Introduction

The CVM Color Monitor System is designed specifically for the fast-food industry.

A common trouble spot in a typical operation is the failure to relay the counter and drive-thru orders to kitchen staff in a timely and accurate manner. Micro- phone systems and remote kitchen printers have been employed to help minimize the problems associated with order entry.

Microphone systems rely heavily on the ability of the kitchen staff to remember both the quantities and details of all pending orders, a formidable task.

Kitchen printing devices do deliver an increased level of accuracy, but inevitably require one worker to read the order to the others, a time consuming method.

In recent years many of the larger chains have chosen kitchen display monitor systems, as opposed to hardcopy printing devices. These operators have become aware of the increased throughput that the video network makes possible.

We at Posera have designed what we believe to be the most comprehensive, cost effective and efficient monitor system available from any vendor... The CVM is designed with the need for simplicity and ease of operation in mind.

The CVM implements a unique system utilizing COLOR in the displayed orders. This simplifies the preparation task and decreases average prep time. Normal menu items display in WHITE, additions to the items in GREEN, and deletions from the items in RED. Additionally, special menu items may be programmed to display in YELLOW and message items can be displayed in BLUE, CYAN, or VIOLET, allowing accurate visual portrayal of any order.This leads us to another CVM advantage... LEGIBILITY. All CVM monitors can be operated with a choice of font sizes from 6 to 20 points. This greatly increases the distance that the orders can be easily viewed. Another benefit is that the restaurant operator will usually need fewer monitors, compared with existing systems.

• Server, Mode, and Revenue Center are optionally displayed at the top of the order.

• Main items and modifiers can be programmed to show in any color.

• Status Box color is programmable by terminal number or order type. The status box can appear at the top or bottom of the order.

Screen Control

1 - 8 Keys - Removes orders from positions 1 through 8. A large number 1 provides an easy target to bump the oldest order in the number 1 position.

Other things you can do on bump: •Transmit the bump to other CVM monitors, causing the order to be removed.

• Forward this order for display on a different CVM monitor.

• Print the order.

• Confirm bump, requires two bump key depressions.

Park/Status

This is a multi function button.

• In the Drive Thru – use this button to flag an order as “PARKED”.

• In the Kitchen – use this button to request and display recipe files.

• Managers – use this button to access the CVM Dashboard, report and programming screens.

In drive through you can flag an order as Parked.

• Orders can also be Un-Parked

• Optionally require Un-Park before bumping

• Optionally transmit the Park, causing the order on other CVM monitors to be Parked as well

Break-In

Break-In is a Maitre’D function.

Orders in Maitre’D designated as Break-In, move to the first order position on the CVM, giving them priority.

This feature is used mainly in the Drive-Thru but could even be used at the counter for Rush orders.

CVM Messages

Messages can be received and displayed on all of the CVM monitors.

Use the back office CVMUtility software to send messages.

Recipes can be requested by the cook and displayed at the CVM monitors.

Recipes consist of a plating image and two text description areas.

Use the CVMUtility software to build and manage recipes.

Link multiple CVM monitors together to form very large screen displays.

Use this in very high volume locations where a single monitor is not enough.

Item Timing

Because most items have varying cooking times, the CVM system can hold and dispatch items based upon how long it takes to cook them.

The goal is to have all items completed by the kitchen at roughly the same time.

We use a combination of Expo and Prep monitors and a unique color coding system to note the cooking stage of each menu item.

Colors and functions are completely programmable so you can choose the features and functions that best suite your needs.

The Expo Screen

Here are some images showing the various colors of items on the Expo screens. Items in Gray are not started. Red means the item has been fired, and White means the item is complete.

Additionally, when all items in an order are complete, the status box is changed to blue and the order is moved into position #1 on the screen.

The head cook can now plate the order.

Here are some images showing the various colors of items on a Prep screen. Items in Red are not yet started and require firing. Items in White are cooking.

The initial time on an item is its prep time. Once fired, its time begins to count down to 0.

Once an item time reaches 0, the time will begin to flash signify overdue.

The CVM Dashboard gives the user access to reports, redirection, screen modes and programming.

Access to these functions can be password protected or eliminated all together.

There are 8 built in reports to give you the information you need.

You can specify the level of detail you want. From 5 minute intervals to 1 hour.

Re-Direction

CVM monitors can be re-directed to display at different monitors. Very useful for controlling kitchens with multiple cooking stations. When slow, output can be re-directed to a single station.

Normally you would use the CVMUtility software to set these options from the back office.

If you wish to change the Advanced Options directly at the CVM, you must connect a keyboard and mouse (PS2 or USB).

The CVMUtility software is installed on the back office Maitre’D file server.

It allows you to connect with and program all CVM’s in the system.

View or print real-time reports from CVM monitors. Choose from eight different report formats, including graphs.

CVM Utility Re-Direction

Re-direct a monitor to a different monitor. This is very useful in a kitchen with two cooking stations. During slow times, the second station might be re-directed to appear at the first station.
