Before steppinginto the kitchen to makeSour Cream Raisin Pie,we decided to telephoneP.J. Hamel at the KingArthur flour company,for pie baking tips.

Our primary in-terest was to talk aboutSour Cream Raisin Pie,an adaptation of thePennsylvania DutchRaisin Pie called Fu-neral Pie, served at fu-nerals, and a Mid-western custard pie withsour cream. The conversationquickly turned to makingflaky crusts, a perennialproblem for even themost experienced homebakers.

To make a flakycrust, it helps to under-stand what happenswhen a pie bakes. Thefat, which is cut into theflour, coats the flour. Asthe fat melts, the flourforms flakes or layers,and the spaces left bythe melted fat separatethe flakes. To preventthe fat from melting, thefat should be cold. Cut-ting the fat into pea-sizepieces and chilling the

crust be-fore bakingalso pro-mote flaki-ness.

Hamel recom-mends adding theamount of water calledfor and an extra table-spoon. If the pastry istoo moist, the flour onthe rolling board will ab-sorb the extra liquid.Hamel has one last tip.Don’t cut into a hot pie,she says. It will be “alavaflow.” Sour

Cream Raisin Pie

Piecrust: 1 1/4 C all-purpose flour 1/2 t salt 1/4 C cold unsalted

butter, cut into pieces

1/4 C vegetable short-ening, at room

temperature, cut into pieces

3 to 4 T ice water 3/4 t cider vinegar

Filling: 2 eggs 1 C sugar 1 t grated orange rind 1/8 t ground nutmeg 2 C sour cream 1 1/2 C raisins, divided

1. To prepare piecrust,

stir together flour andsalt in a large bowl. Addcold butter pieces andwork into flour. Addshortening and work intoflour. Combine ice waterand vinegar in a smallcup. Add to flour mix-ture, about 1 T at a time,while tossing with a fork.Continue mixing untildough just gathers into aball. Flatten into a 1-inch-thick disk, wraptightly in plastic wrap,and refrigerate about 2hours. Roll dough on alightly floured surfaceinto an 11-inch circleand fit into a 9-inch pieplate. Crimp edges. 2. Preheat oven to 375F.2. To prepare filling,beat eggs in a mediumbowl; brush rim of piecrust with 1 t. beatenegg. To remaining egg,add sugar, orange rind,nutmeg and sour cream;beat until evenlyblended. 3. Sprinkle 1 C raisinsover bottom of piecrust;pour sour cream mixtureover top. Sprinkle re-maining 1/2 C raisins ontop. Bake 30 minutes oruntil filling is set. The fill-ing puffs up as it bakesand settles as it cools.Let cool on a wire rack.Serves 8. Per serving: 260 calo-ries, 23g fat, 6g prot.,57g carbs., 2g fiber,190mg sodium
