8The name LAJK has an interesting background
and really sums up the heart and soul of this gem of a Du-brovnik restaurant. It has a family feel, yes the letters LAJK are the first letters of the family that runs it, you al-most feel like you’ve sat down at a good friend’s house. LAJK is located on the cobbled Pri-jeko street in the heart of the Old City of Dubrovnik and of-fers diners a real Old City feel. There is something special about eating in this histori-cal city, especially when you are dining al fresco. And even though Prijeko is a relatively busy side street off the Stradun the restaurant is in a quiet cor-ner offers diners a tranquil ex-perience. Using home-grown products and a combination of traditional recipes and modern twists the LAJK res-taurant has relatively quickly grown to be one of the hot-spots on the Dubrovnik eat-ery scene. The breakfasts are legendary. Believe it or not it isn’t that easy to find a good breakfast in Dubrovnik, locals tend to make do with a cup of coffee and a that’s about it, so with their extensive break-fast menu – from bruschette salmon to three eggs ome-lette – which includes a break-fast named after all the family
members. Then lunch, or light lunch, has quirky named dish-es that are once again testimo-ny to the family touch - My husband’s sandwich (Croatian beef neck, aged 21 day grilled, then baked with cheese & on-ions, served with a bouquet of seasonal salad, tomato car-paccio & gourmet sauce) and My lady’s asparagus risotto (cream risotto with asparagus & fresh herbs) are two of our favourites. And with The Du-brovnik Times you can make your visit to LAJK even more special. Take a copy of The Dubrovnik Times with you to LAJK and you will receive a traditional Dubrovnik des-sert free of charge. We have teamed up with this popular
8Welcome to our beautiful city of Dubrovnik and the first edition of
The Dubrovnik Times for this summer season, our twelfth year, making us the longest running English language news-paper in Croatia. Yes, the swallows are here, the sun is shining and Dubrovnik is glowing with the Adriatic glinting in the background. If you are here for only a few days then make the most of your trip – a few hints – walk the City Walls, go to the island of Lokrum, catch the cable car to the top of the Srđ Mountain and enjoy an “al fresco” coffee on the Stra-dun. Immerse yourself in the Dubrovnik lifestyle, the laid back slightly hedonis-tic way of looking at life. Here coffee is not something that is done on the run, there is no “coffee to go” only coffee to stay and stay. We look forward over the next six months to informing, assisting and listening to your news and views.

Dubrovnik declared as the best destination by cruise ship visitors
Kreuzfahrtpassagiere erklären Dubrovnik zum besten Reiseziel
8Norwegian Cruise Lines conducted a
survey during the first arrival of the Norwe-gian Spirit cruise ship, which was in Dubrovnik on April 17th with about 2,200 passengers on a trip from Valetta to Venice. On this occasion, Dubrovnik became a champion by be-ing declared as the best destination, leaving Ven-ice, Koper, Split, Corfu, Katakolon and Valletta
behind. This is a regular survey of customer sat-isfaction through a ques-tionnaire conducted by Norwegian Cruise Lines on each trip, and includes the rating of each desti-nation according to sev-eral parameters: general tourist offer of destina-tion, bus quality and ex-cursion guides and shut-tle service, cleanliness of destination and general impression.

Klout is a web-site and mobile app that uses so-cial media analytics to rate its users according to online social influence via the “Klout Score”, which is a numerical value be-tween 1 and 100. In determin-ing the user score, Klout meas-
ures the size of a user’s social media network and correlates the content created to measure how other users interact with that content. The biggest Twit-ter influencer in Croatia is the account of the Croatian Nation-al Tourist Board. Second on the list is the Twitter account of the popular Australian blogger, “Chasing the Donkey,” created by Sarah-Jane Begonja. And in third position on the list of Croa-tian Twitter experts is The Du-brovnik Times.

8Constructed between the 12th to 17th centuries the Dubrovnik City Walls
are the most visited attraction in Croatia, with almost 1 million people walking the 2 kilometres last year. Rising up to 25 metres and up to 6 metres thick in places the spec-tacular walls represent many of the values of the city. They were built to look impres-sive, imposing and undefeatable, that plan worked. This defensive system, one of the most beautiful and solid fortress systems on the Mediterranean, is composed of a
range of forts, bastions, casemates, towers and freestanding fortresses. With pano-ramic views over the terracotta roofs of the Old City from the north walls and endless vistas of the Adriatic Sea from the south side you’ll fill your holiday album several times over. There are three entrances onto the walls, from the Stradun, from the Ploce Gate and the St. Ivan Fortress. The flow of visitors is anti-clockwise, be careful, and you can do a full circle or half a circle if you want.

Top tips for swimming IN DUBROVNIK
Sand beaches are rare so be prepared
8Although there are plen-ty of beaches in and
around Dubrovnik there are very, very few that are true sandy beaches. The vast ma-jority of beaches are either light shingle or pebbles. And whilst you will see the locals skip over the pebbles as if they were walking on a plush car-pet tourist’s feet don’t tend to be so hardened. Rubber shoes are a must, especially for small children, if you want to enter the sea with ease. You might stand out a bit from the crowd but scrabbling down the beach like your walking on broken glass will also look a little undignified.
Beware of black spines
8On many beaches, es-pecially isolated ones or
ones with many rocks, you will see small black circles lingering on the seabed. These are sea-urchins and are a sign that the sea water in that lo-cation is very clean. Howev-er there is a downside, if you accidentally tread on you’ll
have a nasty surprise. The urchins are basically balls of black needles that stick out in all directions. If you are un-lucky enough to stand on one the tiny needles will break off into your foot. Asides from be-ing very painful there is no further risk. The best way to extract these needles is to el-evate your foot and to rub it with plenty of olive oil; they will then slowly come out by themselves. Again wearing rubber shoes will protect you.
Gently, gently
8Try to avoid jumping di-rectly into the sea after
spending hours sunbathing. Gently, gently is the golden rule. You need to give your body some time to adjust to the cooler sea tempera-ture. Even though you may be swimming in the middle of the summer when the sea temperature is likely to be 25 degrees Celsius the difference in temperature from the sun is great. Ease yourself in and give yourself time, don’t for-get there are at least two or three cases every year of tour-ists suffering heart attacks in the sea. Why risk it.
Here are three top tips to consider before you hit the beaches in Dubrovnik
With the temperatures soaring and a dip in the refreshing Adriatic Sea always a good idea here is our list of the top five

Die besten Tipps rund ums Schwimmen
Sandstrände sind selten, also seien Sie vorbere-itet

Do DAY TRIPPING
The island of Lokrum, just ten minutes from the Old City, is Dubrovnik’s green oasis. Escape the hustle and bustle of the city and relax in Mediterrean vegetation in an island full of suprises.
Follow us LOKRUM8
09:00 You arrive in Portuc on
Lokrum after a ten-minute boat ride. Head north into the island and follow the cobbled paths to the monastery. To the right of the mon-astery is a small church, the Church of Announcement, and the botani-cal gardens. Walk off your breakfast with a stroll around the gardens.
810:00 Head north out of the gardens
and down to the sea. Follow the signs to the “Dead Sea” a good spot for children but can be crowded. Here there is a small bar for refresh-ment and plenty of opportunities for swimming, ladders are provided.
813:00Lunch time. There are a few dif-
ferent restaurants on the island of-fering everything from a sandwich to a five course meal. Of course it isn’t a bad idea to take a picnic with you and make an al fresco lunch with the family on one of the many grassy areas. One tip – watch out for the wild rabbits and peacocks who might want to take a bite out of your lunch.
815:00Walk off lunch with a stroll
around the island. We recommend following the coastline in a clock-wise direction. The walk will take around 45 minutes at a reasonable pace and at the half way point there are some hidden views over the Old City as well as plenty of small bays to cool off. The path leads back to the Portoc and the ferry home.

The first mention of Lokrum in writing came in 1023, in connection with the founding of the Benedictine abbey and monastery. According to legend Richard the Lion-Heart was cast ashore here after being shipwrecked in 1192 while returning from the Crusades. The vow he made to build a church on the spot where he came ashore should he be saved was kept at least in part. Although he came ashore in Lokrum, at the request of the people of Dubrovnik, he agreed to have the church built in the city itself.

How many gates are there into the Old City and which is the least busy?
8There are three land en-trances into the Old City of
Dubrovnik – Pile, Ploce and Buza. There are also two gates from the old harbour into the Old City. Out of all of the three gates into the city the least busy is the Buza Gate, the north gate. But beware there are plenty of steps down from this gate to the centre of the city, not a problem when enterting, a big-ger problem climbing up 200 or so steps when you leave. This gate, in spite of the steps, is the best option if you want to go on the cable car, as the crow flies it is the shortest distance from the Stradun.

BONUS QUESTIONWhat are the top three sights that you
would recommend to see in Dubrovnik? My top three recommendations to see and do whilst in Dubrovnik are, in no particular
order, the City Walls and the Lovrjenac Fortress, the Dubrovnik Cable Car and the
island of Lokrum.
What came first Cavtat or Dubrovnik? This is a question I am often asked. The answer is that Cavtat was the first. The
picturesque settlement of Cavtat was established as a Greek colony in the 6th
century BC. Cavtat is also called “Ragusa Vecchia,” which means Old Dubrovnik. In fact Dubrovnik, or Ragusa, was formed by
refugees from Cavtat, in the 7th century. Dubrovnik grew at a much faster rate than
its founders and Cavtat soon became under the control of its neighbour across the
Adriatic.
How much was left of the city after the 1667 earthquake?
The 1667 earthquake was one of the darkest days of Dubrovnik’s history. The
aftermath of the earthquake killed half of the population, around 3,000 citizens, and two thirds of the city was destroyed either
in the quake or as a result of the ensuing fires.
was soviel bedeutet wie Altes Dubrovnik.

Quality is more important to us than quantity
8For the first week of a new season of The Du-
brovnik Times we caught up with the Mayor of Du-brovnik, Mato Franković, to discover how prepared the city is for 2018 and what we can look forward to in the coming years. Franković has a history of working in the tourism industry and this experience will help him to guide Dubrovnik through the peaks and troughs of the city’s tourism indus-try. Franković talked cruise
ships, movies and fancy French streets.
Dubrovnik is an extreme-ly popular tourist destina-tion and is well known all over the world. In which direction would you like to see the city’s tourism industry go in the future? The goal of the City of Du-brovnik is to have sustaina-ble tourism. We have to have an eye on the citizens of the city when we talk about tour-ism in the city. At the same
time, we have to improve the tourist offer for the interna-tional tourists that visit Du-brovnik. Basically quality is much more important to us than quantity.
Is all round tourism an option? And if so what is being done to attract more flights in the winter months? 365-day tourism was one of the main themes that the city has been discussing over the past few year, how-ever my personal opinion is that all year round tourism is not a good option. Every des-tination must have a month to two months to relax, to renovate and time to pre-pare for the next season. Du-brovnik still hasn’t reached
the stage where it has the ideal length of tourist sea-son, we still need to extend our season by another month or so. To answer your other question, we have very good announcements for this win-ter period, with a number of international flights arriv-ing. Frankfurt, Istanbul and London will all have direct connections throughout the winter months. We are most interested in attracting short break holidays and for this winter we can announce di-rect flights from Brussels.
What steps have been made to control the cruise ship arrivals this year and to bring a better flow of passengers in the city?Firstly, I need to point out that it was very hard to make any major changes for this year as all of the cruise companies already have con-tracts. However, with did manage to make a deal with Cruise Lines International Association (CLIA) to adjust the arrival and departure times of their members, the cruise companies. Will can see that Dubrovnik will have around nine critical days this season when we will have more than three cruise ships in the city, in fact eight as we have already passed one critical day. By agreeing with cruise companies to move their departure and arrival times we have made helped reduce the large crowds that we have seen in the past. If two cruise ships arrive at the same time then we have

a problem, with this new re-gime this will not happen. For next year we have al-ready agreed many new ar-rangements with compa-nies, which will again help the flow of cruise ship pas-sengers. In fact, Dubrovnik could receive even more cruise ship passen-gers, but the or-ganisation must be seriously im-proved. CLIA wants to be a partner of Du-brovnik and to-gether we can find a better so-lution.
Is Dubrovnik actively seeking more movie pro-ductions after the suc-cess of Game of Thrones, Star Wars and Robin Hood? As a city we are very open to the film industry com-
ing to Dubrovnik in the pre and post sea-
son. We are cur-rently working on a new set of regulations, we are making this in partnership with many of the people who
have been involved in the previous movie produc-tion in the city, which will lay out all the regulations on filming in the city. We want the film industry to come to Dubrovnik, but we would like future films to feature more Dubrovnik. If you take Star Wars and Robin Hood as examples it is difficult to see Du-brovnik in these films. Of course these produc-tions are welcome as well but films that highlight more of Dubrovnik would be ideal. We are current-
ly in discussions with a film producer from Hol-lywood about the possi-bility of making one serial in Dubrovnik. And in this serial Dubrovnik would be shown in its full beau-ty. We hope the new James Bond will also film in Du-brovnik but we have no news on that project yet.
How would you like to see the tourism offer of Dubrovnik improved? What I believe, and I think 90 percent of citizens would agree with me, is that the Stradun should be like the Champs-Ély-sées. High quality bou-tique, a high quality offer, souvenirs yes, but off the Stradun. The City Coun-cil will look at all future tenders for properties on the Stradun with the cri-teria of quality over price. If a high end brand is inter-ested in opening a store on the Stradun then we will look favourably towards them.
Frankfurt, Istanbul and London will all have direct
connections throughout the winter months. We are most
interested in attracting short break holidays
and for this winter we can announce
direct flights from Brussels.

8The Old City of Dubrovnik is a self-contained city, a city
surrounded by ancient stone walls. The Stradun, the main street, runs through the centre of the city like an arrow. It is one of the busiest streets and other side streets run parallel with it. It runs from East to West and is around 300 metres in length. There entrances into the Old City, one at the East – Ploce Gate, one at the West – Pile Gate and to the North – Buza Gate. The busiest is Pile Gate where all the buses arrive, if you are coming by car then the Buza Gate is the easiest...but there are lots of steps. The Stradun is the lowest point in the whole city, eve-rything leads up from this street.

The Republic of Ragusa was a maritime republic centred on the city of Dubrovnik that existed from 1358 to 1808. It reached its commercial peak in the 15th and the 16th centuries, before being conquered by Napoleon’s French Empire and formally annexed by the Napoleonic Kingdom of Italy in 1808. It had a population of about 30,000 people, out of whom 5,000 lived within the city walls. Its motto was “Non bene pro toto libertas venditur auro”, which translated from Latin means “Liberty is not well sold for all the gold”

THE CULTURAL HISTORY MUSEUMis located in the Rector’s Palace, the seat of government and residence of the Rec-tor of the Dubrovnik Republic. In its per-manent display, an endeavour has been made to conjure up the authentic space of historical events, and in the presentation of artworks from the collection, to repre-sent the rich cultural, artistic and histor-ical heritage of the Dubrovnik Republic.
THE ETHNOGRAPHIC MUSEUM is located in the greatest granary of the Republic, Rupe / The Holes, where, in the setting of the authentic historical space, the traditional culture of the Dubrovnik regions is presented.
THE MARITIME MUSEUMis located in Fort St John, and its permanent display presents the famed maritime past of the Dubrovnik area.
THE ARCHAEOLOGICAL MUSEUMhas no permanent display. Its hold-ings cover heterogeneous materials from prehistory to the late Middle Ages. with homemade ravioli, it wasn’t a mistake. The ravi-oli was absolutely excellent, filled with goat’s cheese it made a perfect combina-tion with the monkfish and shrimp. Would I order it again? Yes! And for such a delicate and tasty meal and a high-end service and lo-cation the prices are very reasonable. The menu is short enough to be inter-esting and varied enough to be fun. 8Location, location, lo-cation! This is a res-
taurant with probably one of the best locations in the region, this is seaside din-ing at its prime. Located in front of the boutique hotel – Hotel More – the Restau-rant Tramuntana is an abso-lute gem on the Adriatic Sea. This is one of those restau-rants that from the moment you walk in you feel spoiled. The view is incredible, the service friendly and pro-fessional and the food deli-cious. Even though Lapad is one of the main tourist sub-urbs of the city this restau-rant, and indeed the hotel, feel a little off the beaten track. “Welcome to Tra-
muntana,” said a cheerful waiter. I had already picked out my choice but with some helpful guidance from him I plumped for the monkfish in Adriatic shrimp sauce

the Spaghetti in shrimp and zucchini sauce could be in-teresting. The wine list is just as extensive and fea-tures some classic Croa-tian wines, both white and red as well as some bubbles. The desserts are where the sweet tooth lovers will go mad. The chocolate bomb is an explosion of white choc-olate, milk chocolate, dark chocolate and although it might sound a little rich it is fantastic. In fact, people come from far and wide just to try this dessert, and you can’t blame them. Basical-ly hot chocolate is poured over a ball of white choco-late until it fills the ball and melts it from the inside. You might want to go for a stroll after the explosion of choco-late as I’m pretty sure there are quite a few calories in-side. Crème brûlée, carob cake, Dubrovnik cake with bitter orange…the list goes on and on. And all of these desserts are prices around the 40 Kuna mark, so very reasonable for homemade cakes. All in all, I will be back at Tramuntana, the staff are friendly, the food is well presented, the prices are mid-range and the gen-eral setting is magnificent.

2 cloves of garlic
30g butter
750g cuttlefish
the ink gives you the colour
3dcl fish broth
make your own if possible
1dcl olive oil
a staple of Croatian cuisine
Heat the olive oil in a saucepan. Sauté the finely chopped onion and garlic. Slice the cuttlefish, without using the tentacles, into small pieces and add slowly into the pan. Cook on a medium temperature until lightly golden and then add the rice. When the rice is clear, start adding the broth and cook until you get
a sticky mixture. If the cuttlefish isn’t fresh then you will need to buy ink. Mix the ink with the
vinegar and butter and add into the pan. Season with salt and pepper according to
taste. Heat a tablespoon of olive oil in a separate pan and add the tentacles. Cook for a minute or two and serve with the risotto. You can also add a bit of chopped parsley or Parmesan.

8Traditional songs and dancers from
Croatia from this re-nowned Dubrovnik folklore ensemble. These stunning per-formances are well worth a visit. The colourful swirling and attractive danc-ers really bring a taste of Croatia with them and as they all dance in traditional costumes the per-formances are even more impressive. The Lindo Folklore Ensemble per-forms in the atmospheric Lazareti complex, which is located just east of the historic Old City and the show starts at 9:30 pm.
8The Dubrovnik Symphony Orchestra celebrated its 90 anniversary in 2015. As an important part
of the rich and varied cultural heritage of the city of Dubrovnik and the Republic of Croatia, Dubrovnik Symphony Orchestra continues to perform in the unique ambient of its town such as the most famous Rector’s Palace Atrium, city churches and squares. This concert of film and Latin music is always ex-tremely popular and it always an enjoyable evening.

WHAT TO SEE...Old city of Korcula - The old city is sur-rounded by walls, and the streets are arranged in a herringbone pattern allowing free circulation of air but protecting against strong winds. Korcula is tightly built on a promontory that guards the narrow sound between the island and the mainland. Building outside the walls was forbidden until the 18th century, and the wooden drawbridge was only replaced in 1863. All of Korcula’s narrow streets are stepped with the notable exception of the street running alongside the south-eastern wall. The street is called the Street of Thoughts as one did not have to worry about the steps.

The Croatian part of the Adriatic abounds in at-tractive diving spots - the crystal clear sea is home to stunning underwater reefs, caves, sunken boats and a wealth of unique ma-rine life.
From Istria in the north to Dal-matia in the south, the Adriatic coast is endowed with great windsurfing spots.

Archipelagos stretching along the entire Cro-atian coast provide enough protection for you to find safe harbour almost everywhere.Choosing where to harbour will be your greatest concern as most of the islands are home to beautiful coastal towns that have a rich and fascinating history embracing the vivid and vibrant colours of the sum-mer. The variety and the number of en-chanting coves and marinas of the Croa-tian Adriatic make it impossible to choose the most beautiful one. Nevertheless, it is still a challenge for every yachtsman to find that one bay or marina that leaves them speechless.
