A no-nonsense master baker, cake decorator and star of the hit TLC reality show Cake Boss, Buddy Valastro was born to bake. Proving he had a natural talent at seventeen, Buddy took on his family-run New Jersey business, Carls City Hall Bake Shop after the loss of his father. With a winning combination of traditional recipes and his own innovative decorating style, Buddy is clearly The Boss of a successful bakery that has excelled beyond his wildest dreams.

He is featured in a variety of publications and TV shows and shares stories and recipes in his first book, Cake Boss. Buddy and his staff continue to hand-craft hundreds of wedding and specialty cakes weekly at Carlos Bakery, solidly holding their place as one of the best. This November, Buddy is bringing The Bakin with the Boss Tour to Chrysler Hall in Norfolk. Virginia.

BV: Ive been doing this a long time so I make sure the details are perfect. If I dont think something is going to work, Ill give my opinion. Some brides can be difficult but in the end, The customer is always right. I just do the best I can.

BV: They should bring things that give information about the wedding like color swatches of the dresses and tablecloths; photos of the dresses; the invitation; any monogram; any information about them that gives the baker some direction. I like seeing tear sheets and photos of other cakes. We all get ideas from each other and try to replicate them. Its the details that say a lot about a bride.

BV: Anything can inspire me. I can look at a building; see a dress; study a flower; and I am able to replicate it on a cake.

BV: Right now its all about color-more color on the cake. Black and white; silver and purple; color combinations are really

popular. Also, a Less is more approach. Everyones different about their cake- some want sugar flowers everywhere, others want it plain and simple- it just depends.

BV: Use fresh flowers instead of hand-made sugar ones. Keep the exterior design simple. Remember that no matter how pretty your cake is, if you cut back on the quality of the cake and the flavor, and the cake tastes like crap, people will remember that your wedding cake tasted terrible.

BV: Theyll get to know me and my story; and see how we tape our show. We bring up people from the audience to help on stage and they even get to sample our cakes. Its good clean family fun and everyone leaves satisfied.
