JBC begins operationsJune 14, 1959

The Jamaica Broadcasting Corporation (JBC) started operations on this day in 1959, being the country’s second broadcasting radio station. Its establishment marked the beginning of the introduction of wide area communication technology in the island.

Tupac was bornJune 16, 1971

One of rap’s most popular and highly rated artistes, 2Pac, was born on this day in 1971 as Tupac Amaru Shakur. The now deceased rapper shook up the music game with hits like “Hail Mary” and “All Eyez on Me”.

First non-stop cross-Atlantic flight June 15, 1919

British pilots John William Alcock and Arthur Whitten Brown performed the first non-stop cross-Atlantic flight, flying from Newfoundland, off the east coast of Canada, to Ireland located off the western coast of Europe.

Where’s your favourite place to eat out? In Jamaica – Hellshire for the biggest fried snapper and festival, Boston for jerk pork and roast sweet potato and Wally’s pan chicken by Constant Spring. Around the world – for dessert it would be Pierre Hermé in Paris, for Japanese it would be Nobu in New York, for wings, chicken and red velvet waffles Soco’s in Brooklyn, for Chinese food Mr Kong’s in London…I could go on forever.

How are your wknds spent?If I am not traveling, Sundays are my cooking days for theyummytruth.com. Up until recently, I would spend a great deal of time training for the Paris Marathon, which consists of running 10-18 miles. On Saturdays I have started horseback riding in the afternoons.

What has been your most interesting wknd?Once a friend and I stayed at American footballer, Ma’ake Kemoeatu’s home, he was playing for Washington Redskins at the time, it was an interesting weekend because it wasn’t planned and watching American football for the first time, especially from the box, came with a lot of entertainment. Next would be spending a wknd with my boyfriend on the South Coast. Jamaica is beautiful and it is easy to take your home for granted. I learned a lot about him and went to places I hadn’t been before like YS Falls and Pelican Bar in the middle of the sea.

What’s your ideal wknd?A long one, preferably one with a public holiday on Friday, without cell phones and the Internet. I would stay in a villa with a nice view, probably at Round Hill, with my boyfriend. The wknd would begin with a spa day, deep tissue massages, facials, manicures and pedicures. A chef of my choosing would be flown in for the weekend so that we would enjoy spectacular meals for three days. During the Saturday we’d sunbathe by the pool or sea, read an interesting book whilst enjoying homemade passion fruit ice cream. On Sunday I’d enjoy brunch with bellinis made with peach purée from France, the afternoon would be spent watching movies and soaking up the last few quiet hours before going home.

What’s next for April?For me, good food has the power to make people happy and I enjoy being a part of that happiness when I cook. I don’t remember exactly when I got into cooking but I do think my love for cooking grew from enjoying going out to restaurants with my family when I was younger and getting bored of my helper’s food. I hope to continue to grow my audience with TheYummyTruth.com, I have written a cookbook that I would like to get published and I am currently looking into developing a cooking/travel show.

ingredients1 cup all-purpose flour, (spooned and leveled)2 tablespoons sugar1½ teaspoons baking powder½ teaspoon coarse salt1¼ cups buttermilk2 tablespoons unsalted butter, melted1 large egg8 slices baconPure maple syrup (optional)

prepPreheat oven to 200 degrees. In a bowl whisk together flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together buttermilk, melted butter and egg. Whisk flour mixture into buttermilk mixture just until moistened with small to medium lumps remaining.

In a large cast-iron or non-stick skillet or on a griddle, cook bacon over medium-high until fat is rendered and bacon is browned on one side, 5-6 minutes. Flip and cook until golden and crisp on underside, 1-3 minutes. Drain bacon on paper towles; pour off all but 1 teaspoon fat from skillet (reserve for another use).

Heat skillet over medium. Pour ¼-cupfuls batter into skillet and top each with a bacon slice. Cook until some bubbles appear on top of pancakes and a few have burst, about 2 minutes. With a spatula, carefully flip pancakes and cook until browned on underside, about 2 minutes. Transfer to a platter, bacon side up, and loosely tent with foil. Keep pancakes warm in oven and repeat with remaining batter, adding more bacon fat if needed. Serve with pure maple syrup is desired. Serves: 8.
