Dear Readers

Frankly it’s a relief to get to February and March and put January behind us - suddenly there’s so much more to look forward to and the worst of the winter and various flu bugs are over.

What are those new things to look forward to? Let’s start with how we can all save £50 a month throughout 2011, according to Surrey Waste! Apparently we can “get healthier, shop smart and cook less” - a pretty good deal in anyone’s view!

As if that’s not enough, we learn that good storage is truly life-enhancing according to Katherine Sorrell on Page 26. I only wish I had more of it at home myself!

Then there’s Smith Pearman advising us on how to beat the Congestion Charge and the Taxman - no mean feat! And we have yet more advice on “working from home”, which so many of us do now.

This year we are proud to have chosen the Surrey Air Ambulance as our Charity of the Year for 2011. Please aid us to help them raise some funds towards their upkeep, as they receive no Lottery Funding and rely entirely on the generosity of the community. Some of you might know that they were not so long ago at the Grace & Flavour garden in West Horsley. Their services are second to none and I do hope you will join us in helping to raise awareness and funding for them throughout 2011.

The Surrey Waste Partnership has been running Surrey’s own Love Food Hate Waste campaign since May 2010, aiming to raise awareness of the need to reduce food waste in the county.

£12 billion worth of food and drink goes to waste in the UK every year, so the Love Food Surrey campaign aims to show families how they could save up to £50 a month on their food shopping bill, simply by cutting down on throwing away food.

We could all enjoy an extra bit of cash after the mad spending at Christmas and reduce the amount of good food being thrown away. This doesn’t mean cutting down on indulgence and fun. If anything, having a well-planned year will leave us with more money in our purses and more time to enjoy ourselves. Why not pledge to waste less food and save more money? For inspiration, check out Love Food Surrey’s new celebrity leftover cookbook. Surrey’s famous faces are supporting Surrey Waste Partnership’s waste campaign by sharing their leftovers recipes in a new cookbook. Stars including Strictly Come Dancing’s Flavia Cacace and BBC sports presenter Gary Lineker, have contributed recipes.

Check out our top tips for a greener 2011:

Get healthier• Increase your vegetables in your meal

planning e.g. by adding some peas into your pasta sauce it will be healthier and more fulfilling.

• Cut down on saturated fat like butter, lard or margarine and use alternatives like olive oil.

• Buy less biscuits and cakes and make your own - this way you can control the amount of sugar in your diet and it will easier on the waistline!

Shop smart• Plan and shop with menus in mind as this will

be cheaper and prevent impulse buying.

• Be ruthless with ‘BOGOF offers; only buy them if you will use them that week.

• Buy seasonal - it will taste better and generally be cheaper.

Cook less • Try not to buy ready meals, instead cook

extra, and have some homemade sauces in the freezer for those days when you are pressed for time to cook.

Storage tips • Incorporate leftovers in your menus for the

week, e.g. tomato sauce with pasta one day and the rest of the sauce can be drizzled over fish the next day.

Remember the most important point of all is to enjoy, respect and appreciate the food that you have spent your time and money on, in doing this you will have achieved at least one New Year’s resolution!

The helicopter was launched by a host of celebrities including Penelope Keith and Bernard Cribbins on June 8th 2007.

Responding swiftly to 999 calls, air ambulances are able to deliver a medical crew to the scene of an accident or medical emergency and to transport patients to the nearest major hospital or specialist unit, in a fraction of the time taken by a land ambulance. Surrey has a complete HEMS Service (Helicopter Emergency Medical Service), and employ’s the highest possible clinical standards in pre hospital care.

There are currently 18 independent air ambulance operators, all of which are registered charities and funded entirely

by charitable donations, receiving no Government or National Lottery funding.

The service, based at Dunsfold Park will be fl ying fast, direct and unhindered at over 150 miles per hour and the entire county can be reached within minutes.

However, the challenge now is to meet the yearly running costs of approximately £1.7 million to provide Surrey and neighboring Sussex with an emergency helicopter service, 7 days a week, 365 days a year.

Receiving no funding from the National Lottery the charity relies almost entirely upon the generosity of the public to support the Surrey Air Ambulance.

Surrey was one of only a few counties in the UK that did not have its own dedicated Helicopter Emergency Medical Service - HEMS, but this all changed in June 2007!

Grace & Flavour, the community vegetable-growingco-operative at Dene Place, Ripley Lane

By now, regular readers here will have seen or even read several articles about the progress of the Grace & Flavour community garden project in the old walled garden at Dene Place on Ripley Lane. This time a year ago I was busily scouting the vil-lages for supporters – and identifying (for which read ‘avoiding’) those whose body language and words said that we had chosen too big a task, and would never do it.

The nay-sayers were outnumbered by the supporters by a factor of ten, something I have come to appreciate and love about living in West Horsley. Not that there are many ‘yes-men’ here: I cannot tell you the number of times I have been put through my paces, asked to explain how this project will be self-sufficient, or how it is struc-tured, or to clarify some other important detail. Often the questions are not about the gardening, but about the future stability of this ambitious plan to reclaim 1.3 hectares of once-beautiful Horsley land. You’ll find plenty of support in this village – but you’d better have a sound argument, or a well-trusted group of local people to back you up. This project is blessed with both.

So here we are – we have just completed our first weekend of 2011 on the land. Very few are now in any doubt that Grace & Flavour can be a fruitful (if you’ll excuse the pun) community kitchen garden. On Saturday rain was forecast and we had none. Forty-something villagers pitched up and worked their wellies off in both the com-munity garden and the soon-to-be-allotments. Some were clearing rubble from the field, others were spreading ash from the large 2010 bonfires. Others were making tea, or tidying the winter mess away, preparing this garden for Spring.

Last year we distributed crops to our active members, to local shops Costcutter and Charles Paine, to wonderful chef Kevin at Polesden Lacey’s restaurant, and also (10%) as a tithe, to those in our community who cannot easily get to buy fresh veg-etables. Some of our members made soup for the Salvation Army in Guildford. We were absolutely thrilled with the volume and quality of the produce we grew, and were often running to catch up with the season and the abundance it brought.

This year we have a few capital projects to complete – we need a vehicle access and a car park, and we hope to build a safe children’s area within the garden walls. Both East and West Parish Council have worked over the past months to agree terms un-der which we will be able to make allotments available to local residents – and we hope to have the first available in February. In a survey at the end of last season, when asked what they enjoyed most about in-volvement in Grace & Flavour over 80% of our members gave the answers below. If any of them strikes a chord with you, won’t you come and join us? Come for an hour, or stay for the day.

The new London congestioncharge started on 4thJanuary 2011 and if youchoose the correct car youwill be able to drive inLondon free of the charge.

Boris’s new emissions based system,where cars emitting 100g/km CO2 orless will be exempt (as long as theymeet Euro 5 air quality standards) willreplace the current ‘technology-based’approach meaning that the hybrids willno longer necessarily be exempt fromthe charge, unless they comply with thiscriteria.

The outcome of this is that there arenow a number of cars which will qualifyto be exempt from the congestioncharge with the added benefit that onthe purchase of a new car there are significant tax advantages which are:-

• The full cost of the car is allowed against company profits in the year of purchase

• The benefit in kind charged on the employee is only 10% of the list price of the car (13% if a Diesel)

• There is no requirement for the car to be used for company business or by

the employee concerned. It can be used by the director/employees, spouse or children.

The other non tax financial advantagesare:-• The vehicle excise duty will be nil.• Other costs such are insurance and

depreciation are likely to be lower• Most people will find significant fuel

cost savings.

An example of the car that meets thesecriteria is the VW Polo Blue Motion TD

• Fuel economy combined 74.3mpg

• CO2 emissions 99g/km

• Road fund licence cost £NIL

Assuming an annual mileage of 10,000per annum the cost savings includingfuel, vehicle excise duty and depreciationshould be well in excess of £2,000 perannum. In addition the company willreceive full tax relief (at probably thesmall company rate of 20%) on the fullpurchase cost of the car.

Containergrowingalsogivesallgardenerstheopportunitytogrowexoticfruit,suchascitrus,whichcannotbeplantedoutofdoorsinthiscountry,aswellas those likeblueberries,whichare very fussyabout soil. If grown well, container fruits willyieldreasonablequantitiesoffruitbut,perhapsas important, they look very handsome on apatio,andcanevenbeusedasmini-orchardsormoveablecomponentsofgardendesign.

Tree fruits grown specifically for pot use areoftengraftedonto‘semi-dwarfing’rootstocks,althoughthesizeofpotandthefiniteamountofcompostinitwillrestrictrootandtopgrowthinanyevent.Anyfruittreevarietygraftedontoa dwarfing rootstock needs to be grown in afertile, well-drained soil, such as John InnesNo 3 compost, which contains loam and issuitableforplantsgrowingpermanentlyinpots.Blueberries and cranberries need a very acidsoil; these should be planted in a proprietary‘ericaceous’compost.Citrusarealsobest inadedicatedcitruscompost.

Plant the tree into a pot which is slightlylarger than the one from which it came, if itiscontainerised,orbigenoughtocomfortablycontain the roots, if it is bare-rooted. (Bare-rootedtreesareplantedinthedormantseason,whilecontainerisedplantscanbeplantedatanytime.)Withthelatter,makesurethattherootsarenot ‘pot-bound’. If theyarebadlygirdled,returnthetreetotheretailer;otherwise,teasethemoutcarefully.Putafewflattishstonesovertheholesatthebottom,thenplacethetreeinthecentre,fillinginallroundwithcompost.Thetreeshouldbeplantedatthesamedepthasitwas inthenursery,about5cms (2 ins)belowtherimofthepottoallowforwatering.

Treesondwarfingrootstockswillneedstakingsince theydon’tmakeextensive root systems.A bamboo cane and small tree ties are oftensufficient;checkthemfromtimetotimetoseetheyarenotbitingintothebark.

Put the pot onto pot feet or bricks, so thatwatercandrainoutfreely.Repoteveryyearinautumn, into a slightly larger pot each time,until you have reached about 37.5 cms (15inches) for gooseberries, say, and 45 cms (18ins)forapples.Investinginapottrolleymakessenseifyouneedtomovepotsundercoverinwinter.

A watchful watering and feeding regime isessential if the plant is to thrive and producefruit, which sets and comes to maturity. Themaincauseoffruitdropisunevenorinsufficientwatering. Mulch the surface of the compostin spring, and use a high-potash liquid feedfrequently once the fruits have formed. Littlewaterisrequiredinwinter,becausetheplantsaredormant.

Hardy fruits, such as apples and pears, canremain outside in the winter, but the rootsare vulnerable in very cold weather, so thecontainersshouldbeenclosed inbubblewrap(leavingthetopclearforwatering),andputinaplaceshelteredfromfreezingwinds.Conversely,in very hot weather in summer, roots of anyplantinapotcanbedamagedbyheat,soplacethecontainersintheshadeduringheatwaves.

some options to help even the untidiest ofhouseholds become a haven of clutter-freesimplicity.Good storage is truly life-enhancing – itwill make your home more spacious andattractiveand,whileyou’llstillhavetomaketheefforttoputthingsaway,itwillbeadarnsightquickerandeasiertodo.It’seasilysaid,butabsolutelytrue,thatyoucanneverhavetoomuchstorage;inreallife,agoodaimisforabout10-20%ofeachroom(giveortake,dependingontheroom)tobegivenovertostorageofsometypeoranother.

The two chief options when it comes tostorage are tailor-made and built-in, or off-the-peg, free-standing pieces. The formeris often neater, takes up less room and isidealforawkwardspaces,butcanbecostlyand can’t be taken with you when youmove.The latter isportableand (often) lessexpensive,buttendstobebulkyandmustbechosen with care to co-ordinate with otherfurnishings.

Built-instoragecanbefittedintoanysuitablealcove,suchaseithersideofachimneybreastor beneath a bay window, or could stretchfromwalltowall.Itmaytaketheformofopenshelves,cupboards,drawersorwhateveryoudesigntosuityourneeds.Tokeepthecostsdown,useinexpensivematerialssuchaspine,chipboardormediumdensityfibreboard,andfinish with primer, undercoat and eggshellpaint.

Large, free-standing storage is available atpricestosuiteverybudget,fromhigh-streetbookcases to antique Oriental chests tomoderndesignersideboards.Ifacheappieceistherightsizeandshape,youcanoftenhideanuglyveneerwithacoatofsuitablepaint,whilesecond-handfindscanbetransformedby stripping, painting and changing pulls,knobsorhandles.Thentherearethesmallerpieces–boxesandbasketstotidyawkwardly

shapedstuffthatwon’tfitanywhereelse;hooksand hanging rails; and specialist items suchas toy tidies for the bath, sock organisers orjewelleryrolls.It’salloutthere,andyousimplyneedtodecideonabudgetandconsiderwhichoptionsworkbestforyou.

Ten golden rules of storage

1. Don’t store items you no longer need.Regularlyassesswhat’svitaltoyourlifeand,if something’s not, sell it or give it away.Freecycleisaglobalorganisationdedicatingtokeepinggoodstuffoutoflandfill–signup to your local group at www.freecycle.organdyou’relikelytofindatakerformostthings.

2. Possessionsthatareusedonlyoccasionally(Christmasdecorations,skiequipment)canbestoredinattics,basements,shedsorthebacksortopsofcupboards,reservingeasilyaccessible storage space for the stuff youneedtogetatallthetime.

3. Don’t place heavy items higher thanshoulderheightorlowerthankneeheight.

4. Stacking boxes look great and save space– but if you need to get at the contentsquickly and easily, don’t put them in thebottom boxes. And underbed boxes workfarbetterifthey’reonwheels.

5. Don’t be afraid to adapt storage that wasoriginally designed for other uses. Planchests, lockers, hanging racks and so oncanbeboughtatoffice-supplycompanies,shopdisplayoutletsorsecond-handshops.And multi-functional furnishings are great:diningor coffee tableswithdrawers, bedswithdeepdrawers,benchseatswithliftinglids;evensomebasinsandbathsnowhaveslimdrawersorcupboardsbuilt-in.

6. Useeveryinchofspacebybuildingstorageabove doors and windows, high up onwalls,inalcoves,underslopingceilingsandbeneath bay windows. You can even fitshelvesorcupboardsintodisusedfireplaces,while wall racks or ceiling pulleys can beusedforbikesorsimilaritems.

7. Avoid open-shelf storage anywhere visibleunlessyou’retotallyconfidentinyourability(andthatoftherestofyourfamily)tokeepwhat’s kept on them tidy and dust-free. Ifnot,havecupboarddoorsfittedor,atleast,putthingsintoattractive,matchingboxesorbaskets(labelledifnecessary)ontheshelves.

8. Storesmallthingsinsmallcontainers(Lego,toysoldiers,beads)andlargethingsinlargercontainers.Itreallyworks.

9. Ifthingskeependingupinthewrongplace,consider whether it’s your family beinguntidy or the fact that the stuff would bebetterstoredelsewhere.Itmightbeagoodidea,forexample,tokeeptoysinacupboardinakitchenratherthanupstairsinachild’sbedroom.

10.Finally, plan storage with military precision– it’s tedious but really worth spending acouple of hours adding up exactly what’sgoing to go inside each space and howmuchroomitwilltakeup.

Spice of Life - CardamomCardamom is the second most expensive spice in the world and originates from southern India where it grows wild in the forests. The seeds come from the pods of a ginger-like plant Elettaria cardamomum. It is very popular in the Arab world with cardamom coffee being a prestigious symbol of hospitality. It is also more popular in Scandinavian countries where it’s used more than cinnamon.

An essential ingredient in most Indian cooking, cardamom features highly in curries and pilau rice dishes. It is also added to pickling mixtures, especially for pickled herrings, and adds warmth to winter alcoholic punches and mulled wines. Seeds can be bruised and toasted in a pan before adding the main ingredients, or ground with other spices as required.

The tiny, brown aromatic seeds have a pungent camphorous taste and are often chewed as a tooth cleaner and breath freshener. Although cardamom is not generally used in Western medicine it is used to fl avour preparations for digestive problems. It has been used as a digestive since ancient times.

Like many spices, cardamom has been attributed with aphrodisiac qualities and in ancient India it was regarded as a cure for obesity. The Greeks and Romans used it as a perfume.

Basically,you’reonyourown.Butnoneoftheofficemanagementfunctionsyouusedtotakefor granted are particularly big deals. They’renot hard to learn. What is hard to learn issomething that women have always known,andthat’showtorunahousehold.

Ishouldstressthatby“women”here, Imeanthe traditional stay-at-home wife-and-motherkind of woman, a breed that has prettymuch vanished. Personally, I hardly know anytraditional stay-at-home wife-and-motherwomen: few of my friends could pay theirmortgageswithouttwosalaries.Myownwifeworks full-time–more than full-time,actually–asateacher.Andwhatthatmeansisthat,incommonwithmanyothermenwhoworkfromhome,I’vehadtotakeontheroleofDomesticOperations Manager (that’s male-speak for“housewife”)myself.

Mostofitisprettyroutine–theschoolrun,thewashing,thedishwasher,thetop-upshopping,thedinner;thetrickliesinfittingitallinroundthe incidental necessity of running a businessand making a living. (And of course, I’m notsofeminisedastobetrustedwithanythingascomplicated and skilled as the cleaning. TheCleanerdoesthat.Andshe’sawoman).

Butthere isoneareaofexpertisethatfillsmewith admiration for all those generations ofwomen who’ve had to master it, and makes

me think that the correct formof the verb “to master” oughtto be “to mistress”. I refer, ofcourse, to emergencies causedby malfunctioning domesticappliances.

Iwasshockedtodiscover,whenI started working from home,thatappliancesrangingfromthetoilet to the dishwasher and allitems in between don’t alwaysworkastheyshould.Andwhen

they stop working it’s inevitably catastrophic,usually involves either improbably quantitiesof water or a worrying smell of burning, andalwaysdemandsyourcompleteandundividedattention.

Iwasevenmoreshockedtodiscoverthattheworst thing to do in an appliance emergencyis open the Yellow Pages. Twice I’ve beenbadly ripped off, both times by the localagentsofnationalfranchiseswhosedisastrousincompetence turned out to be bolstered bycast-ironcall-outcontracts.

Your ability to cope with these emergencies,in the long-lost days of traditional stay-at-home wife-and-mother women, depended onsuccessful networking. It involved wives andmothers chatting to other wives and mothersat coffee mornings, bus-stops, school gates,PostOfficequeuesandsoforth,andcomparingnotes on trustworthy local tradesman whosewives,children,dogsandaddressestheyknewpersonally, and who therefore wouldn’t daredeliveranythinglessthanpromptandefficientservice.

Thosedays,Isuppose,aregone.Myalternativehasusuallybeentogodownthepuband,aftera pint or two, ask if anyone knows a goodplumber.Someonealwaysdoes(it’susuallyhisbrother-in-law),butbythattimethekitchenisunderthreefeetofunidentifiableslime.

There is, of course, another way, and that istomakesurethere’salwaysacopyofthisveryorgannexttothetelephone...

The ‘Boxster’ part inits title just doesn’t fit. This caris good enough – and uniqueenough–tohaveearneditsownname altogether. It’s a brilliantpiece of engineering and one of the all-timePorsche greats – why then, hasn’t the makerchristeneditproperly?

Seared Fresh Tuna with Warm Bean Salad

4 fresh tuna steaks

45ml (3tbsp) virgin olive oil

1 large red onion, peeled and chopped

2 x 300g cans cannellini beans, drained

2tbsp fresh chopped fl at leaf parsley

2tbsp fresh chopped coriander

Juice from ½ a lemon

Lemon wedges to garnish

1. Brush the tuna steaks with some of the olive oil and season with plenty of freshly ground black pepper and a little sea salt. Heat a cast iron skillet or griddle pan until very hot and cook the steaks for about 2 mins on each side.

2. Meanwhile, heat the rest of the olive oil in a frying pan and fry the red onion for 3-4 mins. Stir in the beans, parsley, coriander and lemon juice and cook for a further 1-2 mins until heated through. Season to taste with salt and freshly ground black pepper.

3. Divide the bean salad between four serving plates and top with the tuna steaks. Serve immediately garnished with lemon wedges.

Serves - 4 Ready in 20 minutes

Fresh tuna steaks have a lovely fi rm and meaty texture and a delicious not-too-fi shy fl avour. Take care not to overcook the steaks as the fl esh can quickly dry out and make sure your skillet or griddle pan is really sizzling hot before you start cooking.
