Your KitchenAid" Stand Mixer will mix faster and more thoroughlythan most other electric Stand Mixers. Therefore, the mixing time inmost traditional and non-packaged recipes must be adjusted to avoidoverbeating. With cakes, for example, beating time may be half as longas with other Stand Mixers.

Bowl, white flat beater and white dough hook may be washed in anautomatic dishwasher. Or, clean them thoroughly in hot sudsy water andrinse completely before drying. Wire whip should be hand washed anddried immediately. Do not wash the wire whip in a dishwasher. Do notstore the beaters on the shaft.
NOTE: Always be sure to unplug the Stand Mixer before cleaning. Wipethe Stand Mixer with a soft, damp cloth. Do not use household orcommercial cleaners. Do not immerse in water. Wipe off the beater shaftfrequently, removing any residue that may accumulate.

Your Stand Mixer is adjusted at the factory so the flat beater just clears thebottom of the bowl. If, for any reason, the flat beater hits the bottom of the
bowl or is too far away from the bowl, you can correct the clearance easily.

Converting Your Recipefor the Mixer
The mixing instructions for recipesin this book can guide you inconverting your own favoriterecipes for preparation with yourKitchenAid RStand Mixer. Look for
recipes similar to yours and thenadapt your recipes to usethe procedures in the similarKitchenAid recipes.
For example, the "quick mix"method (sometimes referred to asthe "dump" method) is ideal forsimple cakes, such as the QuickYellow Cake and EasyWhite Cakeincluded in this book. This methodcalls for combining dry ingredientswith most or all liquid ingredients inone step.
More elaborate cakes, such astortes, should be prepared usingthe traditional cake mixing method.With this method, sugar and theshortening, butter, or margarine arethoroughly mixed (creamed) beforeother ingredients are added.
For all cakes, mixing times maychange because your KitchenAid RStand Mixer works more quicklythan other mixers. In general,mixing a cake with the KitchenAid"Stand Mixer will take about half thetime called for in most traditionaland non-packaged cake recipes.
To help determine the ideal mixingtime, observe the batter or doughand mix only until it has the desiredappearance described in your recipe,such as "smooth and creamy."

Adding Ingredients
Always add ingredients as closeto side of bowl as possible, notdirectly into the moving beater.The Pouring Shield can be used tosimplify adding ingredients.
NOTE: If ingredients in very bottomof bowl are not thoroughly mixed,then the beater is not far enoughinto the bowl. See "Beater to Bowl
Clearance" on page 14.
Cake Mixes
When preparing packaged cakemixes, use Speed 2 for low speed,Speed 4 for medium speed, andSpeed 6 for high speed. For bestresults, mix for the time stated onthe package directions.
Adding Nuts, Raisins, orCandied Fruits
Follow individual recipes forguidelines on including theseingredients. In general, solidmaterials should be folded in the
last few seconds of mixing on StirSpeed. The batter should be thickenough to prevent the fruit or nutsfrom sinking to the bottom of thepan during baking. Sticky fruitsshould be dusted with flour forbetter distribution in the batter.
Liquid Mixtures
Mixtures containing large amountsof liquid ingredients shouldbe mixed at lower speeds toavoid splashing. Increase mixerspeed only after the mixture hasthickened.

KitchenAid ® attachments are designed to assure long life. The attachmentpower shaft and hub socket are of a square design, to eliminate any
possibility of slipping during the transmission of power to the attachment.

To Attach
;;. Turn the speed control to OFE2. Unplug mixer or disconnect powen? Loosen the attachment knob by turning it counterclockwise, and
remove the attachment hub cover or flip up hinged hub cover.'; Insert the attachment shaft housing into the attachment hub, making
certain the attachment power shaft fits into the square attachmenthub socket. It may be necessary to rotate the attachment back andforth. When the attachment is in proper position, the pin on theattachment will fit into the notch on the hub rim.
;_ Tighten the attachment knob by turning it clockwise until theattachment is completely secured to mixer.
