HOW TO PRESERVE A SAND DOLLARIt’s always special to find a Sand Dollar at low tide. The Native Americans who first settled the area used Sand Dollars for decorative wear. Here’s a tip from our Naturalist on preserving a Sand Dollar. Soak the shells overnight in a solution of one part bleach and three parts water. Carefully, rinse off the shell and place on a paper towel to dry. Protect the shell from moisture with three to four coats of spray varnish. A safe recipe for kids is to use a mixture of white liquid school glue, water and brush on. Kids ask your parents to help.

SKINCARE TIPS FROM THE SPA1. Spring clean your skin care shelf – When

in doubt, toss it out. Go through your cosmetics, products, and sunscreens, and toss the things that have been around a little too long. Remember this rule of thumb: Anything you apply near the lips or eyes should be tossed after a year. Also, throw your dingy makeup bag in the washer. If it can’t be laundered, clean with an antibacterial cleanser.

2. Lighten Up-Springtime generally means lighter make-up. Switching to lighter cleansers will lightly grab away make-up and hydrate spring skin, without clogging pores or leaving a sticky residue, which can lead to unwanted breakouts.

3. Buff away winter skin – Bring out its brightness by exfoliating a little more in the spring. In the winter, when your skin is drier and more sensitive, it’s best to exfoliate just once a week. But in the spring, exfoliation removes old layers of skin and helps topical treatments absorb into the skin better.

4. Trade in the cream for a lotion – Moisturizer is crucial to any skincare routine, but using heavy creams in the spring can actually cause annoying breakouts. In the spring, switch from very heavy, hydrating moisturizer and oil-based products to lighter formulations, like a hydrating serum.

5. Time to up your SPF – Apply every morning, and reapply every two hours. If you get wet, apply every hour. The season’s only just beginning, but UVA and UVB filters can affect your skin through glass and clouds too.

FULL MOON MEDITATION**Experience meditation like never before under the gentle glow of a full moon with the sounds of the Atlantic Ocean as backdrop. The intense spiritual energy of the moon combined with fresh coastal breeze will fill you with peace and cleanse the mind, releasing negativity to create space for new intentions. Guided classes occur at the peak of the full moon’s brightness and combine meditative contemplation and Yoga Nidra suitable for all levels. Weather permitting, indoors if inclement. Tuesday, April 7 at 8:30 p.m. $45 per guest

SALT AWARDS AND HONORS AAA Five Diamond Award Florida Trend’s Golden Spoon Hall of Fame Host, James Beard House Dinner Forbes Travel Guide Top Ten Kitchen Tables in the United States

FINE DINING ON THE OCEAN’S EDGEFamiliar ingredients are elevated to new heights as Chef Rick’s goal is for guests to involve all the senses, be it the perfect wine pairing, an artful plating or the gentle wisp of hardwood smoke from a plate of shrimp and grits. A name inspired by its remarkable natural setting and as tribute to cooking’s most valuable seasoning, Salt delivers a feast for the senses. Steak and Eggs is a signature dish, served sizzling on a 250-million year old Himalayan salt block that has been hand-cut by Chef Rick. Humble yet elemental, the dish started a trend that has been imitated but never duplicated, owing to Salt’s unique sense of place. Overseeing every detail is Chef de Cuisine Rick Laughlin. His philosophy of “keeping flavors familiar, and most importantly, keeping the integrity of the ingredients” shines through in his approach to Contemporary American Cuisine.Among 31,000 restaurants vying for AAA’s highest award, Salt has earned best-of-the-best Five Diamond status for the last nine years in a row. Salt is one of only three such honored restaurants in the state of Florida. Chef Rick has also earned the praise of his peers, having been selected to cook at the celebrated James Beard House. In addition, Salt also holds the esteemed Golden Spoon award from Florida Trend, the most sought-after award for Florida restaurants.

SEASONAL FLAVORS OF COASTCoast menus reflect a deep partnership with local farmers and fishermen and spring is the season that reflects that connection. Under the leadership of Chef Andrew Brooks, who combines his extensive knowledge of seafood and love of Southern comfort food into something remarkable for his guests.

The lunch and dinner menu reflect Coast’s passion for fresh local seafood. Favorites include Shrimp & Grits, local Mayport shrimp, crab cakes and the Catch of the Day, which is celebrated as an opportunity for improvisation and culinary inspiration.

There are also Southern favorites like soul-warming Chicken and Waffles is served with house-made green tomato jam, local farm Sweet Grass Dairy’s famous Heat cheese touched with a bourbon-maple spicy butter. For Breakfast indulge in Amelia’s Buffet with fresh fruits, house-made granola, strata, breakfast meats, lox and bagels and a cooked to order egg station. Save room for the Pastry Department’s famous Sticky Buns.

The coastal décor of Coast is seasoned with handmade elements from local artists Fernandina Clay, including many of the ramekins and serving pieces. A limited supply is always available and completes the perfect memory of a great meal. To purchase, ask your server for more information.

THE PUBFans of sports and fresh, chef-made comfort food have found their perfect home at The Pub. Whether it’s March Madness, NASCAR, PGA or MLB, you’ll find a welcoming and comfortable space where you can collectively experience the triumphs and surprises of every game while enjoying a menu as exciting as the sporting events themselves.

The food is made from scratch and local, like crispy fish and chips made with grouper, a savory shrimp gratin or a warming shepherd’s pie made from ground Angus beef, vegetables and topped with artisanal cheddar cheese. Juicy Angus burgers can be topped with your choice of pork belly, bacon jam and crispy onions. Everyone loves the savory house-made Bavarian pretzel that can feed an entire table and is served with a house-made Duke’s Brown Ale cheese.

The most unique part of The Pub isn’t even the pool table, the island’s best selection of wines and beers or its amazing chef-made dishes. It’s the guests.

AMELIA ISLAND FLORIDA

THE HISTORY OF COQUINACoquina is the Spanish word for the rock formed by combining salt water, sea shells, and dune sand. During Amelia Island’s Spanish Colonial period, settlers used coquina to form walls and roads in settlements along Florida's Atlantic Coast. Even today, coquina-walled homes host neighbors and friends for festive nights spent under the stars. Coquina blends the classic elements of Amelia Island: the sand, the sea, and our unique heritage.
