    A carefully sculpted mound of ice as soft and fluffy as newly fallen snow is drenched in tropical fruit-flavored syrup, drizzled with creamy sweet-ened condensed milk, and served with a spoon in a cone-shaped cup. Sound heavenly? It is. It’s Hawaiian shave ice—the Islands’ quintessential frozen sweet treat.

    Every state has its must-try edible: Maine lobster roll, Geor-gia peach pie, Florida’s conch chowder. In Hawai‘i, it’s shave ice. But make sure you don’t put a “d” at the end of “shave,” or you’ll be immediately identified as a mea kipa (traveler). And do remember…shave ice is not the same as a snow cone. By any means.

    Shave ice’s origin is in Japan, where it’s called kakigori, and has been in existence since the 11th century when

    frozen blocks of ice from lakes were preserved in the winter, then

    finely shaved and served with sweet syrup to Japanese

    aristocracy in the sum-mer. Once ice became

    widely available in the 19th century, kakigori was introduced to the general public. Nowadays, kak-igori is sold virtually everywhere in Japan during the hot sum-

    mer months. Although using electric shavers

    is now the technique of choice, many Japanese

    street vendors still hand shave blocks of ice to produce kakigori.

    In fact, it was Japa-nese laborers, imported to Hawai‘i in the mid-1800s to work on the burgeoning sugarcane plantations, who introduced their traditional dessert to the Islands. During their breaks, these workers carefully shaved ice off a large block with their machetes and drenched it with cane syrup or fruit juice, for a cool respite from the relentless sun. Once these Japanese immigrants began moving away from plantation life, many established family-owned grocery stores and snack shops offering, among other things, shave ice.

    The reason there’s no “d” on “shave” also dates back to the plantation era. Out of a need for so many different cultures to communicate with one another, Hawaiian Creole English (a.k.a. Hawaiian Pidgin) emerged as a common language that’s still spoken today in the Islands. One of the characteristics of Ha-waiian Creole is the dropping of “superfluous” letters and even syllables. In addition to “shave ice,” while visiting Hawai‘i you’ll also see other examples like “smoke meat.”

    There are myriad flavors to choose from when ordering shave ice. You can select just one, or try a combination (usually up to three). Popular tropical essences are coconut, guava, liliko‘i (passion fruit), lychee, and mango. For an extra kick of sweet-ness, try a scoop of ice cream or azuki (sweet red bean) paste at the bottom. And that drizzle of sweetened condensed milk on top? It’s called a “snow cap,” and it’s quite simply divine.

    DISCONNECT FROM THE WORLD1 KE‘E This is the end of the road, literally. The last beach

    accessible by car on the north shore, Ke‘e’s gentle ocean lagoon is

    best enjoyed in the calm ocean conditions of the summer. The

    lagoon is protected from waves by reefs which provide good

    snorkeling during these seasonal calms. A view of the entire Nāpali

    CAMP WITH THE FAMILY2 SALT POND COUNTY BEACH PARK This kid-friendly

    beach has a protected swimming area, great facilities, lifeguards,

    and consistently warm, sunny weather. Lele Road past mile marker

    17 in Hanapepe.

    PICNIC AT SUNSET3 PO‘IPU BEACH PARK This south shore hub has large

    grassy lawns, dependable sun, lifeguards, great snorkeling, and

    frequent turtle, whale and monk seal sightings. Ho‘owili Road in

    Po‘ipu.

    WALK AND EXPLORE4 MAHA‘ULEPU Remote and undeveloped, this unspoiled

    strip of coastline has a timeless, untamed feel. Swimming can be

    dangerous, and there are no lifeguards or facilities, just solitude,

    wilderness, and countless beach treasures. Past the Hyatt, it’s 2

    miles on a dirt cane field road which dead ends.

    towering, electric green mountains, Hanalei Bay is the perfect

    Rich, fertile volcanic soil, rainfall and sunshine aplenty, plus a mild sub-tropical climate made the Hawaiian Islands ideal for growing pineapple.

    The humble pineapple, which is neither a pine nor an apple, nor is it indigenous to the Islands, is recognized worldwide as the symbol of Hawai‘i. It’s also regarded internationally as an expression of friend-ship and hospitality.

    Horticulturist John Kidwell is credited with introducing the concept of growing pineapples in Hawai‘i as an industry in the late 1800s. One of the most famous and influential pineapple industrialists was James

    Dole, who started his pineapple plantation on O‘ahu in 1900. Del Monte began growing pineapples, also

    on O‘ahu, in 1917. The first pineapple company on the island of Kaua‘i, Kaua‘i Fruit & Land Co., was established in 1906, and Maui Pineapple Company began pineapple cultivation on the island of Maui in 1909. In a bold move, James Dole bought the tiny island of Lana‘i in 1922, and developed a large portion of it into the world’s largest pineapple plantation, earning this diminutive land mass its former nickname: “The Pineapple Isle.” In its mid-twentieth-century heyday, Hawai‘i’s pineapple industry consisted of eight companies em-ploying approximately 3,000 workers.

    until, just as with sugarcane, foreign competi-tion and high labor costs took their toll. Most

    smaller pineapple companies in the state closed in the

    late 1960s and early ‘70s, and even Dole and Del Monte packed up their operations and

    Pineapple Company, which held on until 2009.

    Today, Maui Gold Pineapple Company and Hawaiian Crown on Oahu and Big Island are the only two companies in the state producing locally grown

    pineapples, with a focus on quality rather than quantity.

    REGIONSKaua‘i is separated into five major regions:North Shore, East Side, Lihu‘e, South Shore and West Side. Each region is diverse with its own personality and geography.

    HISTORYNavigating by the stars, intrepid Polynesians (believed to have originated in the Marquesas Islands) first arrived in the Hawaiian Islands sometime between 400—500 A.D. The island of Hawai‘i (known also as Big Island) was the first island inhabited, but over the ensuing years these early explorers settled on the other major Hawaiian Islands.

    Western contact occurred in 1778, when British explorer Captain James Cook discovered Hawai‘i, and gave them the name “Sandwich Isles” (after the Earl of Sandwich). Hawaiian King Kamehameha united all of the islands under his rule. The Hawaiian monarchy was forcefully overthrown in 1893 by businessmen and sugar planters. Two years after the coup, the islands of Hawai‘i were annexed by the United States. In 1959 Hawai‘i became the 50th state.
