Classic Iced Tea• Ingredients:• 12 regular-size tea bags• 1/8 teaspoon baking soda• 1 qt. distilled or bottled water• 1 qt. ice cubes• 1 1/4 cups Simple Syrup • Directions:• 1. Place tea bags and baking soda in a large heatproof glass pitcher.• 2. Bring water just to a rolling boil in a saucepan or kettle, and immediately pour over

tea bags, making sure bags are submerged. Cover and steep 7 minutes. Remove tea bags without squeezing; discard tea bags.

• 3. Add ice, and stir until ice melts. Stir in Simple Syrup, and serve over ice.

Blackberry Sweet Tea• Ingredients:• 3 cups fresh or frozen blackberries, thawed• 1 1/4 cups sugar• 1 tablespoon chopped fresh mint• Pinch of baking soda• 4 cups boiling water• 2 family-size tea bags• 2 1/2 cups cold water• Garnish: fresh blackberries

• Directions:• Combine blackberries and sugar in a large container, and crush with a wooden spoon; stir in mint and baking

soda.• 2. Pour 4 cups boiling water over tea bags; cover and steep 5 minutes. Discard tea bags.• 3. Pour tea over blackberry mixture; let stand at room temperature 1 hour. Pour tea through a wire-mesh

strainer into a large pitcher, discarding solids. Add 2 1/2 cups cold water, stirring until sugar dissolves. Cover and chill 1 hour. Garnish, if desired.

Lemonade Sweet Tea• Ingredients:• 3 cups water• 2 family-size tea bags• 1 cup loosely packed fresh mint leaves• 1/2 cup sugar• 4 cups cold water• 1/2 (12-oz.) can frozen lemonade concentrate, thawed• Garnishes: halved orange slices, lemon balm

• Directions:• Bring 3 cups water to a boil in a 2-qt. saucepan. Remove from heat, add tea bags, and stir in fresh mint. Cover and

steep 10 minutes.• 2. Discard tea bags and mint. Stir in sugar until dissolved. Pour tea into a 3-qt. container, and stir in 4 cups cold water

and lemonade concentrate. Serve over ice. Garnish, if desired.• Spiked Lemonade Sweet Tea: Prepare Lemonade Sweet Tea recipe as directed. Stir in 1 cup bourbon or 1 cup spiced

dark rum just before serving. Garnish with fresh sugarcane and fresh pineapple slices, if desired.• Ginger-and-Honey Sweet Tea: Prepare Southern Sweet Tea recipe as directed, omitting sugar and stirring in 1/2 cup

honey and 1 Tbsp. grated fresh ginger. Garnish with lemon slices, if desired.
