Rehydrierung der Trockenbierhefe
Rehydration Media
• Kein entsalztes oder destiliertes Wasser verwenden (osmotischer Druck)
• Keine unverdünnte WürzeDie Zellmembran ist permeabler während der ersten paar Minuten der Rehydrierung und toxische Materialien können in die Zelle eindringen
• Am besten sterilisiertes / gekochtes Leitungswasser oder verdünnte Würze (untergärige Hefe)
Rehydrierung 1. Schritt(obergärige Hefe)
• Hefe auf die Oberfläche der 10 fachen Menge von sterilem (gekochtem) Leitungswasser (30 – 35C) streuen
• Heftiges Rühren vermeiden!
• Hefe für 15 Min. ungestört bei 30 – 35 C ruhen lassen
• Schaumbildung ist kein Indikator der Aktivität
Rehydrierung 2. Schritt(obergärige Hefe)
• Nach 15 Min. vorsichtig rühren bis sich die Hefe komplett gelöst hat
• Hefe für weitere 5 Minuten ungestört ruhen lassen.
• Temperatur der Hefesuspension in 10 ºC Schritten an die Würzetemperatur anpassen, indem kalte Würze beigemischt wird.
Rehydrierung 3. Schritt(obergärige Hefe)
• Nachdem die Temperatur angepasst ist, die Würze ohne Verzögerung mit der Hefe anstellen
• Anstellrate: 100 g/hl
• Belüftung der Würze ist nicht notwendig

• Die Verwendung von ausgewogenen Nutrients würde hier wahrscheinlich helfen.

ZusammenfassungNottingham Ale Yeast
• Nottingham Ale Trockenhefe kann High Gravity Würzen mit und ohne Adjunct vergären
• Nottingham Ale Trockenhefe kann bei kalten Temperaturen (10 ºC) in 100% Malzwürzen vergären, wenn die empfohlene Anstellrate von 1g/L verwendet wird.
• Vergärungsgrad nimmt mit der Gärungstemperatur ab
• Wärmere Temperaturen und höhere Stammwürze führen zur verstärkten Ester- und höhere Alkoholbildung.
• Ester waren meist höher in High Gravity Würzen wohingegen höhere Alkohole höher in Adjunct Würzen waren.
