Soft Sugar Cookies

Ingredients2/3 c. shortening1 c. sugar2 eggs1/3 c. milk1 tsp. vanilla3 c. flour2 tsp. baking powder1 tsp. salt

Cream Cheese Frosting:8 oz. cream cheese-

softened1/4 c. butter, softened1 tsp. vanilla1 to 1½ lbs powdered

sugar

InstructionsPreheat oven to 350 degreesBeat shortening and sugar together.Add eggs, milk and vanillaIn separate bowl, combine flour, baking powder

and salt.Slowing add dry ingredients to wet ingredients.Mix together until you can form a large dough

ball.On floured surface, roll out dough ball until about

1/2 to 3/4 inch thick.Use cookie cutters (or rim of a drinking glass) to

cut cookie shapes out of dough.Place cookies on lightly sprayed cookie sheet.Bake about 10-12 minutes. DON'T OVERCOOK OR

THEY WILL BE HARD!For frosting...beat together cream cheese, butter,

and vanilla. Add powdered sugar to desired consistency. Spread over cooled cookies.

Classic Macaroni & Cheese

Ingredients

1 pkg elbow macaroni1/2 c. butter, cut up

into chunks so it melts easier

8-10 oz. Velveeta, cut into little cubes

2 c. cheddar cheese, shredded -- get a block and shred it yourself. Trust me!

1/2 c. milk (or to taste)salt & pepper to tastepaprika (optional.. I

just use it for a little extra flavor and pretty color)

Instructions Cook macaroni according to package directions

(al dente) in salted water. When macaroni is cooked, drain and return to pot on low heat. Immediately add butter. When butter is melted, add cheeses and milk. Keep stirring until cheese is melted. If it is too thick, add more milk.. if it's too thin, add more cheese. Add salt, pepper, and paprika (optional). Stir well and serve immediately.

**If you save the leftovers, just refrigerate and when ready to eat--pop it in the microwave with a little milk, stirring every minute so it doesn't dry out.

Frozen Hot Chocolate Ingredients5-6 oz chocolate2 tsp. hot chocolate powder

mix 1 1/2 Tbsp sugar1 1/2 c. milk3 c. ice (to make it a little

more rich, use frozen milk cubes)

Whipped cream (see below or store-bought)

Chocolate shavings

*Whipped Cream1 c. heavy cream, very cold1 tsp. vanilla extract1 1/2 Tbsp light corn syrup

Instructions Chop the chocolate into small pieces and melt in a

double boiler or a small saucepan over med-low heat. Stir occasionally until melted.

Add the hot chocolate mix and sugar, stirring constantly until blended. Remove from heat, slowly add half a cup of the milk, and stir until smooth.

Cool to room temperature. In a blender, place the remaining cup of milk, the chocolate mixture, and the ice. Blend on high speed until smooth. Pour into cup or mug and top with whipped cream and chocolate shavings.

Whipped Cream: Combine the cream and vanilla and mix well. With an

electric mixer with a whisk attachment, start whipping the cream on medium speed. Add the corn syrup slowly while beating. Whip until the cream holds soft peaks.

Ice Cream Cone Cupcakes

Ingredients

1 pkg. ice cream cones, flat bottomed

1 box cake mix, any flavor

Buttercream Frosting1 c. butter1 1/2 tsp. vanilla1/8 tsp. salt5 c. powdered sugar1/4 c. milk

Instructions Preheat oven to 375 degrees. Place ice cream cones into the cups of a mini muffin

pan. Prepare cake mix according to box directions. Fill each ice cream cone no more than 3/4 full of batter,

they will overflow if too much batter is inside! (Helpful Hint: To fill easier and with a lot less mess, put the cake batter into a gallon size zip-lock bag and cut out the bottom corner. Squeeze the batter into each cupcake!) Bake for 15-18 minutes or until inserted toothpick comes out clean.

Meanwhile in separate bowl, beat butter with mixer until fluffy.

Add vanilla, salt, powdered sugar and milk. Continue beating until smooth. Swirl over cooled cupcakes. (For a big swirl, use same

zip lock bag method used to fill cupcake batter.)

April Fool’s Day Mini Burgers

Ingredients

Nilla Wafers Peppermint patties (not

the huge York ones, the ones that are a little bigger than a quarter)

Coconut shreds or flakes (combine with green coloring in a plastic bag and shake until coconut turns green)

yellow and red frosting honey sesame seeds

Instructions To assemble the burgers, choose two Nilla wafers. Spread icing "ketchup or mustard" on the bottom bun,

add a peppermint patty, and sprinkle with coconut lettuce. Add a squirt of icing ketchup or mustard to hold the top bun in place.

Spread a little tiny bit of honey on the top of the bun and sprinkle on a few sesame seeds (they should stick in place because of the honey).

Arrange the hamburgers on a plate or wrap in foil.

These are a few great recipes for kids that are
