Before steppinginto the kitchen to makeSour Cream Raisin Pie,we decided to telephoneP.J. Hamel at the KingArthur flour company, for pie baking tips.
Our primary in-terest was to talk aboutSour Cream Raisin Pie,an adaptation of thePennsylvania DutchRaisin Pie called Fu-neral Pie, served at fu-nerals, and a Mid-western custard pie withsour cream. The conversationquickly turned to makingflaky crusts, a perennialproblem for even themost experienced homebakers.
To make a flakycrust, it helps to under-stand what happenswhen a pie bakes. Thefat, which is cut into theflour, coats the flour. Asthe fat melts, the flourforms flakes or layers, and the spaces left bythe melted fat separatethe flakes. To preventthe fat from melting, thefat should be cold. Cut-ting the fat into pea-sizepieces and chilling the
crust be-fore bakingalso pro-mote flaki-ness.
Hamel recom-mends adding theamount of water calledfor and an extra table-spoon. If the pastry istoo moist, the flour onthe rolling board will ab-sorb the extra liquid.Hamel has one last tip.Don’t cut into a hot pie,she says. It will be “alavaflow.” Sour

Protecting your home from burglars during the holidays(NewsUSA) -
Ah, yes, theholidays. A time forcelebrating with fam-ily, ripping into pres-ents ... and gettingburglarized?
Apparently so.According to the FBI,nearly 400,000 bur-glaries occur in theU.S. during Novemberand December eachyear. And the reasonfor that should be asobvious as the beardson "Duck Dynasty's"male stars' faces:Those are the monthswhen so many of usare either away fromhome -- whether onvacation or getting to-gether with lovedones -- or busy accu-mulating piles of shinynew gifts.
"Burglars areopportunists lookingfor a score, and theholidays are a perfecttime for it," saysRobert Siciliano, a se-curity expert.
Sowhat canyou do tokeepfrombeingone ofthe400,000?Read on.
*ThePerils of Social Media.Admit it: You laughedat the stupidity ofgang members outedin the news for brag-ging about theircrimes on Facebookand Twitter. So whyare you sharing yourtravel plans on suchsites for all the worldto see? Duh.
*Lighting.High-wattage exteriorlighting, set on timersalong with indoorlamps, help neighborsspot suspicious activ-ity at night while giv-ing your home what
Siciliano calls "thatlived-in look." Addingmotion sensors, though, has a down-side: "They some-times 'ghost' and givethe impression thatsomeone is therewhen he isn't," hesays.
*Home Secu-rity. Burglars, who'vebeen known to caseneighborhoods inbroad daylightdressed as contrac-tors in order to fit in,actually jiggle door-knobs in search ofcheap, breakablelocks. So it's essentialto protect your home'smain point of entry, advises Siciliano, witha strong one like thenew TouchscreenDeadbolt from Schlage(www.schlage.com),the Indiana-based firmthat's been creatingtechnologically ad-vanced security prod-ucts for more than 90years.
"I like it be-cause it offers thehighest-grade resi-dential security avail-
able, has a built-inalarm, anti-pick shieldand is even easyenough to install your-self."
*Garage DoorOpeners. Unplugthem when traveling, and then repeat thesewords: A powerlessGDO can't be hacked
with a universal re-mote.
Finally, aboutthose "shiny newgifts." Yes, the hugebox your new plasmaTV, say, came in is aneyesore you can't waitto put out on the curbwith the trash. Butguess what attracts
the attention of crookson their post-holidayprowls?
"The best thingto do," says Siciliano,"is cut the box up andput it in a big blacktrash bag. That way, they don't know youhave a plasma TV."
This Menfro silt loam soil has been farmed by the same tenant over 60 years using a corn-soybean
rotation. It is terraced with grassed water ways and border lines that are used for hay.
Fertility and lime levels are current. Trophy deer, turkey, quail habitat are evident as well as a well
stocked catfish pond.
There are many walnut trees ready to harvest. The last harvest was over 25 years ago.
FSA info calls for 124A farmland and 85.7A cropland. More information on website when available..
The sellers absolutely intend to sell this land at auction but do reserve the right to refuse the last bid.
A sign will be along Highway F. Inspect at your convenience or call Billy Summers for appointment.
Terms will be 10% in escrow day of auction. Balance in 30 days or less. Full possession at closing or
as soon as 2013 crops are harvested, Sellers will provide title insurance and pay all 2013 real estate
taxes. Taxes are $462.80

(NewsUSA) - While clearly
passionate about theirfeline companions, anew national survey byMissouri-based RoyalCanin found that own-ers are lacking concernfor their cat's health.
"We under-stand the strong bondpet owners have withtheir cats, and one ofthe best ways to en-hance that relationshipis to learn more aboutthem," says Dr. BrentMayabb, veterinarianand director of corpo-
rate affairs for the pre-mium pet food com-pany.
"Understandinga cat's physical andphysiological traits iscritical to not only find-ing the right fit for yourfamily, but also indoing what's best forthe cat's well-beingonce they are broughthome."
Althoughhousehold pet catsoutnumber dogs by 12million in the U.S., howmuch do cat ownersreally know about their
furry felines? Based onthe survey, not asmuch as they should. The following facts willhelp owners better un-derstand their four-legged friends:
*Low mainte-nance doesn't meanlow energy. Cats aretypically selected be-cause, unlike dogs, they don't have to bewalked or taken out-side, and can be leftalone for hours at atime. While felines dorest a majority of theday (up to 16 hours),
they also spend timehunting and hiding.Creating a space thatincludes a place toclimb and scratch orhiding food in toysaround the house to letyour cat "hunt" will helpher overall health andhappiness.
*A healthy catis a happy cat. Morethan 70 percent ofowners surveyed saidthey don't considertheir cat's health whenselecting food for theirpet. Other factors thatshould be considered
when choosing a foodare: a cat's breed, itsweight or its age.
*Textureshould trump flavor. When choosing a food, cat owners tend to relyon taste when it comesto selection. In fact, 15percent of owners ad-mitted to trying theircat's food. In truth, catshave a weak sense oftaste; aroma and tex-ture play a much big-ger role in how catschoose their food.
