Creamy Adobo-Rigatoni Macaroni in Red Cabbageby Elvie Pobre

This is truly a must have pasta salad especially if you are Pinoy. This healthy pasta salad dish is a greatway to use your lef tover adobo.

2 cups cooked rigatoni

2 cups shredded red cabbage

1 cup coarsely chopped pork or chicken adobo lef t-over

½ cup sweet pickle relish

¾ cup Lady's Choice Real Mayonnaise

125 ml all purpose cream, chilled

2 tbsp diced red onion

1 tbsp red cane vinegar

1 tsp sesame oil

salt and pepper to taste

chopped spring onion f or garnishing

1. In a bowl, combine sesame oil and red cane vinegar. Add redcabbage, a pinch of salt and pepper. Toss. Set aside.

2. In another bowl, mix rigatoni, ¾ cup of adobo, red onion, Lady'sChoice Real Mayonnaise, all purpose cream, sweet pickle relish, a pinch of salt and pepper.

3. Spread red cabbage salad in a serving plate. Add the rigatoni mixture. Garnish with the remaining coarselychopped adobo and spring onion.

4. Serve it warm or can be ref rigerated f or 1 hour bef ore serving.
