HelloWith Christmas around the corner we have an abundance of seasonal articles in this issue. You will not have any difficulty finding something to do as we have over forty events to choose from on the What’s On pages from Christmas tree festivals, pantos, fayres and farmer’s markets - something for everyone.On the subject of Christmas trees we have some tips on keeping them fresh and some general decorating ideas too on page 20.If Christmas is going to be a thrifty affair for you this year you might like to see what Lady Muck is up to on page 12 as she seems to have got it sussed with her onion chutney! I’ve always loved receiving and giving home-made foodie gifts at Christmas and on pages 28 and 29 you can find recipes for making mini Christmas cakes and gingerbread shapes - just like the ones on our front cover.Ladies, if you are looking for a nice posh frock for the festive season, why not take a trip to Coggeshall and visit Louise at Phoenix. Pippins Nursery celebrates 20 years!

And what changes since Pippins first opened its doors in September 1992 at Whites Farm, White

Colne! Sally Scobie converted a redundant farm building to create a nursery for 2 ½ to 5 year olds. With just four children on the first morning session, it was a nerve wracking time.

The reputation at Pippins quickly grew and soon it was full with 20 children attending each morning. During the last 20 years Pippins has grown and adapted to meet the needs of modern families.

In 2004, Anita Huckle joined Sally as a partner at Pippins and together they have expanded the business in order to utilise the peaceful rural setting. The nursery now offers full days as well as sessions and school days.

Last March Baby Pippins was added in a beautiful barn opposite the original Pippins building. The baby room has proved to be very popular and parents are enrolling their babies before they are born! The wonderful views of the busy farmyard and orchards provide endless entertainment for the children. The introduction of home cooked daily lunches have been very popular with the children along with weekly swimming lessons for those who are interested.

To date, almost 700 children have had their early years care and education provided by Pippins. And in many cases whole families have attended. Each child is special and the importance of early years care and learning has always been at the forefront of the ethos at Pippins along with a desire for continuous reflective practice.

A nursery is heavily reliant on its staff team and for over 20 years Pippins has benefited from the expertise of many excellent people who have played an important part in so many children’s lives. It now employs 18 staff and encourages the development of people wanting to train in Early Years.With outstanding Ofsted inspections and top accreditation by the Montessori Foundation, Pippins continues to flourish.

Country Mutters Christmas Lite...by Lady Muck

I’ve done my sums and it’s fair to say that however creative I am with the figures, Christmas this year will not be celebrated in the most lavish fashion ever. Clearly a bit of thrift and prudence is required, even if the very words make me feel like I’m sucking on a lemon. There’s not much I can do about the lengthening list of computer games, so that’s where the arm and leg will be allocated. Husband and I have agreed a challenge to spend a fiver on each other, with the stipulation that it has to be as inventive as possible. Not hard really - right now Ebay is offering a sealed empty packet of jelly babies, a box of plastic glow in the dark spiders or a pack of Saddam Hussein playing cards. I know - who wouldn’t love to receive any one of these?A couple of weeks ago I scandalised my friends by gleaning several pounds of onions from nearby fields - and no, I don’t mean ‘stole’, I mean ‘gleaned’ - a perfectly semi-legitimate form of recovering good produce which the farmer chose not to pick up when harvesting and which would otherwise have been ploughed back in - OK? The fruits of my twilight labours shall be lovingly crafted into 2 dozen jars of onion chutney and handed out to my nearest and dearest. I’ve often thought we could break down festive fare into the bits that everyone actually eats. Trifle could be reduced to a blob of whipped cream and a chaser of sherry. As we finally sit down to eat Christmas dinner red-faced, scalded and weak-kneed after hours of exertion Auntie Joan has often cheerfully remarked that Christmas dinner is ‘just a bit of chicken, really’, so maybe this year we should call her bluff. We can certainly do away with the sprouts, stuffing and cranberry sauce. As for pudding, we can just set fire to a block of Viennetta and as it’s only me and the birds that eat Christmas cake, I could carefully ice an upside down empty cake tin. No-one would ever know there was no actual cake in there.Recycling presents is an obvious saving, as long

as you make sure to note down who gave you which present last year. Occasional lapses should be understood by the recipient as long as you have the decency to turn a blind eye to receiving the bargain box of synthetic guava bath salts you gave to someone else two years ago. Even the dodgy bottle of Asti Spumante you won in last year’s tombola can be your contribution to this year’s church fair. You’ll be rumbled by the eagle-eyed secretary because she donated it last year, but so what? She probably recycled it herself, judging by the many layers of left-over sticky tape underneath the ticket.And then there’s last year’s Christmas tree, still stubbornly un-biodegrading in a far corner of the garden. I could drag it out, give it a spray of silver paint, festoon it with tinsel and say I just fancied a bit of bling. Never mind, at least Christmas spirit won’t be in short supply. Pea Pod Burgundy, anyone?

Choose a themeChoosing a theme brings unity to the overall look. It should suit your house and the way your family celebrates the festive season, whether laid-back and relaxed, sophisticated or formal. For some, that might mean a traditional, living fir tree and a colour theme of red, green and gold. For others, a kitsch fake tree with fluorescent ornaments; or perhaps a minimal, modern style with pure silver and glass. Dress the treeStart by winding it with lights, making sure they’re evenly distributed. Next, drape your garlands, again aiming for evenness and an impression of generosity without overloading the tree. Looking after your treeBuy a tree that’s as fresh as possible. As soon as possible, cut half an inch off the bottom of the trunk, to help it absorb water. Trim away low-down or interior branches that you don’t need. Put the tree in a stand that can hold plenty of water, and never let it run out. Avoid standing the tree in a sunny window or near a radiator.

InventionsChristmas Tree LightsThere’s nothing that

says ‘Christmas has arrived’ as much as a Christmas tree beautifully illuminated with lights.

Some say that the tradition dates as far back as the 1600s when wealthy German families would decorate their trees with small candles held in place with pins or melted wax. Owing to the danger of fire however, the candles would only stay lit for several minutes at a time with home owners standing nervously by. Even after candle holders and lanterns became available, fires were common and insurance companies started refusing to pay claims.

The solution was provided by a very well-known name and its unveiling must be one

of the greatest publicity stunts of all time. In December 1880, in order to publicise his latest invention, Thomas Edison hung a string of electric lights around his laboratory in New Jersey. Passers-by were mesmerised by the beautiful display and associated it with yuletide celebrations. Two years later one of Edison’s inventors, Edward Johnson, lit a Christmas tree with 80 small bulbs and by 1900, Christmas displays with lights started appearing in department store windows. On Christmas Eve, 1923, President Coolidge lit the National Christmas Tree near the White House with 3,000 lights.

A string of lights cost about $12 which put buying them way out of reach of ordinary American families. General Electric, who had purchased the rights to Edison’s bulbs, even released advertisements suggesting families rented them. It wasn’t until 1925 when the Sadacca family, who owned a novelty lighting business, started mass manufacturing Christmas lights, that they become affordable.

Today you can take your pick of incandescent or LED lights. Either way, what a pleasure it is to light up your tree in these cold winter months.

When we think about volunteering at Christmas, it’s often the image of the soup kitchen that springs to mind, but you may be surprised to learn that your help could be needed closer at home.Craig Last, Frontline Services Team Leader at Colchester Community Voluntary Services says, ‘Quite often it’s the people in our own communities just a few doors away who could really do with a bit of help. It could be something as simple as putting the bins out, but that 10 minutes a week could make all the difference, particularly if it’s icy outside’. Cold weather and limited daylight hours in the winter months can contribute to elderly people becoming isolated, so the offer of a lift may be much appreciated. More and more people now have computers which is a great way of staying in touch with the outside world in general and family

members who live far away, but elderly people sometimes need help with setting up and accessing social media sites. And as Christmas approaches, help with internet shopping can be much appreciated. Volunteering with a Time Bank means that for every hour you give to help others, you receive 1 time credit, which you can spend on the bank of skills available from other members, so you might earn help with the gardening or even be able to sign up for a Spanish lesson.If you’re interested, the best way to get started is to register with the CCVS Time Bank, where you may be asked for references and sometimes a crb check.

Mini Christmas Cakes

Preheat the oven to 150C/300F/gas 2. Grease and line the base and sides of a 20cm square cake tin with a double thickness of greased, greaseproof paper.

Place the butter and sugar in a large bowl and cream together until pale and fluffy. Gradually beat in the eggs. Sift together the flour and spices then fold into the creamed mixture. Fold in the lemon zest, dried fruit, glace cherries and nuts and mix thoroughly.

Spoon the mixture into the prepared cake tin and smooth the surface. Use the back of a metal spoon to make a slight dip in the centre (this will help to give an even rise). Bake in the preheated oven for 3¼ - 3 ½ hours or until firm to the touch and a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin.

When the cake is completely cold, use a sharp knife to cut it into 9 smaller square cakes. Brush the sides of each cake with a little apricot jam. Divide the marzipan into 9 pieces. Dust a surface lightly with icing sugar and roll each piece out to a strip long enough to go around each cake. Wrap the strips around the cakes pinching the ends together to seal. Top each cake with a selection of cherries, nuts and apricots. Tie a ribbon around each cake if liked.

boxes.

FOR THE CAkE• 250g butter, softened• 250g dark muscovado sugar• 4 medium eggs, beaten• 350g plain flour• 2 tsp ground mixed spice• ½ tsp ground cinnamon• ½ tsp ground cloves• Finely grated zest of 1 lemon• 800g mixed dried fruit• 100g glace cherries, rinsed, dried

and chopped• 100g chopped mixed nuts

FOR THE DECORATION• 750g marzipan• Icing sugar, for dusting• 4 tbsp apricot jam, warmed and

sieved• Mixed coloured glace cherries,

walnut halves, Brazil nuts and chopped dried apricots

• 225g plain flour, plus extra• Quarter teaspoon of salt• 1 tsp baking powder• 2 tsp ground ginger• ½ tsp mixed spice• 50g unsalted butter• 100g dark brown soft sugar• 100g golden syrup• 1 -2 tbsp milk• Icing to decorate

Sift together the flour, salt, baking powder and spices. Heat the butter, sugar and syrup until dissolved, stirring frequently, then cool for 5 minutes.

Stir the syrup mixture into the dry ingredients. Add enough milk for a stiff dough, cover with cling film and chill for 30 minutes.

Preheat the oven to 180˚C/350F/gas mark 4. Line 2 baking sheets with baking parchment. On a lightly floured surface, roll out dough to 5mm thick.

Using cutters, cut out Christmas shapes. Place on the baking sheets, then use a skewer to make a hole in each one if you want to hang them from the tree. Bake for 10 mins approx until lightly browned, then cool on a wire rack.

Use writing icing in small squeezy tubes to decorate.

Boxing Day Walk through DedhamThis year’s traditional Boxing Day walk is about 5 miles long and takes in parts of the Stour Valley Path and the Essex Way, but also through the centre of Dedham, which always looks very festive at this time of year. The section along the banks of the River Stour may well be muddy, but the views should be well worth wrapping up the family in wellies and scarves. Most of us feel the need for some physical activity after the usual Christmas excesses and a walk gives the children the chance to let off some steam after the excitement of Christmas Day itself.The walk starts in Gun Hill, off the A12 near the Talbooth, and joins the Stour Valley Path along the river.
