MACADAMIA NUT – ENCRUSTED MAHI MAHI WITH MANGO SALSA
2 large red bell peppers, cut into 1/4 - inch pieces
1 mango, peeled, pitted, cut into 1/4 - inch pieces
1 papaya, peeled, seeded, cut into 1/4 - inch pieces
1 cup finely chopped fresh cilantro
½ small red onion, finely diced
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 tablespoon rice vinegar
1 teaspoon finely chopped garlic
1/4 teaspoon cayenne pepper
½ cup all purpose flour
2 large eggs
½ cup panko
3 cups macadamia nuts
6 6-ounce mahi mahi (1 inch thick), skinned
Combine first 10 ingredients in large bowl and stir to blend. Season salsa
to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and
refrigerate. Bring to room temperature before serving.)
Preheat oven to 350°F. Place flour in shallow bowl. Whisk eggs in small
bowl to blend. Finely grind nuts in processor. Transfer nuts to another bowl.
Sprinkle fish with salt and pepper. Coat sides of fish with flour. Dip sides of
fish into eggs, then macadamia nuts, coating each side completely. Place
fillets on a large baking sheet. Bake fish until just opaque in center, about 7
minutes. Divide salsa among 6 plates. Top with fish and serve.

hen planning our wedding, we wanted to create a celebration of the communities that we belong to -- the
people and experiences that ultimately brought us together and who continue to support us along the way. We chose to get
married in my hometown in Vermont, at The Brandon Inn. The Inn is a lovely four-story brick Victorian, right on the town green. The proprietors, Sarah and Louis Pattis, are two of my parents’ closest friends, and in high school I worked the front desk in the evenings, often helping out with weddings and dreaming about getting married there myself. We wanted the decor to show off the Inn’s authentic beauty, so we focused on flowers -- lots of them! As a couple we really love to travel, so we named all the tables after cities we’ve visited together, like Marrakech, Beijing, and Cape Town. Ben’s childhood rabbi came up from New York City to marry us in the Inn’s backyard next to the Neshobe River, in an interdenominational ceremony. We were married under a chuppah that we built from birch saplings I cut from my family’s land, with a canopy made from my grandmother’s handmade lace and the tallit, or prayer shawl, that Ben got at his bar mitzvah. Part of the Jewish ceremony involves breaking a glass, so Ben’s brother Andrew, who is an artist, created a custom piece that we’ve since framed. The reception afterward was inside the Inn, with a buffet dinner featuring lots of locally grown and raised food, a vintage photobooth, and then dancing to our DJ friend’s rare Motown record collection late into the night. Since it was Labor Day weekend, most of our guests came up for a few days, and the weekend was full of activities for them to explore and enjoy Brandon, like hiking, golf, antiquing, and a whiffle ball game and BBQ the day before the wedding. The whole thing came off like magic, thanks to our inspiring family and friends who celebrated with us. - Jessica & Benjamin

e never really considered getting married anywhere other than Vermont. Aside from being Erica’s home, the beautiful
scenery was something that we wanted to share with our friends and family for the outdoor wedding that we envisioned. Once we
saw the Grand Isle Lake House, no other venue could compare. The breathtaking setting overlooking Lake Champlain, with a backdrop of gorgeous mountains and the unique character of the historic Lake House represented everything that we love about Vermont. Our goal was to create a weekend getaway that our family and friends would never forget while sharing our special day. To have all that only minutes from where Erica grew up in Grand Isle made it feel like home while giving our guests a truly authentic Vermont experience. - Erica & Mike

The Vermont Symphony Orchestra Summer Festival Tour brings music, and fireworks to outdoor venues across Vermont. This year’s program features Broadway star Sara Jean Ford, as she joins the VSO for hits from the Great American Songbook. Vocal numbers by Rodgers, Porter, and Gershwin share the spotlight with irresistible Benny Goodman big band tunes. Orchestral favorites from the world of opera add drama, fantasy, and exoticism to our songful theme. The concert closes with the traditional 1812 Overture, marches, and a spectacular fireworks display.

t was a sweltering July day in Vermont, but Dillon and Amelia kept their cool. Maybe it was because the
couple had survived the pressure of pulling together the final details of their wedding day with Dillon deployed to South
America for the entire month of June. Or maybe it was because Amelia grew up on a farm in Northern Vermont and she was no stranger to hot summers. But it also could have been because the couple decided not to risk the weather when planning their wedding that allowed them not to sweat it. The added benefit of choosing an indoor venue for their wedding day was taking advantage of the urban beauty of downtown Winooski. In between the ceremony at St. Francis Xavier Church in Winooski and their reception at the Hampton Inn in Colchester the couple spent time soaking in their new marriage and posing for photos around the historic Champlain Mill. It’s a side of Vermont that doesn’t get as much credit as the rustic barns and grassy meadows so often seen in featured Vermont weddings. But some of Vermont’s urban centers boast both historic and new architecture that can make for some stunning backgrounds. The charming brick of the surrounding buildings where Dillon and Amelia lingered was a beautiful match to the couple’s vintage style. And just a short walk away was a leafy walking path to also capture some of Vermont’s natural beauty. It was the best of both worlds! - Stina Booth, Photographer
