school time callingWhile some might find back-to-school time a bit tedious, for us we have taken the opportunity to touch up on three important kitchen-time moments. Start the Day with Breakfast

red leicester, tomato and bacon muffinsIngredients Yield: Serves 12300g Self-Raising Flour100g Melted Butter2 Eggs180ml Milk1 Tsp of Dried RosemarySprinkle of Salt & Pepper3 Slices Lean Back Bacon – chopped1 Tomato – deseeded & chopped12 Chunks of Red Leicester

MethodSieve the flour into a large bowl. Add the herbs and season. In another bowl, mix the eggs, milk and

melted butter then pour into the flour bowl and fold in together until even. Add the bacon and tomatoes.

Line a muffin tray with paper cases and pour the mix into the cups. Place a chunk of cheese into each cup. Then bake in a hot oven set on medium (180° Celsius) for about 40 minutes.

Serve warm for breakfast.

You’ve probably heard it all before. But breakfast is indeed the most important meal of the day.

In the morning, after a long night without food, it is essential to refuel in order to provide the body and mind with the necessary nutrients and energy to get through the first part of the day. Our brain requires glucose or blood sugar to provide it with energy to function, whilst the muscles of our body need glucose to get the body working physically. After long periods without food, our blood sugar levels fall, causing tiredness and irritability amongst other symptoms that occur when you need to replenish your appetite.

Also those weight watchers who think skipping breakfast is a good idea should think twice! According to research, skipping meals, especially breakfast, can actually make weight control more difficult. Breakfast skippers tend to eat more food than usual at the next meal or nibble on high-calorie snacks to stave off hunger. Bravo!

MethodSieve the flour into a large bowl, add the yeast, mix then add the butter and rub in. Add the spices, salt and sugar, then the warm milk. Bring the dough together, turn onto a clean surface and knead for 10 minutes until smooth and silky. Incorporate the seeds and fruits into the dough. Place the dough in a clean bowl and cover with a tea towel and leave to rest until it doubles in size. Knock down, and then shape into desired shape. Place on a floured baking tray and cover once again. Leave to rise until double in size and then bake in a hot oven set on 200 degrees for about 40 min. Tap the base of the bread and if it sounds hollow, that is a sure sign it is ready. Remove from oven, lightly brush with milk and sprinkle with sugar and bake for another 3 minutes. Remove from oven, cool and serve fresh or toasted, with good butter.

MethodWarm waffles under a grill and place on a plate. Scoop prune yoghurt over them, then add the chopped fruit. Serve immediately.

MethodBeat the eggs and milk, season. Melt the butter in a pan, and cook the eggs. Cut open the buns and fill with scrambled eggs and smoked salmon. Serve warm.

home made curry mayoIngredients 3 Large Egg Yolks2 Tbsp White Wine Vinegar¼ Tsp Salt1 Cup Vegetable Oil1½ Tsp Dijon Mustard 1 Tsp Curry Powder

MethodWhisk together the very fresh egg yolks, salt and vinegar. Whilst still whisking, drizzle in the oil (very slowly) until it is all incorporated. Add the mustard and season with some white pepper if desired.Add the curry powder to flavour.

vanilla cupcakesIngredients Yield: Makes 12300g Self Raising Flour200g Sugar2 EggsFew Drops Vanilla180ml Milk100g Melted Butter

MethodSift the flour into a large bowl. Mix the vanilla, eggs, butter and milk in another bowl and pour into the flour. Fold in until evenly combined.Line a cupcake tray and pour the mix into the cases. Bake in a hot oven set on 180 degrees Celsius for about 40 minutes.

Leave to cool. Then decorate with whipped cream and fairy sprinkles.

carrot, lemon and orange cupcakesIngredients Follow the same recipe as the vanilla cupcakes. At the end, incorporate a grated carrot and a teaspoon each of grated lemon zest and orange zest.

Decorate with icing sugar.

apple pie cupcakesIngredients Follow the same recipe as the vanilla cupcakes. With the flour, add 1 tsp of cinnamon. At the end, incorporate a diced, peeled apple, a tsp of lemon zest and a handful of raisins.

Decorate with whipped cream a slice of apple.

Be it for breakfast, lunch, or a late afternoon snack, who wouldn’t love a cupcake? Here we suggest a base batter which you can then modify to make different cupcake variations. Feel free to make your own signature cupcake. The most important thing is that you make them with love and care.

Fall, a time when the leaves turn colour, the weather begins to cool, children head back to school and universities are brought back to life. It can also be a time for packing on the pounds!

Many people find that as the days grow shorter they start reaching for comfort food and end up with an extended waistline leading to crazy New Year’s resolutions by the end of the year. You might be relieved to learn that the urge to eat more as the days grow shorter is not anyone’s fault - it’s actually a scientifically recognised condition! Shorter days and lack of sunshine reduce our body’s production of serotonin, a

hormone-like substance that promotes feelings of relaxation and happiness. Comfort food like pasta, rice and potatoes helps replace this substance.

But having said that, although it’s a completely natural occurrence to gain some weight during the colder

months, the inevitable lifestyle we lead nowadays (cars, central heating, plentiful food, etc.) does not help. Having spent most of our summer outdoors enjoying the lovely weather, we are suddenly faced with gloomy rainy days which force us indoors where we usually end up inactive while devouring rich meals and calorific hot drinks.

From a diet rich in summer seasonal fruits and vegetables, we end up indulging in stews and casseroles full of creams and cheeses which spike up fats in our

diets. From ice cold water and fruit drinks, we turn to hot toddies and hot chocolates (whipped

cream and marshmallows, please!), all of which increase our calorie

intake.

Being back to university for most students also

means having to face two stressful

semesters. Such stress together with

other responsibilities may also be a factor

associated with weight gain. During periods of

stress, our body goes into survival mode, storing all food intake

and slowing the metabolism. For some people, foods high in carbohydrates are the natural fix

due to their temporary calming effect property.

To help fight against these natural weight gain situations opt for the tips below:

Being aware of these dietary minefields can make it easier. Stay ahead of the game and spend a few hours stocking up your kitchen with healthy foods and planning fun activities to stay active.

Being aware and in control

Here comes the boys’ scout motto, true in any situation. Of course there will be instances when we just want to indulge in something. Giving in to such sudden cravings will usually result in opting for an unhealthy snack. Thus it’s a good idea to carry with you a healthy alternative such as a cereal bar or a fruit.

Beingprepared

The problem with canteen food is that you have no idea how it’s been cooked, not to mention that you will be tempted to opt for the unhealthy options available on display. To avoid unnecessary calories, prepare and pack your own lunch from home.

Avoidingcanteen food

Instead of opting to lose weight for Christmas or for summer, give the more long lasting option a go by carrying out small changes over a longer period of time, making it part of your lifestyle. This will help you keep the weight off instead of gaining it right back again.
