Juicing at Topsham School

When sustainability became an important part of school improvement at The

Topsham School in Devon, orchards, apples and apple juicing came to centre stage.

The seed of the idea started when Justin Vernon, a class teacher and sustainability

co-ordinator at the school, ran a project with his Year 2 class (6-7 year olds) about

harvesting, using local produce and food miles. He decided that a great way of

engaging the children in these topics was to collect, examine and juice local apples.

The project was so successful and popular that it was adopted as a whole school

initiative the following year. The school won some money through their gardening

activities and were able to buy a Vigo 9 Litre Press, Crusher and Pasteuriser. Children

were encouraged to bring apples from home and helped to produce flyers to encourage

other local tree owners to support the school by donating apples for pressing.

Learning about food miles, orchard history, science and literacy were all linked in

with the harvesting of local apples and the press was used to make and taste juice. The

school quickly realised it had access to more apples and juice than it needed purely for

learning; this presented a wonderful opportunity to sell some locally made apple juice

so they also bought a 12 litre Cross Beam Press and Crusher A.

Asked whether the school plans to continue with this work, Mr Vernon replied ‘Yes!

This has been a great project for engaging the children and the local community. In

many ways this is just the tip of the iceberg. We are looking at the possibility of this

working as a social enterprise project and of getting the children involved in orchard

maintenance and using our apples in many different ways. Juicing has been a fantastic

way into sustainability for our school and I hope will be for years to come’.

We are a family owned business, based in Devon. The Vigo Presses team

are keen juice, cider and cordial makers, so we know the ins and outs of the

processes, including what might go wrong (we’ve probably experienced it

ourselves at some point!). We can help you choose the right equipment

What types of apples can you use? Our favourite

is a blend of cooking and dessert apples to give

a flavour-packed balance of tanginess and

sweetness. The apples you choose don’t need to

be top-notch - small blemishes are fine, but you

should reject any apples that you really wouldn’t

want to eat, like the ones with rot. Apples do

need to be ripe so cut one in half to see if the pips

are black and so fully ripe. Size is not important

but small apples will give you less juice. Give your

apples a good wash before you start.

Step by step juice making!

Perfectly pressed juice starts with apples crushed

to the right consistency. Chopping isn’t enough

and liquidising is too much! Our purpose-built

crushers are fun to use and make quick, easy work

of gobbling up apples. Some of our crushers need

elbow-grease, others electricity!

Pick & Sort Crush or Mill

Press & Collect Freeze/Pasteurise & Store

To freeze, line an ex-juice carton with a freezer bag, fill with juice, tie the top andfreeze. This way you can store up to 5 gallons(22 litres) of juice in a cubic foot of freezer space!To pasteuriser, fill glass bottles with juice, restthe caps loosely on top and place in our pasteuriser set at 75˚C for 20 minutes. Whenfinished carefully remove the bottles, tightenthe caps and rest the bottles on their side tocool. Carefully pasteurised juice can keepfor up to 2 years.Alternatively you can pasteurise your juice in Bag in Boxes or 3 litre Beverage Pouches.

Once your crushed apples are in the press, you’reready to go! Our presses work by exertingpressure on the apples, either by turning a handle(traditional press) or harnessing the power ofwater (hydropress). Your juice will trickle outready to be collected! With practice you shouldbe able to do 3 pressings an hour using ourtraditional presses and even more with thehydropress. Freshly pressed juice can turn a little bit brown so you might want to add ascorbic acid (Vitamin C) to keep its originalcolour. The left-over presses pomace canbe fed to livestock or composted.

Vigo 4.5 Litre Worktop Press

Days! Used with the Classic Crusher it’s very efficient and easier to use

than our 12 Litre spindle press – 2 people can easily produce about

13.5 litres (3 gallons) of juice an hour with very little effort. The robust,

cast iron cross beam swings to one side allowing you to crush directly

into the basket of the press. This makes filling and emptying extremely

easy; spindle presses cannot have a crusher positioned on top and with

some other crossbeam designs you need to unscrew the beam and lift it

o ffthe press. Line the press basket with a straining bag (see page 14),

crush directly into the press basket using the Classic Crusher or the

20 Litre Cross Beam Press

press is ideal. You can make a lot of juice really quickly – 2 people, working steadily, can produce

an amazing 24 litres (5½ gallons) an hour! The Classic Crusher or the Economy Crusher fit on

top, allowing the apples to be crushed directly into the press, saving time and effort.

Alternatively, can be used in conjunction with one of our Electric Mills.

Holding up to 18 kg (40 lb) of crushed apples, it can produceabout 8 litres (14 pints) per pressing.

Pressing is easy because of the clever ratchet mechanism.

Larger and chunkier than the 20 litre Press this is a favourite amongst those with a small orchard (or

who have many vines). The press basket holds about 30 kg (66 lbs) of crushed apples. As with the

20 litre Press, the ratchet mechanism and hinged beam makes pressing easy. The 36 litre Press has a

hinged press basket that can be raised with the crank handle and swung to one side to easily get rid of

the pressed pomace. The Classic Crusher will fit on top of the press and is the best choice for hand

milling apples into a press of this size – about 14 litres (25 pints) of juice can be produced per pressing-

in this way. For super fast, high-yield juice production this press is often used in conjunction with

one our Electric Apple Mills.

and placed between wooden racks are made up into a multi-layered “cheese”. The handle is turned

The Orchard Project

We’ve been using Vigo Presses since we were first established back in 2008, back

then we were known as The London Orchard Project, a couple of name changes later

and nearly a decade of working with communities orchard groups across the capital and

beyond we’re now simply know as The Orchard Project.

This national charity inspires and trains communities to create, restore and maintain

orchards for the benefit of people, communities, and the environment. Its project

country’s largest national community orchard charity and we’ve created and restored over

250 community orchards. Running training with adults, in schools, and at orchard heritage

events and numerous orchard enterprises.

From starting out with a 36 litre press and Classic Apple Crusher we’re now at a

commercial scale with a juice and cider production facility in Herne Hill, London. It’s

great to know that as we’ve scaled up Vigo Presses have helped us at every stage of

Bottle, Bag-in-Box Filling & Storage

We love this bit of kit for super speedy and accurate filling of glass

bottles. It’s possible to fill up to 200 bottles per hour – try doing that

by hand! When you’re pasteurising it’s really important to fill to a

consistently accurate level as over-filled bottles can overflow or burst

during the process, this machine does the job perfectly. Supply the

filling machine by gravity from a Speidel fermenter positioned about

30cm above the filler, connect the two, set the fill level and off you go.

to 3 days before it begins to ferment, but if pasteurised can be stored

for anything up to 2 years. Any cider can be pasteurised as a “belt

and braces” way of stopping further fermentation. This is essential

for ciders that are naturally sweet or have had sugar added after

fermentation. Pasteurised cider will keep for up to 12 months.

Pasteurising involves carefully heating the juice or cider to 75°C and

holding at this temperature for 20 minutes. This is difficult to do

using a hob and can result in juice with a cooked apple flavour or juice

that is not properly pasteurised. Make pasteurising easy with our

purpose-built digital pasteuriser which has a thermostat and timer.
