Just as the name suggests, people gathered for music and socializing, and if they had a favourite cookie recipe, to bring that and a few samples to the party. At one of the first events, Rev. Carole Martignacco, pastor of the UU Estrie Uni- tarian Universalist Church in North Hat- ley, shared her Spritz Cookies with the group. “The recipe was given to me by my German mother-in-law,” said Marti- gnacco. “It has long been the favourite Christmas cookie of my four daughters, who love baking as well as eating them.” Martignacco graciously shared this delicious and easy-to-make recipe with •The Record.• A cookie press is required, it’s a gad- get that looks a bit like a cake-decorating tube, but made of metal. With a bit of ingenuity, one recipe can make several cookie shapes, and dif- ferent food colourings and flavourings can also add to the variety. “Our favourite shapes and flavourings were candy canes with peppermint, camels with cardomon and star anise, flowers with lemon, wreaths, trees and bells with almond, and pinwheels and fluted sticks with chocolate,” she ex- plained. Basic Spritz Cookie Recipe 1 cup butter, softened to room tem- perature 2 egg yolks 1 1/4 cups icing sugar 2 1/2 cups white flour 1/2 teaspoon flavouring (almond ex- tract, lemon, star anise, etc.) 1 teaspoon pure vanilla extract 1/2 teaspoon salt Cream together butter and sugar, stir in egg yolks and flavourings. Beat until light and fluffy. Gradually fold in sifted flour and salt. Fill the cookie press with dough, being careful not to leave pockets of air. Choose a design and press shapes lightly onto ungreased baking sheet about 1 to 2 inches apart, as they will spread. Coloured sugar or sprinkles may be added before baking. Bake for 6 to 8 minutes in a 400 de- gree F oven. Let cool before removing to baking racks. Cookies freeze well - if they last long enough!
