Vegetables Ingredients:

Radishes. You can choose 1 large watermelon radish or 8 large red radishes 2 ½ cups water 1 peeled medium size carrot 1 small black radish 1 medium fennel bulb 1 lemon, juiced 1 cup of rinsed, red quinoa 2 tablespoons vegetable oil Finely grated zest of 2 lemons Pepper and salt

Steps:

1. First, cut the fennel bulb, radishes and carrot into thin pieces. Next, put all of it into a bowl of ice water. Refrigerate it for 1 hour. Wait until crisp.

2. While waiting the vegetables to crisp, cook the quinoa. Boil it with water, with low heat. Wait for 20 minutes. Then let it cool.

3. Dry the vegetables. 4. Combine the lemon juice, zest and vegetable oil in a bowl. Add the quinoa and toss.

Season it with pepper and salt. 5. Serve the quinoa in bowls; put the vegetables on top of it.

Tomato Mint Quinoa Salad Ingredients: • Salt • 1/3 cup raisins • 1/2 cucumber, diced • 1/4 cup lime juice • 1/4 cup chopped fresh mint • 1 1/4 cups quinoa • 1 medium onion, minced • 1 teaspoon ground cumin • 2 medium tomatoes, diced • 2 tablespoons sliced almonds, toasted • 2 tablespoons chopped fresh parsley • 2 tablespoons sesame oil • 2 1/2 cups water • 10 radishes, quartered

Steps: 1. Boil water in a small saucepan 2. Pour in raisins and quinoa. Add salt 3. Cover and let simmer for 12 to 15 minutes. Remove from heat after that. Allow it to

cool 4. Put together the almonds, radish, cucumber and onion in a bowl 5. Stir in the quinoa. Season it with salt, sesame oil, parsley, cumin and lime juice 6. Chill it 1 to 2 hours before serving

Quinoa Salad with Dried Fruits and Nuts Ingredients: • 1/4 teaspoon salt • 1/3 cup chopped fresh cilantro • 1/2 cup raisins • 3/4 cup chopped celery • 1 chopped bunch green onions • 1 tablespoon vegetable oil • 1 pinch cayenne pepper • 1 tablespoon distilled white vinegar • ½ cups quinoa • 2 tablespoons sesame oil

• 2 tablespoons lemon juice • 3 1/2 cups water

Steps: 1. Put the water, salt and quinoa in a saucepan, bring to boil 2. Then reduce the heat to medium-low. Cover and simmer for 20-15 minutes 3. Put it into a bowl, leave it and allow it to cool, about 20 minutes. 4. Stir in the sesame oil, green onions, lemon juice, vinegar, celery, raisins, cayenne

Stir in cilantro, season with black pepper and salt
