Getting Wedding FitLeighton Girling is a local personal trainer, with 10 years experience. His credentials include a degree inSports Science and a variety of other personal training and sports qualifications. Prior to this he spentseveral years as a UK athletics coach and international athlete.

Leighton offers one to one personal training and nutritional advice. His Specialities include motivation, fitness, fat burning, toning, boxing and injury rehabilitation. The idea is to keep the training progressive, fun, testing and manageable. Personal training is simply not just about taking orders, but connecting witha trainer who you can put trust in to get you results.

Where and when?

It’s basically the client’s choice where training takes place. At one ofseveral gyms located in and around the Poole and Bournemouth area.At home or just about anywhere outdoors, including parks or thebeach.

The importance of good nutritional advice.

In a nutshell Leighton can often be heard saying ’getting in shape is 50% nutrition and 50% exercise’. It isvery important to be well informed on eating, as well as exercise.

What is wedding fit?

A choice of three different personal training packages designed to get any bride into the shape of their lifeand ready for the big day. These include nutritional advice and a choice of one to three personal trainingsessions a week for twelve weeks.

Recommendation from a satisfied client.

“I used Leighton to help me to focus and build a training plan inpreparation for my wedding and honeymoon.  The honeymoon itselfinvolved cycling in France over some of the highest roads in the Pyr-enees and I needed help to be able to get fit and into a routinewhich would mean that this was more of an enjoyable experiencethan a nightmare.  I also wanted to be able to feel healthy, lookgood for my wedding day and feel special.

Leighton provided honest and focused advice and tips which were tailored to what I wanted to achieveand constantly provided advice as time progressed.  He was able to offer me appointments at my homewhich utilised the equipment that I had and provided one to one training within a comfortable environ-ment for me.

At the end of my sessions with Leighton he provided me with a training plan going forward so that I wasable to carry on the work already started with him.  The sessions were varied, interesting and increased inintensity in line with my fitness, but at a pace which was comfortable to me, whilst pushing myself to thatnext stage. As a result, I looked fabulous on my wedding day as was able to conquer the challenge I hadset myself of cycling up mountains in France with my new husband!.”

Having a toastmaster at your wedding adds a sense of pompand circumstance to the occasion.  Many people think that atoastmaster's role is just to say grace and to announce thewedding speeches at the wedding breakfast.  These are just acouple of many, many duties that Andrew undertakes.

Andrew will meet the bride and groom a few months before theirwedding to establish their needs and requirements for theirspecial day. He will get to know the couple and build arelationship with them so that the couple can feel at easeknowing that their wedding day will flow according to plan. Whencouples meet with Andrew before their wedding, he can offertips and advice to them and offer guidance on wedding etiquetteand protocol. On the day itself, Andrew will arrive well before thecouple and guests to ensure that the venue is prepared and setup as per their needs. As guests arrive, Andrew will greeteveryone and guide them to where they are expected to be andhe will assist photographers with the taking of official

photographs.

Weddings are usually large gatherings. To ensure thatthe happy couple gets to see each of their guests ontheir special day, it is suggested that they have areceiving line before everyone enters the dining area. Here, each guest has the opportunity to formally greetand congratulate the bride and groom. Once all of theguests are in the dining area, Andrew will ask everyoneto stand as he announces the newlyweds into the room(using their married name for the very first time). Ifrequired, Andrew can also say Grace before thewedding breakfast begins.

After the meal has finished it is traditional to movestraight into the wedding speeches. Andrew will

introduce speeches made by the father of the bride, the groom and the best man. It iscustomary to have them in this order. Some couples like other family members and friends togive speeches.  If this is required, Andrew will arrange with the couple prior to the day whatorder the speeches are to be announced.  Once the speeches are finished, the weddingbreakfast concludes with the cutting of the wedding cake.

Memories of Old PooleIn a previous issue of Viva! I said I would write of a more sophisticatedyouth club than Lagland Street Boys, of which I later became a member, named YCH.

The building was attached to the Methodist Church in Poole High Street. Itwas a hall, but originally the Church situated in Chapel Lane with a stage andbalcony. A great variety of activities were provided, table tennis, play on fullsized snooker table, fencing, gymnastics with vaulting horse, parallel bars andspring board with mats, dancing lessons and dances, music section, camping. We also had a gymnastic team that gave displays at various charity events. Aswimming team who competed against other youth clubs at the open airswimming baths in Kingland Road next to Poole Park Lake and the railwaytrack. The trains were all steam back then, so we bathers would be left witha layer of smut from the smoke unless we dived under water at the rightmoment.

Occasionally we held our crazy dances to the music of Ken Adams and hisband. We used to dress up with all sorts of attire and play various pranks. On one occasion two lads went up to the balcony armed with a stirrup pumpand a bucket of water. At the arranged time the lights would be switched offand the boys on the balcony began pumping. The girls screamed and ran forshelter. The lads weren’t brave either. Then the lights went back on and allended in laughter.Another time couples would be dancing and when the music stopped a pairwere chosen to come on to the stage to receive a prize. I recall a particulartime when the prize was a pair of kippers and it was announced they werethe most miserable couple on the floor so again in produced lots of laughter.

I and my mate Tony Pitman were members of the swimming and gymnasticsteams. One evening he and I decided to practice some of our displayroutines, the backward summersault. The hall was occupied so we chose touse the room above the warden’s office (Nobby Clark). We began ourpractices, which included a few heavy landings. Suddenly an irate Nobbycame up the stairs shouting “what on earth’s going on, we are in completedarkness”. Apparently the whole office light socket had fallen from theceiling. To make matters worse they were holding a meeting. We weresuspended from the club for one month for not asking permission to use theroom. Not much to laugh about this time.

Once a year we held a summer camp at the Henbury Estate.Often the weather was lovely. My first task was to dig thesoil pit for the latrine. There were tents to erect, timber forthe fire to collect and may other chores required. The waterhad to be collected from a reservoir. That evening a younglady and I were detailed off to fetch the water. On our returnwe stopped at an opening in the hedgerow and watchedsome deer grazing. For somewhile we chatted and found outmore about each other (that’s

one of the assets of a few days camping youngpeople really mix with one another).

After a while we decided to return. Picking up thewater container to my amazement it wascompletely empty. I found it had a minute hole inthe bottom. I suggested we return to the reservoirbut my friend declined and said she would wait forme there, so I realised I hadn’t made much of animpression on her. Returning to camp with at leastsome water in the container our leader remarkedwe had been a long time. I replied there’s a hole inmy bucket dear leader dear leader there’s a hole. Then mend it dear Thomas dear Thomas dearThomas then mend it. With what shall I mend itdear leader dear leader and so on. Finishing our little ditty to much laughter andjokes.

That evening we sat around a lovely glowing bonfire singing songs like ten greenbottles, you’ll never get to heaven in an old ford car; I am the music man etc..

YHC was a well run organised club. We had no TV, mobile phones or computersbut we certainly knew how to enjoy ourselves and have a good laugh. I havefond memories of YCH. We were never BORED.

Where Did The AprilShowers Go?By Bruce Grant-Braham

Former Mayor and also chairman ofPoole Tourism

As I write this article the long stretch of sunny weather hasjust come to an abrupt - hopefully temporary - end. A clap of thunder has rudely caught my attention.

The sailors amongst you will recognize the rush of cold air that precedes a squall and just such anoccurrence blew across the patio outside a few minutes ago. Some small branches have just blown off thetrees and the first rain for more than a month is falling. A parched garden is grateful.

Who would have thought that in 2011 we would have had the driest April since records began? The beautiful early season weather has been very good news for tourism businesses in Poole which benefithugely from the sun being in the clear blue Dorset skies. In the first few days of the early summer telephones started ringing and last minute bookings flowed in asPoole recorded hotter temperatures than many traditional Mediterranean holiday haunts over the Easterbreak.

To encourage those phone calls a lot of effort at the Tourism Office is put in to being helpful and welcomingto the media and this paid off big time.Sky News - big friends of Poole Tourism - rang us up as the hot weather became so newsworthy. Theywanted to broadcast an item about the benefits of holidaying in the UK and could we help? Much to ourcredit they picked Poole as an example of what treasures could be found on the UK doorstep.Poole Quay was shown to a worldwide audience in all its glory before pictures of the inner harbour atEvening Hill were transmitted.

Our home area looked absolutely glorious with all the waterborne activities that were going on as GrahamRichardson, our hardworking Tourism Officer, waxed lyrical about Poole to viewers around the globe.Hopefully this broadcast - which was repeated several times during the day - will have triggered many morevisitors to come here as the summer progresses. When you think that Sky could have picked anywhere in the country and they picked our lovely home ofPoole it reminds us what a paradise is under our noses every day.

Before signing off I must offer my congratulations to all those councillors successfully elected in the localelections.Poole Council - in various political hues - has been truly visionary in supporting Tourism for many decadesnow. In elections one has to acknowledge that there are always winners but also losers. These political contestscontain many personal stories.Where the latter are concerned I must on a personal level commiserate with those who were not electedand pick out Chris Bulteel. Thanks to the elections Chris has been denied the opportunity to serve as Deputy Mayor following a verysuccessful year as Mayor of Poole. Chris' contribution to Poole for longer than many can remember is muchappreciated.Thank you Chris for all the public and private service you have given to Poole over the years and mostrecently in Civic office.

Walk through the main entrance & nothing much seems to have changed from the days ofthe Mansion House, but go down a small flight of stairs  the changes become evident. Largecomfy chairs & sofas, french windows that lead out to a terrace area covered with large saillike canopies, that must be very inviting in the warm summer months. Slate flooring, impressive bar with I am pleased to say a real coffee machine. far too many restaurants & barsserve push button coffee & as someone who likes her java ‘baby style’, weak & milky, theready made machines only deliver one size fits all!

The Bistro is tastefully decorated, reminds me of an old style gentlemen's club, leather seats, dark wood but not so much that it alienates women.

We are shown to our table & given menus, it all looks very tasty butas we are here for lunch I decide to keep it fairly light, though thelobster thermidor with new potatoes & salad is hugely tempting.Being a seafood fan I order the Plat du Jour - moules mariniere. Mydining companion, by his own admission likes plain food so opts forthe du Vin burger, but without the bun or the cheese & fat cut chipsnot pomme frites. Our waitress must have resisted the temptation toask if he actually wanted the burger! As he wanted his burger welldone we were told it would take a little longer & were served acomplimentary dish of smoked duck breast with waldorf salad &orange reduction. The duck was delicious & virtually melted in mymouth.

The main courses arrived soon after both beautifully presented, even theburger looked splendid despite being without its usual accompaniments. Mymoules were very tasty & plentiful, too plentiful in fact I couldn’t manage them all.

It was around this point the manager John Willcock, I know this because he introducedhimself, came to our table to ask if everything was to our liking. WAIT! Does he know I am hereto write a review? I suppose this means we will now be offered a bottle of wine with hispersonal compliments! But he smiles after being told we are fine & goes on to check all thediners are happy. So no, I guess not.  Phew! I would have so hated to be treated like a VIP!

After a decent pause we were offered the dessert menu. I hate when this is thrust at youalmost immediately you put your knife & fork down.I really didn’t have any room but with so much temptation I couldn’t resist, especially when Isaw blueberry cheesecake with home-made or should I say HdV made blueberry ice cream. Aswith everything we ordered this too arrived beautifully presented & its taste lived up to itslooks.

We had our coffee served in the lounge/bar where we could relax & enjoy it whilst seated onthe large comfy sofas.

So would I recommend Hotel du Vin Bistro? Undoubtedly, the food is of excellent quality, artistically presented, (we do eat with our eyes), & the service attentive without being overbearing. But it’s not somewhere you pop out for a cheap bite to eat. Though they do offer a 2course lunch special with a bottle of wine & coffee for just £35 for two, very reasonable.J C Rogers

With the summer fast approaching there’s no better time to get in shape to show offall the hard work you’ve put in the gym! But how?The simple answer is to ensure that you incorporate some form of cardio into your weeklytraining regime, aiming for a minimum of 3 sessions per week. The two types of cardio I’d recommend are as follows*:1) Interval Training! Here the intensity of the cardio workout is varied. For example, if using a treadmill youcan do the following:i) 1 min walkii) 2 min runiii) 30 sec sprintThis cycle can then be repeated 8 times for a productive 28 min session (not includingwarm up & cool down). Fluctuate the treadmill’s incline setting for more intensity! This type of training can boost your metabolism massively throughout the day helpingyou burn those extra calories!2) Super Circuits! These sessions are designed for maximum effort in minimal time. After a 5-10min warmup choose 5 – 7 exercises that you can do with just bodyweight, or by using a bar or benchor both! For example your exercise sequence could be:i) Squat Jumps x 8 ii) Press Ups x 8 iii) Box Step Ups x 8 (per leg)iv) Barbell Shoulder Press x 8 v) Lateral Lunge x 8 (per leg)vi) Triceps Bench Dip vii) Dead Lift x 8.Rest for 1 min between each cycle and complete it five times in total. This is a great wayto develop muscle tone and increase endurance as well as help burn those unwantedpounds! So what are you waiting for? Call now on 01202 777766 or visit our website athttp://www.thejunctionbroadstone.co.uk for more information!*Please always check with your doctor before starting any exercise regime.

Do you miss the days when a little plastic bag with a picture of a princess or fireman on it proudly carriedhome a piece of sponge birthday cake adorned with icing?

Or when pass the parcel & musical chairs raised squeals of excitement?

If you do you are probably a mum desperately trying to think of new ways to entertain your little one, plusclassmates, on their birthday.  The trouble is so much has already been done, as no doubt they will point outwhen you make a suggestion.  And if your offspring has a later than the others birthday, your task becomesnightmarish as all the ‘best stuff’ has already been done!

Of course you should make a stand & say NO MORE!  Iam going back to the simple days of eggy sandwiches &sausages on sticks. No wait, make that sausages onplates, don’t want to get in trouble with Health & Safety!

But you know you won’t because you cannot bear to seethe disappointment on their cherubic face.  Or stand allthat mess in your nice home, if you are completelyhonest.

So how about this to knock their little designer socksoff, a Western Cowboy Day for kids?

First they get all dressed up as little cowboys & girls,(though jeans & jumpers are fine too). You drive out tothe New Forest & deliver them to Burley Villa WesternRiding School & your job is done!

For the next few hours you are free, so why not visit thelocal motorbike museum where they serve very tastymeals or have a cream tea in near by Burley, or just takea walk in the beautiful surrounding area?

Meanwhile the kiddies are left in the capable, childfriendly hands of  Phil, Becky & Sue. Who will take yourWranglers-in -training through every step.

The Kiddie Cowboy daySay howdy to your horse & learn how to groom him or her.Saddle ‘em up ready to ride out.Mosey on down to the corral where the basics of Western riding is experienced.Unsaddle your steed & brush ‘em down.Learn how to lasso like a real cowboy & try your hand at horseshoe throwing. Then it’s over to the Ranch House for barb-b-q’d burgers & beans.Say goodbye to your four legged friend, until next time.

Now all that is left for mummy & daddy to do is take their little dudes back  to a neat tidy home, tuck themin bed & breath a sigh of relief. Till next year!  Though there is no guarantee they won’t want to do it allagain next weekend!

For children over 12  & adults Western Trail rides in the forest are available as are Western experience days. For more information contact Phil at [email protected] or call 01425 610 278.

Handfasting was the old pagan ritual of marriage in the British Isles. It remained legal in Scotland all theway up to 1939, even after Lord Harwicke's Act of 1753 declared marriages in England valid only whenperformed by a clergyman.

Previous to that act, common-law marriages had been quite acceptably validated by the couplethemselves simply joining their hands in the presence of witnesses.

After Lord Harwicke's Act, the Scottish border town of Gretna Green became a mecca for eloping coupleswho fled there to handfast themselves in legal wedlock.

The handfasting gesture seems to have been derived from one of the ancient Indo-European images ofmale-female conjunction, the infinity sign, whose twin circles represent sun (male) and moon (female)cycles, one right-handed and the other left-handed as when the figure 8 is drawn with one clockwise andone counterclockwise circle.

The right side of either sex was always considered the solar or male side, while the left side was lunar orfemale. Marriage, then, consisted of uniting the two right hands like an ordinary handshake, then the twoleft hands, so that the partners' arms formed the graphic cycles of "infinity" or completeness.

Two-handed handfasting still constituted a fully legal marriage in Europe, however, whether the blessingof the church was sought or not.

Clergymen, of course, recommended that newlyweds attend church as soon as possible after the signingof the contract and the handfasting; but marriage had been for so many centuries ignored by the church, left under the jurisdiction of common law rather than canon law, that ecclesiastical rules on marriagewere difficult to enforce.

In Switzerland from the sixteenth to eighteenth centuries, a couple could marry each other legally just bypublicly drinking together. The now-popular secular gesture of drinking through one another's linkedelbows was once another way of forming the infinity sign of sexual union.

Like many other relics of paganism, the handfastinggesture was retained in children's games andtraditional folk dances. Continental versions of theswing-your-partner movement call for a couple to jointheir hands in this same manner and whirl around eachother.

Handfasting Prayer By Larkspur

"Marry me under a garland of stars,Conifers silent witnessTo night wind's echoed vows.Bearing our promises upwardThrough universal whitenessTo the sepulchre of God.Touch me once for all time,All lives that are to be...Our love enshrined.Marry me under the gaze of stars.Celestial concourse, bless our joyNow and forevermore..."

An engagement or wedding ring is apowerful symbol of your love. Isn’t itimportant then that the gems in thesemost poignant pieces of jewelleryare pure? I’m not talking about theclarity or the cut here, I’m talkingabout avoiding so-called blooddiamonds.

Sadly, many of the world’s diamonds comefrom war-zones. These gems are mined andsold to finance conflicts.

If you want to make sure that your jewellery isconflict-free consider the following options:Vintage rings Many families have them, oryou can comb antique shops. Gold can berecast and stones reset if the style is notentirely to your taste.

Lab diamonds These are created in alaboratory. Some companies which use such

diamonds also use recycled gold, makingtheir rings eco-friendly as well as conflict-free.

Diamonds from peaceful sources ConsiderAustralian or Canadian diamonds.

Kimberley process diamonds The Kimberleyprocess is an ongoing effort to reformdiamond mining in Africa. These diamondswill be certified as conflict-free.

The Ring’s the Thing

One for the Gents

The practice of men wearing Weddingrings is a relatively new one.

Pre-1940 only 15% of Grooms wouldreceive and wear a ring from their BrideWith the outbreak of World War II, thatfigure rocketed to 60%. The warseparated couples, and the maleWedding Ring acted as a symbol ofmarriage and reminder of a loved one.

The figures for male wedding rings hit70% during the Korean War andnowadays virtually every bridegroomreceives a ring though only 80-90% ofthem go on to wear it on aregular basis.

Folklore

Some say the ring shapeitself represents endless

love, others say the traditionis linked to the myth that avein runs directly from the

ring finger to the heart, connecting the two forever.

Wedding DazeHAIR* * * * *You want everything to be perfect on your big day, especially the way you look. After-all the photoslast a lifetime. You have most likely planned it alldown to the last detail so now is not the time totake chances with your hair. Planning is the key.

Colour - one week before.Cut - two weeks before.Trials - as many as necessary.

How ever you are planning on wearing your hair you will need to book in for a trial withyour stylist, with the recent royal bride wearing her hair down on 'the' wedding day I thinkthere may be a lot more request for that particular look. If you want it put up check yourhairdresser is comfortable with styling hair up. This may sound obvious but not all stylistsare capable when it comes to 'up do's' especially wedding hair. If they aren't either ask who is or shop around other salons. At each Marc Young salon there are stylists who specialisein wedding hair.If you know how you want your hair or have a good idea then get your head-dress to gowith your hair not the other way around, or you may find you have to compromise yourhair stye to fit the head-dress. Some bridal shops will loan you a veil or tiara to take withyou to practice with. If you are wearing fresh flowers in your hair take some silk ones thatclosely resemble the real ones.

DO have as many trials as necessary until you have the perfect look. The last thing you wantis a BWDH, bad wedding day hair!DON'T decide to change your hair colour just before your big day. If you don't like it it willbe costly & stressful to change it back & possibly needing several appointments. Plus thereis no guarantee it will be exactly what you want in time for your wedding.DO book well in advance or you may find your trusted stylist is away on holiday.DO book your trial/trials for the last appointment of the day this way your stylist won't haveany more clients coming in so can spend more time with you.DO get your hair in top condition with professionally recommended home care products &some salon treatments. Over the counter products are all well & good but no one knowsyour hair & it's condition needs better than your stylist. Have regular trims even if you aregrowing it as this will stop it from getting out of shape or endie.

Page 29: Viva Poole

29

DO wash your hair the day before because if it is washed onthe day it will be too soft & even fly away making it difficultto hold a shape or style.DON'T crash diet in the last months or so as this canhave a detrimental effect not only on your hair butskin & nails also. Embark on a sensible eating &exercise programme in plenty of time.MAKE UP* * * * * * *This can be tricky as many brides who don'tusually wear make up on a day to day basisfeel they should on their wedding day. But areworried (as is their husband to be quite often) thatthey wont look like themselves. Of course you want to looknatural & dewy but if it is too natural you run the risk of lookingwashed out in your photographs, of which there will be many!So just like your hair have as many trials as you feel you need & don't beafraid to say if there is something you don't like - your make up artist can only give you thelook you want if you tell them.Have your mum or someone keep your lipstick & a powder compact with a smallretractable brush so you can re-touch your lipstick & dust over any shine throughout theday.NAILS* * * * *Your wedding ring just won't look as lovely on a finger with a stubby or bitten nail! If youare a nibbler, try to give it up a good six months before your wedding & have somemanicures, if your nails at least look more presentable you may be less likely to bite them.If your nails are weak & or prone to splitting & peeling then a good quality nail friendly gelis the answer. I say nail friendly because many claim to be but in fact leave your nails inworse condition than they were before. I use BioSculpture & Calgel (having tried others inthe past) these gels actually improve the condition of the nail & mimic a natural, strongbut flexible healthy nail. There are over 40 colours available that stay put for over 3 weekswith little or no maintenance, plus french finish & soft naturals. All gels have matchingpolish. The gel can also be applied over tips if you want instant length, but myrecommendation is  to start having a gel overlay on your own nails several months beforethe big day, this will enable you to grow your own nails to a good length so 'false' nails willnot be necessary. Even if you have good nails that grow with no problem there is always achance you may break one - bet it's the wedding finger too! If that happens BioSculpturehave an amazing gel that can be used to sculpt a nail that looks exactly like you grew ityourself with a clear nail plate but opaque tip!

Finally & most importantly   - HAVE A WONDERFUL DAY!Any questions about fashion or beauty? email Julie: [email protected]

Move Over Willy WonkerEven if you have never set foot over thethreshold you will probably know exactlywhere Chocol8 of Westbourne is due tothe bright pink shop front and shinnysignage bearing the name. Forunderstated and demur it's mostdefinitely not! From the fushia pink wallsto the cow and leopard print Louis Vchairs the establishment is quite anoptical experience. But all that just pales into insignificance next to the delicious, mouth watering cakes and Belgian chocolates.

Your dilemma will not only be where to start but quite where, and with what, tofinish! Cellulite be dammed, waistline who cares for the moment one of theircupcakes, or chocolates, or carrot cakes or or or the choice is overwhelming, passes your lips your taste-buds will explode with delight.

Accompany it all with a smooth cup of their finest Italian coffee or hot chocolateif you are a seasoned chocoholic!

But that is not all this chocolate emporium has to offer there are many delightfuland even quirky gifts on display for you to choose from. One I particularly likedwas an individual cupcake in a jar and thought if personalised with a name orinitials would make a very different and fun place setting for a wedding or evenjust a dinner party. If you are looking for a gift with a difference you shoulddefinitely pop in and either John or Julie can tell you all about the wonderfuledible goodies they have to offer and how they can bespoke and personalise foryou.

It must have been Tiffany, or the like, who proclaimed that diamonds are a girlsbest friend, for I am sure many women would argue that chockies of all shapes, flavours and colour are. For scientists have proven that the happy chemical(seratonin) released in the brain when we are in love or even just happy is alsofound in chocolate. So if you are feeling a bit down you could go for a good runas this too is proclaimed to release the happy chemical in the brain or just headover to Chocol8 for a large helping of chocolate fudge cake. I know which onegets my vote!

With Fathers Day this month and hopefully some sunshine, June is a good monthfor get together and relaxed entertaining. This recipe is a great way to barbecuea leg of lamb, just asks the guys at Oakley Butchers to butterfly it which meanstaking the bone out and opening up the meat, this decreases cooking time andmakes carving easy. The maple syrup is a perfect partner for the lamb and won'tfail to impress your guests. Keep it simple; serve with new potatoes tossed inminted butter, a mixed leaf salad dressed with olive oil and lemon juice andperhaps some cherry tomatoes roasted on the vine. Its important to rest thelamb for 10 mins before carving, this gives the meat a chance to absorb all thejuices and flavors. Oakley Butchers will happily butterfly and marinade their localDorset lamb using my recipe if you are short of time. See ad below. So fire up theBarbie and get cooking!

Barbecued Maple Syrup Lamb

Ingredients

Leg of lamb butterflied approx 5 ½lb- 2 ½ kg will feed 6 to 8 people2 cloves garlic cut into thin slivers2 sprigs fresh rosemarySalt and pepper

For the marinade

100 ml olive oil75 ml sweet sherry2 tbl spns maple syrup {Plus extra to brush on}1 tbl spn balsamic vinegarJuice of 1 lemon

Method

1. Make small incisions all over the lamb with a sharp knife.2. Poke a sliver of garlic then a small sprig of rosemary into the holes.3. Mix together the marinade ingredients4. Place lamb into a shallow container, season all over and cover with the

marinade ensuring the meat is well covered. Cover with cling film and

Bring Out The Barbie!!

Page 33: Viva Poole

33

place in the fridge for a minimum of two hours or overnight for moreflavours, turning occasionally.

5. When ready to cook bring the lamb back to room temperature and getthe Barbie nice and hot.

6. Place on the hottest part for 5 mins each side to sear the meat, and thenmove slightly away to cook more slowly basting with the marinade andturning frequently. Cook for approx 25 to 30 mins for pink, longer if youwant it more well done. About 10 mins before the end start to brushwith the extra maple syrup, the meat will go quite dark and will start tochar, this all adds to the flavour.

7. Allow the meat to rest for 10 mins so if a little underdone don’t worry asit will continue to cook while resting. Ideally the outside will be charredand the inside pink.

8. Carve into thin slices and pour over any juices.

If you want to roast some vine tomatoes simply crush a garlic clove with somesalt and mix with olive oil, toss the tomatoes leaving on the vine, and either cookin a hot oven or put on the bbq until they start to blister.

Positive NewsBy Bruce Grant-BrahamFormer Mayor and also

chairman of Poole TourismStudent DigsPeople think that being a student is all fun andgames. Staying up all night partying, sleeping in untilthe early hours of the afternoon and occasionallytaking a look at our feeble requirement of colouringin seems like the way anybody would like to spendthree years of their young lives. But those peopleunfortunately would be mistaken.

Annoyingly mistaken. These would be the sorts ofpeople that complain about paying taxes to supportthe three-year long drink fuelled drug rage that issupposedly student life, but these people need tounderstand that when their children are allowed atthe ripe old age of 18 to then go on an ”alcoholescapade” of their own that that it is part of a cycle.

One day we will be the responsible adults whofinancially propel the next generation of studentsafter acquiring careers of our own. I would like tomake it known that maintenance grants aren’toffered to everybody these days and that degradingpart-time jobs are to be undertaken to keep up thatnasty little habit called eating. And may I make it

clear that as my mother keeps pointing out, that itwas much more fun in “her day” when work tookup a small percentage of her time spent mostlydying her hair purple and polishing her DocMartens. I would love to follow in her deep-treadedfootsteps.

Us “free-loading work-a-phobes” will be the peoplewho keep our country afloat in the apparentlyensuing doom. The politicians, the doctors, thelawyers and of course, the artists (who happen tobe the most important).

So please when you next encounter a student, waving a billboard in your face outside Lush orasking for a few minutes of your time to do aquestionnaire on the eating habits of your boaconstrictor, try to put a cap on the bubblingannoyance/jealousy rising in your throat and givethem a helping hand.

Just try and remember what it was like to be youngand naïve trying to get a foot on the long, steep andcrowded ladder that is life.Georgia
