for Sonoma Cabernet

California is where the New World’s most important expressions of Cabernet Sauvignon are crafted, and Napa Valley is the unquestioned jewel in the crown – but it’s not the only gem. Sonoma County is home to more soil types than all of France, as well as a staggering diversity of mesoclimates and topography that allows for a broad viticultural palette. Depending on where it’s sourced, Sonoma Cabernet Sauvignon can be elegant and approachable or structured and taut. No matter the style, they are always wines that deliver intensity and concentration and that can offer impressive ageability. The St. Francis Cabernet is crafted in a notably bold and fruit- forward style, with richly articulated dark and smoky fruit, spice and the characteristic pure cassis that is a signature of California Cabernet.

VINTAGES 3

All wine countries and regions have their “thing”: a style or grape with which they’re most associated and through which they express their terroir in unmistakeable fashion. These fundamental characteristics provide the standard that allows us to compare individual wines to their peers, both within their own region and globally. Like the distinctive traits of your favourite style of music, or the techniques that define literary or artistic periods, bench-marks in wine are immediate signifiers of provenance. This collection of 11 wines focuses on key New World regions – benchmark styles to help you chart a course through the world of fine wine.

Ontario CHARDONNAY

The unifying trait for Ontario Chardonnay is the clarity of the mineral tones that it exhibits. Unoaked examples can reflect a wide range of flavours such as apple, pear, peach and tropical fruit, while oaked versions will include rich buttery tones, but they will all possess that telltale minerality. The Niagara Peninsula is subject to beneficial lake effects, with cooling breezes in the summer and warming influences in the winter. Elevation, topography, soil type and distance from Lake Ontario create exciting variations in texture and style in the final wines. Sub- regions such as Twenty Mile Bench – with its primarily limestone and shale soils and high elevation – have been established where these variations in conditions produce markedly different wines.

California CABERNET SAUVIGNON

California’s most widely planted red grape, Cabernet Sauvignon relishes the abundant sun, low rain and long, consistent growing conditions that allow for the development of rich and complex flavours. The suitability of California’s climate makes ripening grapes a near certainty, so many winemakers produce 100% Cabernet wines. In California, blending is a winemaker’s choice rather than a vintage-driven necessity. California’s massive size and incredible diversity of growing conditions promote a wide range of styles and make generalizations impossible, but there are common factors, principally the purity of the cassis flavours found in Californian Cabernet. The most famous Cabs come from the Napa Valley, where sun-kissed, fog-cooled vines produce wines of profoundly ripe dark fruit with impressive structure and ageability. Cabernets from Sonoma (a region with more soil types than all of France) are typically softer and more approachable than those from Napa and can offer amazing value.

A Willamette Valley Pinot Noir vineyard in autumn.

Oregon PINOT NOIR

Oregon became top-of-mind as a fine-wine region through the notable depth and complexity of the fruit, spice, earth and refined elegance of the Pinot Noir grown here. As any fan of Burgundy can attest, Pinot Noir has an almost magical ability to express where it’s grown. In the Willamette Valley, Oregon’s most prominent region, the three principal soil types – volcanic, sedimentary and wind-blown loess – have a major impact on the wines. Those grown in volcanic soils have a definable mineral component, while sedimentary soils produce more structured wines, and loess imparts a brighter red fruit character, earthy tones and some peppery spice.

A Mendoza winemaker inspects his Malbec grapes.

Argentine MALBEC

Though it is Argentina’s signature red, Malbec’s ancestral home is actually in France (true of all the grapes in this feature), specifically the southwest, where it’s known as Cot. One key to Mendoza’s success with Malbec is the length of the growing season, which encourages ripeness and balance in the wines. Plantings in the foothills of the Andes allow for tremendous stylistic variation depending on the elevation at which the grapes are grown – higher means cooler conditions and more intense sunlight, allowing grapes to ripen fully while maintaining freshness and vibrancy. Malbec produced at relatively low altitudes in Mendoza will be deeply coloured, with concentrated ripe black fruit and spice, while examples grown at higher elevations are more floral, soft and elegant.

Grilled veal chops are a fine pairing with Aussie Shiraz.

Australian SHIRAZ

Shiraz is the classic Australian red, and the classic expressions of this style come from the Barossa. This region is home to the largest concentration of old-vine Shiraz in the world – with some plantings dating back to the mid-1800s. Shiraz loves the hot and dry conditions here, and the ironstone- and limestone-based soils encourage the development of full-bodied, intense, powerful and ripe wines with underlying spice plus a distinct roasted dark fruit character. Made in a number of styles across Australia, Shiraz produced in the cooler Clare Valley exhibits the classic fine structure and dark fruit, but also a lifted aromatic quality.

Chilean CARMENÈRE

Brought to Chile from France in the 19th century, Carmenère was initially confused with the similar-looking Merlot, and Chile’s signature red grape wasn’t properly identified until 1994. In fact, it was believed to be virtually extinct. Carmenère is a late-ripening variety that benefits from warm growing conditions and plenty of sunshine, which Chile provides in abundance. Chilean Carmenère typically offers rich red and black fruit with herbs and red pepper tones plus smooth round tannins. The Cachapoal Valley sub-region Peumo, with its rich alluvial clay soils and ocean and river influences, is making a claim on producing Chile’s finest, most structured and elegant single- varietal Carmenère.

New Zealand SAUVIGNON BLANC

When it was first planted in New Zealand in the early 1970s, Sauvignon Blanc revealed the intense gooseberry, tropical fruit, passion fruit and grass aromas and flavours that catapulted the style to the very fore of expressions for this variety. The most famous versions come from Marlborough, where ancient, glacial and stony soils encourage notably razor-sharp and zesty wines. Though Marlborough is home to arguably the global benchmark for Sauvignon Blanc, fine and distinct examples are produced throughout the country. Bordered on three sides by mountains, Nelson, for example, is a boutique wine region northwest of Marlborough. It has alluvial and silty soils and is cooler with more rainfall than Marlborough. Nelson produces a more restrained and elegant take on Sauvignon Blanc than the pungent style of its more famous neighbour.

Que Syrah, Shiraz

It’s one powerful grape with two names and multiple personalities depending on where it’s grown and how it’s treated. Hard to pin down? Maybe, but that’s just the way it is.What’s in a name? The romance Romeo and Juliet asserted that a rose by any other name would smell as sweet; more recently, the bromance Batman v Superman asserted that when two men’s mothers have the same name, conflict disappears. It would seem the question of names is a tricky one. In the wine world, the fact is that Syrah and Shiraz are one and the same grape variety. Here, we explore this single grape with dual identities.

Halfway between Burgundy and the Mediterranean, the Northern Rhône has a temperate continental climate in which Syrah grows on steep, terraced hillsides. This is the ancestral home of Syrah and, to this day, no other red wine grape is allowed here. Syrah grown here is elegant and remarkably peppery, with distinctive bacon-fat notes that intensify as the wine matures.

California is generally warm climate, but contains pockets of cooler-climate vineyards due to ocean influence and mountains. Evidence points to France’s Northern Rhône as the birthplace of Syrah – and that’s certainly where it first rose to prominence. Its classic style in the Northern Rhône is one of structured elegance, fresh berry fruit and peppery spice. Halfway around the world in Australia’s Barossa Valley is where the grape’s alter ego, Shiraz, became famous. The classic Barossa Valley style is big, bold and burly, with

super-ripe fruit, grilled meat, chocolate and spice flavours. Meanwhile, cooler-climate Australian regions – and wine regions around the globe – make styles that exist some-where between the Northern Rhône and Barossa Valley versions. The decision to name a wine “Syrah” or “Shiraz” is sometimes, but not always, a clue about its style, so it pays to consider where the wine was grown.

VINELAND ESTATES SPARKLING PINOT MEUNIER RESERVE 2015 6Charmat method, VQA Ontario

TASTING NOTE: The range and depth of sparkling wine in Niagara, Ontario and Canada is staggering as more and more wineries join the bubbly revolution. It’s a category that plays to the strength of varietals that do so well in the cool-climate wine regions we have in Canada. This charmat method Pinot Meunier from winemaker Brian Schmidt is as delicious as it looks, with a lovely subtle pale salmon colour, vigorous mousse and nose of toast, red berries, apple and a squirt of citrus. There’s a pleasing sweet note on the palate that works well with ripe cherry and raspberry fruit through a clean and fresh finish. Vineland suggests trying with a steak Florentine, “if you’re courageous enough.” Score: 91 (Rick VanSickle, winesin niagara.com, April 9, 2017)

2027 WISMER VINEYARD FOX CROFT BLOCK CHARDONNAY 2014 6VQA Twenty Mile Bench, Niagara Escarpment

TASTING NOTE: Here’s a terrific value char- donnay from the premium Twenty Mile Bench sub-region of the Escarpment, quickly becoming one of the hotspots for the variety in Ontario. I love the restraint and elegance of this wine, with just a gentle touch of old wood spice, but mostly appealing, steely-stony character, citrus and green apple/pear, sharp acids and great length. The cool climate finesse and deft, minimalist winemaking touch go a long way here, and for $23, you’d be hard pressed to find similar poise in most other places on planet earth. The semillon comes from the Fruit Haven Farms vineyard. It works very nicely indeed. The nose is calm, complex and intriguing with subtle oak spice, guava, herbs and lime. It’s mid-weight, quite elegant, rich yet lively. Nice sense of composure and balance here. Very good to excellent length. Nicely done and good value. FLAT ROCK RIESLING 2015 6VQA Twenty Mile Bench, Niagara Escarpment

TASTING NOTE: The alcohol on this wine comes in at 9.5% and as we get into the warmer weather this is a beautiful bottle to include on the patio. There is some sweetness in this wine but it’s perfectly balanced with acidity. This wine is the complete package when it comes to everything that’s right in Ontario today. This is so well priced that you can enjoy this frequently with your summer barbeque or picnics. The sweetness to this wine really helps orchard fruit soar over citrus notes and a nice mineral note that pokes through on the finish. This is a great bottle to add to cellar as this should evolve nicely over a decade (or more). Score: HHHHJ (André Proulx, andrewinereview.ca, May 25, 2017)

THE FOREIGN AFFAIR UNOAKED CHARDONNAY 2016 6VQA Niagara Peninsula

TASTING NOTE: A North American first, this innovative unoaked Chardonnay was produced using partial appassimento – a process that sees the grapes dried before fermentation begins, which concentrates the flavours and body. This is pretty and floral with a slightly sweet tang to the tropical, melon, peach and apple tones. Round and fresh with superb vibrancy, this is a generously and gorgeously textured wine. Long with a lemon custard finish. (Vintages panel, March 2017)

TASTING NOTE: Here’s a bright, firm, polished chardonnay from the Tawse/Redstone wine- making time, with classic, fairly lifted aromas of apple, grapefruit, light barrel smoke and toast. Also some nutty complexity. It’s light to medium bodied, crisp, and refreshingly tart-edged without being austere. This is a very pretty, tender but not soft chardonnay. Very well made. Made using declassified “Broken Press” fruit it delivers hints of smokiness along with raspberry, black cherry and floral – and it all results in a pretty concentrated wine once it hits the mid-palate and settles in on the finish. HENRY OF PELHAM FAMILY TREE RED 2014 6VQA Niagara Peninsula

TASTING NOTE: This red blend – 33% Syrah/ 29% Merlot/19% Cabernet Franc/14% Cabernet Sauvignon/5% Baco Noir – dishes up a mouthful of red berry fruit and black currant mingling with piquant spice that’s robed with excellent acidity and tang from cork pop to last drop. It’s mid weight with good mouthfeel and a lingering finish that’s balanced and lip- smacking good. It was barrel aged with 65% French/35% American oak for 17 months. SPIRITS

INTERNATIONAL WHISKY

IWAI TRADITION WHISKYJapan(Mars) TASTING NOTE: Mars had more than a century of distilling behind it before it began to produce whisky in 1949. The distillery was initially in Kagoshima Prefecture on the southern-most island of Kyushu, but was relocated in 1984 to Miyada, a village 798 m above sea level. The new location’s cooler temperatures slow maturation and permit the development of more complex, elegant expressions. The Tradition is a blend of whisky aged in sherry, Bourbon and wine casks. Floral, with sweet spice, toast, caramel and malt aromas, it is subtle and balanced in the mouth, with suggestions of bananas, dried fruit and a malty sweetness. (Vintages panel, Aug. 2016)

WATCHDOG ROCK CABERNET SAUVIGNON 2013Columbia ValleyTASTING NOTE: This is a nicely slender, balanced, quite typically built Washington cabernet that combines currant/cherry fruit, herbs, cedary oak and a touch of pencil lead. DUCA CATEMARIO COLLEZIONE PRIVATA PINOT GRIGIO 2016DOCTASTING NOTE: If you think all Pinot Grigios are on the subtle side, think again – or better yet, grab a glass of this wine. It opens with pronounced, pretty aromas of honeysuckle, nectarine, apple and cashew butter and the palate is bright, lively and nutty with a crisp finish. Pair with grilled seafood or chicken. PODERE LA BERTA SOLANO SANGIOVESE SUPERIORE 2013DOC Romagna TASTING NOTE: Podere La Berta counts 22 hectares of property of which 14 are planted to vines. The 2013 Romagna Sangiovese Superiore Solano reveals great intensity and balance with a more evident signature of toasted oak that gives the wine structure and sophistication. Sangiovese in Romagna is harvested ten days earlier on average compared to Sangiovese in Tuscany. Solano delivers sweet fruit flavors and soft tannins but you can really taste the quality of both in this balanced vintage. Drink Date: 2015-2020. BRANCAIA CHIANTI CLASSICO 2015DOCG Swiss couple Brigitte and Bruno Widmer fell in love with the abandoned Brancaia estate and, in 1981, purchased it. Since 1998, Barbara Widmer, oenologist and daughter of the founders, has been responsible for the winemaking. This wine is aged 12 months in stainless steel.

TASTING NOTE: 100% Sangiovese. Just mid crimson. Fine spice and sweet red fruit on the nose. Surprisingly light on the palate, yet elegant and long. Distinguished. Drink 2017-2022. Score: 16.5 out of 20 (Walter Speller, jancisrobinson.com, March 28, 2017)

ORNELLAIA 2013DOC Bolgheri SuperioreTASTING NOTE: Amazing graphite and violet aromas with dark fruits. Medium to full body, ultra-velvety tannins and a long and beautiful finish. Formed and tight. MORGADIO DA TORRE ALVARINHO 2015DOC Vinho Verde(Sogrape)TASTING NOTE: The 2015 Alvarinho “Morgadio da Torre” is dry and unoaked. It is also beautifully made and constructed. Tightly wound in its youth, this focused and rather precise Alvarinho has a touch of green followed by hits of acidity. It is glorious in its youth. This is the opposite of lush. The acidity is notable and the wine has all that zing and zest. The sunny finish is invigorating and the wine is refreshing. That’s what a lot of folks will want from Vinho Verde, right? The mid-palate solidity makes it a cut above, though, granting that it won’t ever be the richest Alvarinho. I seem to be saying this a lot in this vintage, but this is a steal at the price. Even if it fades a bit faster than I suspect, it is awfully fine now. Drink Date: 2016-2020. Score: 90 (Mark Squires, robertparker.com, June 29, 2016 )

Fresh, crisp, lively and perfect for summer. Pair with seafood. (Vintages panel, Oct. 2016)

VALPANTENA RIPASSO VALPOLICELLA 2014DOCTASTING NOTE: According to the winery, “Valpantena” means “Valley of the gods” in Greek, but in Verona’s traditions, it has taken on the meaning of “Valley of all wines.” This Ripasso offers heavenly aromas of plum, raisin, dried orange peel, baking spices and a touch of coffee. It’s got a nice savoury-spicy-smoky interplay on the palate. Pair with grilled burgers or mushroom risotto. (Vintages panel, Oct. 2016)

SEÑORÍO DE P. PECIÑA CRIANZA 2012DOCa RiojaTASTING NOTE: I loved the textbook 2012 Señorío de P. Peciña Crianza, which has the usual house blend of Tempranillo with 3% Garnacha and 2% Graciano; it was fermented in stainless steel with indigenous yeasts and matured in used American oak barrels for some 24 months with hand racking every six months. with Robert Parker Jr.’s fave Esteemed wine critic Robert Parker Jr. called Bodegas Borsao his “… favorite value winery not only in Spain, but in the world …” (robertparker.com, August 30, 2016). In the realm of high praise, that’s pretty much as praisey as it gets. Richly textured with expressive black fruit and spice, the outstanding 2013 Berola is poised to become your valued wine of choice.
