Prince Edward Island‘s mussel industry has become a vital sector of the rural economy and represents 80% of Canadian mussel production.

PEI Mussels are rope-grown and farmed by dedicated mussel farmers who love what they do. Like any farmer, PEI Mussel farmers are the caretakers of their surrounding natural elements that provide them the opportunity to produce safe and healthy food.

GROWING CONDITIONSFarming mussels is a detailed process that requires year-round commitment, knowledge, and patience.

The farmers collect mussel seeds in the wild, sort them, grade them, place them into socks and then bring the mussels back to the water. Farmers maintain their mussels for over a year or so until they‘ve grown to market size. Once harvested, they are stripped from their socks, de-clumped, cleaned, have their beards removed and are visually inspected. All of this is done very gently to protect this live seafood.

MUSSEL HARVESTINGAfter 18 to 24 months, PEI Mussels reach a marketable size of 55-60 mm. At this point harvest-ready long lines can contain upwards of 2 tonnes of mussels each.

IT’S IN OUR BLOODIn Prince Edward Island, lobster fishing is not just a job – it’s a way of life. With the fishery dating back over 150 years, many of our Island’s 1220 Lobster Fishers are 3rd and 4th generation, taking on the trade from their parents and grandparents. Prince Edward Island fishers are passionate about their industry and take great pride in harvesting high-quality, safe and sustainably harvested seafood that is enjoyed by consumers across the globe.

A SUSTAINABLE FISHERYPrince Edward Island’s lobster fishery is Marine Stewardship Council (MSC) certified sustainable. This globally recognized certification means Island fishers take great care to ensure the lobster resource remains healthy for generations to come. Implementing management plans such as trap limits, defined fishing

seasons (May-June and September-October) avoiding the moulting and mating season, measuring each lobster and returning undersized lobsters and lobsters of optimal breeding size back into the ocean are some of the many measures taken to ensure sustainability.

FROM OUR TRAPS TO YOUR TABLEThe waters surrounding our beautiful red province are cold and pristine producing the best lobster in the world. Over 40 million pounds of lobster is harvested each year from our two fishing seasons combined. Our premium product is hard shelled, fully-meated and optimal for global export. Our lobster is exported to over 28 countries and counting. Live and processed product is readily available during and outside of PEI’s two fishing seasons through a local retailer or wholesaler.

Prince Edward Island oysters freshly shucked and served on the half shell are a delicacy in high demand around the world. The flavour of Prince Edward Island oysters reflects the water quality, minerals, salinity and the type of nutrients available in the water. Prince Edward Island has a variety of different bays and coves that provide numerous distinct taste profiles for the oyster connoisseur. Protecting their soft bodies is a hard shell made up of two valves which are joined by a hinge. The majority of oysters have a shell colour that is primarily a mixture of grey, green, white and brown, with a smooth white interior.

GROWING CONDITIONSOysters are harvestedby licensed fishers on commercial beds and

produced by aquaculturists on private leases. Oyster farming on Prince Edward Island originated in the early 1900s and the industry has expanded over the past thirty years. Harvesting methods include the use of rakes, tongs and dredges. After harvesting, oysters are cleaned, graded, packed and then shipped to markets around the world.

OYSTER GRADINGThere are two forms of oysters that are marketed on Prince Edward Island. The traditional oyster measuring more than 76mm in length and the cocktail oyster measuring less than 76mm in length. Oyster grades include choice, standard and commercial.

• Lobster Quiche: Lots of lobster with scallions, PEI aged cheddar and fresh herbs and served with Soleil’s greens.

• Lobster Roll: PEI lobster mixed with mayonnaise, capers and fresh herbs between a toasted brioche bun and served with potato salad and Soleil’s greens.

DINNER MAINS• Thai Green Curry & Basmati Rice with Vegetables: A selection of local and

come-from-away vegetables simmered with green curry in coconut milk. Garnished with peanuts, scallions and cilantro.

• Slow-Cooked Pork Ribs with Mac & Cheese: A half rack of baby back ribs with rosemary, garlic and spices and served with a green salad.

• The Mill Pad Thai: Stir fried with garlic, ginger, vegetables, tofu, cilantro,lemon juice and rise noodle fettucine. Garnished with roasted peanuts in our version of this spicy Thai favorite. Hot, sour, salt and sweet. Add chicken or lobster.

• Roasted Chicken Breast with Mushroom Sherry Sauce: Local Larkin Bros. chicken stuffed with Arborio rise, feta, Parmesan, dried cranberries, almonds and spinach. Accompanied by potatoes and local mixed greens.
