and other high paid professional athletes knowwhat they are doing by using these body-changing drugs," said parent Michael Rosen ofHollywood, who has a son playing football forthe first time this year. "But these young kidswho are steered to these places by coachesand others need to be reached in some way."Ask any high school coach in south Florida

and the thought of their players using PEDs - ofany kind - is sickening, to say the least.

BLOWING THE WHISTLEThis entire scandal began with one disgrun-

tled employee. Porter Fischer, who had beendescribed in some clinic documents as a mar-keting director of Biogeneis, before having anapparent falling-out with clinic founder AnthonyBosch last year, told the Miami New Times in astory last June that Major League Baseball paidhim $5,000 for clinic records he turned over tothe league in its investigation of the clinic'sSouth Florida reach. That got the ball rolling. The very fact that if there hadn't been this big

blow up between Bosch and Fischer, the sadpart is that nobody would have known a thing, and that is something that sticks with manylocal high school coaches."I have been around all kinds of athletes in

every sport at the high school level," said for-mer South Broward head football and wrestlingcoach Allen Held. "To me, when you makethese drugs available to young kids, the dam-age you are doing is unknown."

SOMEONE IS ALWAYS WATCHINGAs the first day of football practice began

across Miami-Dade and Broward Counties, many coaches and players were faced with thereality that now everyone is watching. The daysof trying to sneak around and gain that unfairadvantage are over."I think it's really sad when you have to cut

corners and try to do things illegally," said JohnBattle IV, a senior defensive back at HallandaleHigh. "There are so many of us who work hardto gain that advantage by running, liftingweights, eating the right way."For the record, the 6-2, 190-pound Battle re-

cently committed to attend LSU.

part of what they aredoing at HallandaleFamily Dental Care isalways answeringquestions. Believingthat education goes along way – when mak-ing a life-altering deci-sion by gettingdentures, it’s all aboutthe experience and theprocess that will be theend result.“Recently, we had a

elated that in just 25minutes, having a labon the premises, hewas back in business. What potentially turnsinto a three week or-deal at other dentists –without a lab – was ac-complished in lessthan a half hour.“He wanted to tip

Annual Night Out brings crimeinto focus in all our cities

DentalFrom Page 1A

––––––––––––––––––––––

By Mayor Joy Cooper This past Tuesday, the city held itsAnnual Night Out at GulfstreamPark. The Hallandale Beach PoliceDepartment under the leadership ofChief Dawayne Flournoy did anamazing job putting together an in-formative and interactive evening. It would not have been possiblewithout the many volunteers, citydepartments and community part-ners. All of them deserve a specialthanks especially Crime Watch andCERT our Community EmergencyResponse Team. These citizen vol-unteers work year round to makeour city a safer place.

CRIME PREVENTIONCrime prevention starts with each

individual in our city. I always say ifyou “see something, say some-thing”. We all need to get back towatching out for one another. WhenI was first elected I worked on get-ting our own tip hotline. It is a wayto report suspected problems. 954-457-1404. One for our 4 squaremiles. This is not an emergencynumber. One call can make a differ-ence. It was wonderful to see agreat turnout of residents and fami-lies committed to our community. Aspecial thanks to Gulfstream Parkfor hosting the event and providingrefreshments.

GREAT AMERCAN CANCER PREVENTION STUDYAmerican Cancer Society and

Relay for Life had a table to pro-mote awareness for the Relay andCancer “Prevention Study 3”. Thisnationwide health study can impactgenerations to come and they needvolunteers. The city commission in-vited Dr. Linda Kaplan a few monthsback to present a briefing on thestudy and stress the importance ofvolunteering. The study is crucialfor cancer research. The focus ofthe study is lifestyles and how theyimpact cancer risk.It is very easy to sign up. I did afew months ago. It is totally private. They are looking for men and wom-

en between the ages of 30 and 65.To sign up you can go on line towww.seeuthere.com/cps3enroll foran appointment. The appointmentincludes a brief survey, waist meas-urement and a blood sample. It isthat easy. You will then be con-tacted periodically over the courseof many years as a follow up to thesurvey. For more information youcan call 954-564-2848.

CONSTRUCTION UPDATEA1A construction continues to

create traffic woes. The major de-lays are mainly during peak hours. Many residents have reached out toreport the conditions and sharetheir suggestions. I want to thank allour residents for understanding thatthis inconvenience is only tempo-rary. With that said this does notmean that the city is not trying toimplement remedies to ease thecongestion. Our city staff continues to work

with Broward traffic operations toadjust the traffic lights. The biggestdelays to date have been due to thecrosswalk at the base of the bridge. So many residents have called toask that it be set to blinking. BCThas control over the lights and willnot allow constant blinking. Theyhave agreed to put it on demand. This means it will remain green untilsomeone pushes it to cross. We arealso trying to reduce the length ofthe red. ––––––––––––––––––––––––––––––––––

project is the NEDrainage project. Thisproject is moving for-ward with an added un-foreseen cost. We areworking with our Fed-eral partners at FEMAto increase our grant tooffset the costs. Mount Sinai to Host SkinHealth Awareness DayFlorida has the second highest in-

However, because early detection of skin can-cer can mean the difference betweenlife and death, Mount Sinai MedicalCenter is hosting a Skin HealthAwareness Day to provide freescreenings to the community. The event will take place on Thursday, August 15, from 5 p.m. – 7 p.m. at

the Mount Sinai Comprehensive Cancer Center. Mount Sinai physicians willadminister a complete, non-invasive skin check – a visual inspection ofmoles, freckles, marks and uneven pigmentation. Participants will also receive a complimentary UV sun detector wristband.

FDA APPROVES NON - SURGICAL FACE LIFT

The Lunchtime Face Lift!!

LOOK 10 YEARS YOUNGER

S a f e - A f f o r d a b l e - E f f e c t i v e

AS SEEN ON DR. OZ, DOCTORS TV,RACHAEL RAY, THE VIEW

Plus Vogue, Bazaar And Self Magazine & More

By Stacy Reed

FDA approves non-surgical, “lunchtime face lift and that is good news for those who do not want to go under the knife”. This non-invasive treatment is accomplished in one session, in one hour at a small fraction of the cost of a traditional face lift.

LOOK 10 YEARS YOUNGER

If you are one of the 72 million BabyBoomers out there this procedure maybe just the solution to looking 10 years younger. Regardless of how much time and energy we put into being fit, we just can’t avoid certain changes that come with aging.

Although we have maintained a healthy lifestyle we are all subject to

this process. Unfortunately, there aren’t any exercises that can remedy this aging process. Some say that the sagging skin can add 10 years to our looks.

LIFTS FACE, NECK AND EYEBROWS

Fortunately there is a new facial service that can take 10 to 15 years off your looks.

This unique procedure is done without incisions and will lift and tighten up the face, neck and eyebrows. This new method is safe, affordable and highly effective.

NON-SURGICAL LIFT “ULTHERAPY”

The Ultherapy device works by means of ultrasound (sound waves) to safely penetrate the skin and treat the foundation layer of muscle and tissue that holds your face up. The machine

is unique (only one on the market today) in its ability to reach this foundation layer without creating any heat or feeling on your skin. The ultrasound will be focused and treat the same foundation layer that facelift surgery does without the risk, recovery or downtime. You can go back to work the same day.

HOLLYWOOD STARS OPT FOR “ULTHERAPY”

unlike surgical face lifts. Ultherapy has been seen on Dr. Oz, Doctors TV, Rachael Ray, the View and been featured in Vogue and Bazaar.

COMMUNITY CALENDAR

Page 12: 08.08.13 Sun Times Issue

By Shantescia Hill andD. CarringtonHOLLYWOOD - It’s an

exciting time in Down-town Hollywood. Art ishappening everywhere, giving the area’s “OldFlorida” charm re-newed energy andpedestrian activity.Among many of Holly-wood’s Community Re-development Agency(CRA) initiatives, theDowntown HollywoodMural Project hasthrived since its incep-tion, one year ago inAugust 2012. Weasked Bryan Cahen,CRA Deputy Director, who is also a visualartist, how it all began.Excited about Down-town Hollywood’s revi-talization, his uniqueperspective gives theinside track on how themural program came tobe, and how it fits intothe CRA’s mission topromote economic de-velopment throughpublic art. Why murals?Downtown Holly-

wood’s Mural Projectbegan as a public artprogram to comple-ment Mayor Bober’slive music initiative thatpromotes DowntownHollywood as an ‘artscene.’ The projectalone was designednot only to give the lo-cals and visitors anartsy feel to the area, but also to open up thearea for new invest-ment.

How did the Down-town Hollywood MuralProject launch? Whatwas the process be-hind the scenes?Through the efforts ofthe CRA, the first stepinvolved the City Com-mission amending theCity of Hollywood’sZoning and Land De-velopment Code andthen passing a resolu-tion allowing the CRABoard to create aprocess and Mural Re-view Committee. TheMural Review Commit-tee, under the helm ofJorge Camejo, Execu-tive Director of theCRA, consists of sevenwell-rounded membersthat are tasked with re-viewing applicationsthat are submitted byproperty owners.Working in a city thathas seen many localartists rise to the na-tional stage since thearrival of Art BaselMiami Beach, the CRAtapped South Florida’sbest, including David“Lebo” LeBatard,Ruben Ubiera, JessyNite, Luis Pinto, EddieMendieta, Evoca1,2alas, Michelle Wein-berg, Rob Robi and Ta-tiana Suarez.Suarez, the mural

program’s August artistwho most recently cus-tom-designed runningshoes for Reebok, stated it best: “Streetart and art accessiblein public spaces havethe power to bring

unique beauty and cul-ture to a community. Ibelieve it offers a senseof awakening to peoplethat might not be famil-iar with the art-makingprocess, and createsan opening to gain in-sight into the artist, aswell as the idea andmessage behind theirwork.”In comparing Jessy

Nite’s “Diamonds” - ablack and white stripedesign interspersedwith colorful gem-stones to 2alas’ mural,

which similarly hasbursts of color, onlywith black and whitelines forming the faceof the iconic MonaLisa, the impact cantruly be seen by howeach respective walltaps the aestheticaffinity of different agegroups, while alsobringing these groupstogether in a commonconversation. The success of a

project of this scopecan be measuredagainst the number of

groups on which it hasmade an impact. Fromthe artists – along withthe media attentionand public visibilitythey receive - to thevarious businesses thatnow have a mural suchas Muzart or Gallery2014, the DowntownHollywood Mural Proj-ect is touching individ-uals and businessesalike. With most wallspainted live during themonthly Third SaturdayArtWalk, audienceswho may not have ap-

preciated street art andmurals are challengedinto rethinking theirperceptions of thegenre. They are giventhe opportunity to meetthe artist, share ideasand opinions, and en-gage in a larger dia-logue.

Chronic pain is debilitating, and quickly erodes quality oflife. Now, a new medical tech-nology allows many patientssuffering from back or jointpain to avoid surgery and re-turn to the activities andlifestyles they enjoyed previ-ously. Map PEMF Therapy is a

painless noninvasive methodof delivering a pioneering newbranch of an invisible treat-ment that provides a revolu-tionary cure you were waitingfor. A rapid acceleration which

recovers and restores a pain-free lifestyle. The treatmentworks on all joint problems, tears, sprains, fractures andrepetitive injuries such ascarpel tunnel, arthritis, and os-teoarthritis. What’s truly amaz-ing about MAP PEMF Therapyis that it actually regrows car-tilage as well as increasesbone density. It has been usedby thousands of people, in-cluding many professional ath-letes. MAP PEMF Therapy can help

patients avoid hip and knee re-placements and provide rapidalternative recovery methods. It is now available at the Jointand Muscle Treatement Centerin Hallandale Beach.

HOW IT WORKSIf you have ever held two

magnets in your hands, tried toforce them together, and felt aresistance between them, thenyou have experienced a mag-netic field. PEMF stands forPulsed ElectroMagnetic Fields, which are widely used thesedays to improve circulationand cell metabolism. The bodycan become accustomed tononmoving (or static) magneticfields, which are generally un-able to deeply penetrate thebody. A pulsed electromagneticfield, however, is quite dy-namic, is able to penetrate allthe way through the body, andcreates a cascade of effectswithin the body. The MAPPEMF Therapy uses movingmagnets creating an energywave which changes the wayyour body copes with pain. Theelectrical magnets affect the

nerve cells which are electricalcells and the magnetic fieldsaffect how the nerves fire andquiet them down without usingdrugs increasing circulation inthe area and aid the healing.Inside the MAP there are elec-

trical coils, and when electric-ity passes through there it cre-ates a magnetic field thatmoves through the body whis-pering at 75 trillion cells inyour body going deep into yourbody where sports creams and

heating pads could neverreach such as your spine. Themagnetic field turns on acti-vating ions and charged parti-cles bringing in nutrientsinfluencing things like bloodcell supply opening up blood

cells. You don’t just feel betteryou are better. The cost is far less than sur-

gery, and patients avoid thelong recovery times and possi-ble side effects associatedwith surgery.

(BPT) - Few things inlife are as darling as anewborn's little feet, and most new momstake great joy in count-ing 10 tiny, perfecttoes. But foot healthcan be a source of anx-iety for both new andexpectant mothers, who may wonder aboutthe best ways to carefor their baby's feet, and how to cope withchanges in their ownfeet."Pregnancy creates

many changes in thebody, and can even af-fect the size of awoman's feet," says Dr.Matthew Garoufalis, apodiatrist and presi-dent of the AmericanPodiatric Medical As-sociation (APMA). "Andeven though newbornsaren't walking yet, it'sunderstandable thatmothers may havesome concerns abouthow to best take careof their baby's feet."The discomforts of

pregnancy are com-mon and well-known,ranging from back pain

and frequent bathroomtrips to feet that areboth sore and bigger."It's not at all unusual

for a woman to gain ashoe size while preg-nant," Garoufalis says."Increased weight putsmore pressure on thefoot, the arch flattens abit and the foot elon-gates. Just a quarter-inch increase in footlength is enough toprompt a change inshoe size."While it's probably

impossible to com-pletely avoid foot chal-lenges duringpregnancy, moms-to-be can take steps tominimize them:

* Control weight gain.Added weight is themost likely cause offoot expansion. Doyour best to follow yourobstetrician's guide-lines for how muchweight you should gain

throughout the preg-nancy.* Avoid high heels. Sureyou see celebrities ac-cessorizing their babybumps with stilettos, but a lower heel duringpregnancy will relievepressure on the foot. Also, lower heels willprovide you withgreater stability duringa time when newlygained weight mightthrow off your balance. It's easy to find plentyof pretty, stylish lowerheels - 1 to 2 inches inheight - that will lookand feel great whileyou're pregnant.* Comfort and supportshould be key consid-erations any time youchoose footwear, butthey are even more im-portant for pregnantwomen. With extraweight and pressure onyour feet for ninemonths, you need ashoe that provides sup-

port and cushioning.Avoid thin-soled shoes(including flip-flops andballet flats); look forshoes with thickersoles and plenty ofcushioning inside theshoes. Whatever shoeyou choose, it shouldbend only at the ball ofthe foot, and youshould never be able totwist the sole or bend itanywhere else. While it's common for

women's feet to en-large during pregnancy- and remain that sizeeven after delivery -generally that size in-crease occurs onlywith a first pregnancy. So you shouldn't worrythat your feet will con-tinue to grow with sub-sequent pregnancies.Instead, many newmoms will worry abouttheir new baby's feet."The good news is,

as long as the baby'sfeet are healthy at birthmost newborns won'trequire special care fortheir feet," Garoufalissays. "Caring for yourbaby's feet is much likecaring for the rest ofher body."Don't worry if your

baby's feet look discol-ored or wrinkled oreven have flaky, peel-ing skin when she isborn. After nine monthsin protective fluidwithin the womb, they're bound to look abit different from yours.Your pediatrician willlook for any obvious

abnormalities of yourbaby's feet and legs, and will let you knowwhat to do if he or shefinds some concern.Use baby nail clip-

pers to keep yourchild's toenailstrimmed, cuttingstraight across to pre-vent ingrown toenails.Be sure to thoroughlydry baby's feet after abath, and choose soft,anti-microbial socksthat don't wrinkle orbunch to keep her feetwarm and protected. When she starts to

walk, bare feet are bestinside the house as

she's learning the finerpoints of gettingaround. Outside, puther in a lightweight, flexible shoe made ofnatural materials.

If foot problems runin your family, considerhaving your child ex-amined by a podiatristwhen she begins towalk. He or she can ex-amine your child's feetto ensure they're grow-ing normally. You canfind a podiatrist thatspecializes in pedi-atrics atwww.apma.org.

Tips to Avoid the 'Freshman 15'

(STATEPOINT) Trying to avoid the dreaded "Freshman 15" weight gain? While college is an adjustment, it doesn't have to mean an adjustment inyour pants size.In fact, the Freshman 15 is a myth. Freshman students gain only 2.5 to

3.5 pounds on average during their first year in college, according to a re-cent study published in Social Science Quarterly. But be advised, thesame study finds that college students do gain moderate but steadyweight during and after college. So stay vigilant about diet and exercise.

BE PREPARED"Stress, anxiety and homesickness can all lead to overeating.” warns

registered dietitian nutritionist, Kristi King, spokesperson with the Acad-emy of Nutrition and Dietetics. Before you snack, ask yourself why you’re doing so. If stress, anxiety or

sadness is a factor, take a study break to chat with friends or go on awalk.

DON’T SKIP BREAKFAST––––––––––––––––––––––––––––––––––––––––––––––––––––––––––––––––––––––

(STATEPOINT) -Everyone knows it'simportant to makesure children havebreakfast beforeschool, but collegestudents and busy par-ents also need a doseof morning nutrition.Breakfast, which

refers to “breaking thefast,” is the first mealof the day, usually con-sumed when the bodyhas gone about eightto 10 hours withoutfood. Eating breakfastis often associatedwith a higher nutrient

intake and being asmart way to start theday. When it comes to

college students andparents, far too manyadmit to being a break-fast skipper. Thirty-onemillion adults skipbreakfast, according toa recent National Eat-ing Trends survey. Andmillennials, aged 18-34, are the largest pop-ulation of breakfastskippers.Today, with sched-

ules busier than ever,it’s easy to simply

focus on getting theday started. “Whetheryou’re in college orchasing after school-age kids, it’s easy toforgo breakfast to stayon-schedule,” saysBetsy Frost, Managerat General Mills.“The tradeoff hits

mid-morning with whatpeople are calling the“hangries” -- the feel-ing of being ‘hungry’and ‘angry’ or irrita-ble,” she adds.

With this in mind,Frost and her col-leagues at General

Mills recently unveiledBFAST, a new break-fast shake containing

the nutrition of a bowlof cereal and milk. Ithas eight grams ofprotein, eight grams ofwhole grain (48 gramsrecommended daily)and three grams offiber, and comes inchocolate, vanilla andberry flavors. More in-formation is availableatwww.bfastshake.com.Indeed, more on-

the-go parents andcollege students areopting for easy optionsthey can consume ontheir way to work orclass, or while gettingready to race out thedoor, say food industryexperts.“A drinkable break-

fast shake that doesn’tneed refrigeration fitsinto life no matter whatyou’ve got on yourplate for the day. It’sperfect for busy break-fast skippers,” saysFrost, who is reachingout to young breakfastskippers via Twitterand Instagram. We’ve all heard from

our mothers thatbreakfast is the mostimportant meal of theday and now there isresearch to supportthe benefits of break-

fast:* Breakfast con-

sumers have healthierbody weights: Peoplewho consumed break-fast daily had 20 per-cent lower risk ofdeveloping obesity and19 percent lower riskof developing type 2diabetes, according toa breakfast frequencyand metabolism studyconducted in 2013 bythe University of Min-nesota School of Pub-lic Health.* Breakfast can makeyou healthier: Peopleaged 20-39 who regu-larly had breakfast, in-cluding ready-to-eatcereal, had lower cho-lesterol levels andwere less likely to havehigh blood pressure, compared with break-fast skippers, accord-ing to a studypublished in 2012 byThe Nutrition Society. It’s important to get

all members of yourfamily to have break-fast, no matter if theyare grade schoolersabout to board theschool bus, collegekids racing to their firstclass, or busy momsand dads trying to jug-gle it all.

–––––––––––––––––––––––––––––––––––––––––––––––––"Breakfast wakes up the metabolism and pro-vides energy to the brain and muscles for theday's activities," says King. "People who eatbreakfast tend to eat less throughout the day."King recommends that breakfast be quick and

combine carbohydrates and some protein to helpkeep students feeling full. Good options includewhole-grain toast with peanut butter, a low-fatgranola bar and fruit, or a whole-wheat tortillawith hummus and an apple.

CAFETERIA 101The dining hall can be a friend or foe. There

may be high-calorie foods and oversized por-tions, but most universities provide nutritious op-tions too. Opt for foods that are baked, broiled, steamed, grilled or roasted, while steering clearof foods that are buttered, fried or swimming incream sauce. When filling your plate at the cafeteria, con-

sider following the US Department of Agricul-ture’s MyPlate guidelines.

ALCOHOL"Alcohol is readily available and can pack on

the pounds quickly if you’re not careful," warnsKing. For students over 21, King recommends light

beer and avoiding drinks mixed with regular softdrinks or sugary juices. When drinking, alternatea glass of water between alcoholic beverages. You'll consume less alcohol and fewer calories.

EXERCISERegular exercise pays dividends, helping con-

trol weight, improve one’s mood and controlstress. Many universities have excellent fitness centers

available for students, but you don't have to be-come a gym rat to stay fit. Instead of taking thebus or driving to class, walk or ride your bike.

GET HELPIf you'd like help creating a healthy meal plan,

or want tips for controlling weight, check to see ifyour university offers nutrition counseling serv-ices. Registered dietitian nutritionists are foodand nutrition experts, and they can help you aceyour health goals.More tips to maintain a healthy weight your

freshman year and beyond can be found atwww.eatright.org.Going to college means adjusting to a new

lifestyle. Don’t let the changes get the better ofyour health and wellness.

Breakfast is essential no matter your age• Thirty-one million adults skip breakfast, according to a recent National Eating Trendssurvey

Feel the difference of agreat hair day, every day(BPT) - Every day women are subjected to a mul-

titude of harsh elements that strip the hair of itsnatural beauty, leaving it limp and lifeless.Dove Hair gives women a great hair day by un-

locking a few useful secrets women need to knowin order to beat bad hair days. Celebrity hair stylist,Mark Townsend, offers these three easy tips forwomen to feel the difference of beautiful-lookinghair every day.

Tip No. 1 - The foundation for a great hair daystarts in the showerNearly half of women have a bad hair day whentheir hair feels weighed down. "The foundation toany great hair day starts when women choose amoisturizing shampoo and conditioner that doesnot weigh hair down," says Townsend, whoseclients include many of today's leading Hollywoodstars. He recommends the improved Dove DailyMoisture Shampoo and Conditioner, a unique for-mula containing patented technology that does notweigh hair down with excess residue and deliversup to five times smoother hair, in just one wash.More information on these products can be foundat www.Dove.com.

Tip No. 2 - Your blow dryer can be your hair'sbest friend-----Healthy hair looks shiny because the hair cuticle

lays smooth and is able to reflect light. More than80 percent of women feel more confident on a greathair day compared to a bad one, and one way tokeep hair looking beautifully smooth is knowinghow to properly use a blow dryer. When blow dryingyour hair, make sure that you angle the nozzledownward as you dry from the roots to the endswhich helps keep cuticles flat and reduces damage."Pointing the blow dryer directly onto hair with noangle can cause breakage and frizz," saysTownsend. He also warns against applying the hotair from a blow dryer on one area for too long; "itwill dry out your hair, making it frizzier."

Tip No. 3 - An effortlessly beautiful hair styleA smooth ponytail is a chic way to beat the heat

outside. It will get your hair up and off your shoul-ders, which can often cause discomfort in hot tem-peratures. One of Townsend's biggest style secretsis perfecting a frizz-free ponytail. First, spray areusable mascara wand with extra hold hairspray. Then, comb the wand gently over the hairline oncethe ponytail is set, especially in front of the ears, tosmooth the little hairs into the style. "I also like tospray hairspray directly on my hands and run themover the hair that is already pulled back," saysTownsend. "This tip ensures pesky flyaways aresmooth, leaving hair looking polished and beauti-ful."Now through September 30, 2013, women can visit

Dove.com/GreatHairAffair to show-off their great hair dayfor a chance to win thousands of prizes.

decades of culinarytraining and service,Chef Lenny B. brings hiswell-rounded roots tothe area – after years ofperfecting nearly everycuisine imaginable.“Our menus are very

exciting and will rangefrom Italian and Frenchto extensive Latin foodsfrom Cuba and Ar-gentina – to name just afew,” Chef Lenny Bpointed out. “We are giv-ing our residents thefreshest and the besttasting meals they willget anywhere.”From running and

to use so many freshherbs and spices since I

started in my familybusiness at the age of13, it has all come to-gether in the dishes Iprepare,” he said. “It isimportant to understandthat no salt and low saltare a way of life. It’s upto the chef to take thatnormally bland food andturn it into somethingtasty and delicious.”In his many stops

along the way, ChefLenny B has found that if

you prepare foods -using natural ingredients- the taste, color and ap-peal of the dish will bethe selling point. Many ofthe residents have al-ready started to see amajor difference and va-riety of the foods theyare now eating. From Kosher meals to

other dishes that requirespecial attention, ChefLenny B and his staff arealways ready for any

(BPT) - Twice the pro-tein, half the carbs, 20percent of your daily cal-cium requirement andprobiotic cultures thathelp keep digestive tractshappy - what's not to loveabout Greek yogurt? Forsome who resist makingthe switch from regular toGreek yogurt, it boilsdown to taste. Some peo-ple find the strong flavorof this nutritional power-house to be a bit ... well, too strong!"Even if you're not a fan

of Greek yogurt's distinc-tive flavor for snacking orbreakfast purposes, youcan still tap the healthbenefits of this populardairy product," says Lau-rie McNamara, author ofthe blog Simply Scratch."You can incorporateGreek yogurt into a varietyof recipes by using it toreplace less healthful op-tions like sour cream andmayo, or less nutritionallypowerful ones like regularyogurt."The approaching holi-

days are a perfect oppor-tunity to beginincorporating Greek yo-

gurt into your family'sdiets - and your entertain-ing menus. It's possible toreap the health benefits ofthis super food in everycourse of your holidaymeals.

APPETIZERSWhat holiday buffet - or

other occasion, for thatmatter - would be com-plete without a veggie trayand dip? Store-boughtdips are often loaded withpreservatives, sugar, saltand/or fatty ingredients.Making your own is agreat way to reduce fatand calories, amp up nu-tritional value and ensurefresh, organic flavor.McNamara has part-

nered with Simply Or-ganic, purveyors of qualityorganic seasonings, tocreate ideas for servingSimply Organic Greek Yo-gurt Dip Mixes. Dips madewith Greek yogurt addzest to vegetable platters, and can be a healthiercomplIment to moredecadent treats like chipsand pretzels. The dip seasonings can

also pair with Greek yo-

gurt in other appetizers, too. "If a recipe calls forregular yogurt or sourcream, you can substituteGreek yogurt," McNamarasays.Try this recipe for a fla-

vorful dish that can workon an hors d'oeuvrestable or as an appetizeron a buffet.

SPINACH AND BACON-STUFFED MUSHROOMS1 package-(16 ounces)baby portabella mush-rooms (about 20 baby bel-las) 1 1/4 cups plain nonfatGreek yogurt- 4 tablespoons-turkeybacon, cooked and crum-bled (about four slices) 4 tablespoons-finelyshredded 2 percent milkColby Jack cheese 1 package-Simply OrganicZesty Spinach Dip Mix 1 1/2 teaspoons-finebread crumbs

Preheat oven to 350 de-grees and spray a largeglass baking dish withnonstick cooking spray.Remove stems and

scrape out gills of mush-rooms with a spoon, beingcareful not to puncturecaps of mushrooms. In a large bowl, combine

yogurt, bacon, cheeseand dip mix until evenlymixed. Stuff mushroom

caps with yogurt mixture, and sprinkle with breadcrumbs.Place mushroom caps in

baking dish and bake forabout 20 minutes, untilthe filling is hot and bub-bly.

ENTREES AND SIDESThink of all the dishes

that call for sour cream, milk, heavy cream or reg-ular plain yogurt. Frommashed potatoes andchicken salad to soupsand marinades for meats,Greek yogurt can replacethose less healthful ingre-dients, allowing you toreap its health benefitswhile making the flavorsubtle (or even unde-tectable) and enjoyable. And you don't need toconfine yourself to Greekrecipes; Greek yogurtworks regardless of adish's ethnic origins. Here's a recipe from

Simply Organic in whichGreek yogurt cuts the fatin a traditional Hungarianclassic:

SMOKEY CHICKEN PAPRIKASH2 -8-ounce chicken

breasts, skinless andboneless 2 tablespoons-ground flaxseed 1 tablespoon-all-purposeflour

1/4 teaspoon-smoked salt 1/8 teaspoon-cayenne 1/4 teaspoon-finelyground black pepper 1 tablespoon-smoked pa-prika, divided 1/2 teaspoon-garlic gran-ules 1/2 -white onion, chopped 1/2 -red bell pepper,chopped 1/2 -yellow bell pepper,chopped 1/2 cup-sliced mush-rooms 1 -tomato, chopped 1/2 cup-chicken broth(made with chicken fla-vored broth powder) 3/4 cup-non-fat plainGreek yogurt 1/2 teaspoon-lemon juice 1/4 teaspoon-cornstarch

Preheat oven to 375 de-grees and spray an 11-by-7-inch baking dish withnon-stick spray.Combine ground flaxseed, flour, salt, cayenne, black pepper, 1 teaspoonsmoked paprika and gar-lic granules in a smallbowl.Dredge chicken pieces indry mixture and place innon-stick pan. Surroundchicken breasts withonion, red bell pepper, yel-low bell pepper, mush-rooms and tomato. Pourchicken broth overchicken and vegetables, then evenly sprinkle veg-

etables and chicken withremaining smoked pa-prika.Cover baking dish withaluminum foil and bakefor about 30 to 35 minutesor until done. Chicken'sinternal temperatureshould be at least 165 de-grees when done.Combine Greek yogurtand lemon juice in asaucepan. In a small bowl, whisk together cornstarchand 1/2 cup liquid mixturefrom baking dish. Stir intoyogurt and lemon juiceand cook, stirring con-stantly, until slightly thick-ened, about five minutes.Pour yogurt sauce overchicken and vegetables.

DESSERTSCakes, bread puddings,

pies - even cookies -practically any holidaydessert can work withGreek yogurt as an ingre-dient. Vegetarians and ve-gans have been replacingeggs with regular yogurtfor years, and Greek yo-gurt is an even healthiersubstitution. Generally, ifyour recipe calls for a cupof creme fraiche, sourcream, mayonnaise orcream cheese, you cansubstitute a cup of Greekyogurt. It's also a great-tasting, creamy andhealthier alternative forhomemade frozen yogurt.
