This year we want to share with you the story of the bounty – the wonderful gifts we receive of fresh produce every year to make terrific meals for our guests.

Pick a vegetable! This is often one of the things we say to volunteers who come to help us process garden vegetables. Often we will say – tomatoes, peppers, cucumbers, potatoes, etc. – You pick what you want to work on.

Is this apple week? Or is it onions? Asks a couple of regular volunteers who come weekly in the late summer and fall each year to process food for us?

While our food comes from many sources, our produce comes from individuals, churches having garden ministries, farmers, and those who buy at farmer’s markets and pass it on. Whoever they are, gardening can be pleasurable, but it is also a lot of work, and so our gratitude includes both the food and all the work it takes to prepare the soil, plant, weed, water, harvest, clean the worst of the mud off, and transport the produce to us. But oh so much better than opening a can!

When we get produce in, we process it. That means two things: prepare for serving each day some of the fresh produce or chop, parboil, or sauté, and then freeze the remainder. Our guests really enjoy the fresh garden produce, whether it is sliced tomatoes, cucumbers, lettuce, coleslaw from the cabbage, squash, sweet potatoes, white potatoes, peppers, sweet corn etc. etc. etc. We encourage those who have not eaten something to try a little – egg plant, kohlrabi, or Brussels sprouts are examples of this each year. Apples become apple sauce, and it is always a big hit! Jalapeño peppers or pickled beets never last long on the salad bar. Items such as kale, spinach, beet tops, and other similar plant parts, are cooked and just called “greens” and enjoyed by all. Produce such as onions, carrots, celery, peppers, zucchini, summer squash, and leeks, are frozen in small containers or bags and go regularly into the soup, stir fry, or roasted vegetables all winter long. Tomatoes become wonderfully flavored sauce to use with spaghetti or pizza, or the base for good soup. Virtually everything is used, and often volunteers will take hope the trimmings for their compost pile.

Yes – we are blessed with a bounty of locally grown and lovingly tended produce, and we add to that blessing the volunteers who work hour after hour to help us process it. What a gift it all is!

Thank you one and all.

Sincerely,Sister Ruth E.
