Thanksgiving feast, right? Are you full yet? Because Isure am! Since when has Thanksgiving gone frombeing a day when we give thanks for all that we haveto a day when we eat everything in sight? And I meaneverything! In fact, studies have shown that peoplecan consume anywhere from 3,000 to 4,500 calorieson Thanksgiving Day alone.
And while I’m all for pigging out onThanksgiving, now that it’s three days after the fact,I suggest that we forgo the leftovers for a bit andlive off of ... liver. Why, of course! OK, so it mightnot be the most appetizing for many, and while Iknow you’d much rather reach for anotherslice of pumpkin pie, liver can be very ono-licious and somewhat low in calories withhealthy amounts of protein and fat. Livercan be baked, boiled, broiled, fried andstir-fried, and well-known examplesinclude liver pate, foie gras and choppedliver, to name a few.
Yet, this week, I decided to gobeyond the norm and liven things upwith alluring liver creations at the fol-lowing Ono, You Know establishments.Believe me, give it a try — there’s somuch to “liver” for!

“We’ve lowered our prices a bit,so our buffet is a lot more affordablefor locals,” says Makino Chayapresident Jo Makino. “What we’reselling is value. We always have thesame good, high-quality food, butnow it’s at a better price. Peopleusually come here to celebrate aspecial occasion, and these days itcan be hard to pay a lot of moneyfor good food. We’re a local restau-rant and we cater to a lot of localpeople, so we don’t want to chargethem an arm and a leg for theirmeals. Plus, people are spending alot of money on Christmas gifts thistime of year, too.”
According to general manager ofoperations, Chris Mitchell, seafoodis the establishment’s specialty.
“Snow crab, lobster, miso butter-fish — they’re all a big hit, althoughthe higher-quality items reallystand out during dinnertime.”

“We’ve hosted quite a few companyChristmas parties, and we recommendscheduling your party on a weekdaybecause it’s always a mad-house on theweekends. You can book out the entire320-seat restaurant if you want.”
“On Christmas Day we also will beoffering prime rib as part of our buffet,along with a much more variedseafood selection,” Makino adds.

There seems to be aRenaissance happening inthe world of food on Oahu
these days — and it’s somethingthat should make non meat-eaters … well, happy.
More and more eateries thesedays are finding that their vege-tarian dishes are becoming quitepopular, as customers are choos-ing to forgo or cut down on eat-ing meat in pursuit of a healthierdiet.
At Happy Day ChineseRestaurant, owner Lisa Lumadmits to noticing the trend, andis more than happy to recom-mend two dishes to Dining Out
readers.Jai ($9.95), also known
as monk’s food, which istypically eaten in obser-vance of Chinese NewYear, is delightfully satis-fying any time of year.Completely vegetarian andchock-full of all those good-for-you vegetables, it’s a deliciousconcoction of long rice, beancurd, carrots, black and goldenmushrooms, black fungus,Chinese peas, won bok, tofu skinand more. It’s so flavorful,there’s no need to wait for thenew year to celebrate this tradi-tional dish.
In addition, Lum says MixedVegetables with Two Mushrooms($9.95) is a big hit with vegetari-ans. The crisp-tender vegetables— choi sum, broccoli, won bok,Chinese peas, baby corn and car-rots — are stir-fried with blackand straw mushrooms in a lightsauce. This dish is typically pre-pared with oyster sauce, but notto worry. Lum says to just askand they’ll use a shoyu-basedsauce instead.
So take advantage of the grow-ing popularity of vegetarian cui-sine, and make sure to appreciaterestaurants like Happy Day thatwill prepare dishes to accommo-date your tastes and dietaryneeds with a smile.

It seems that gravy is ever-popular on Thanksgiving andthroughout the New Year.
Continuing on this gravy train Ipresent one of Hawaii’s mostpopular known dishes, which, ofcourse, is oozing with gravy.Loco Moco Drive-Inn offers ahomemade take on the locomoco.
Staying away from gravy pow-ders or any ingredients thatinclude MSG, Loco Moco Drive-Inn’s Loco Moco ($7.95) is madewith in-house gravy preparedfrom a chicken and vegetablebroth.
“We use a whole pot of chick-
en and vegetables and boil it forabout three hours straight tocome up with a portion of ourbroth and soup. We then use thatto come up with our gravy,” saysLoco Moco Drive-Inn managerMike Zhu.
The restaurant’s hamburgerpatties also are made fromscratch and in-house ingredients.
When brothers Mike andSheng Zhu took over theMoanalua Shopping Center LocoMoco Drive-Inn location twoyears ago, they wanted to con-centrate on island barbecuefavorites.
“We give out big portions for
reasonable prices. We have sucha variety of selections. Myfavorite is the short ribs, whichcomes with two scoops of riceand mac salad,” says Mike.

Locating a good place for pupusis a mission worth taking part.How you decide which to
patron is up to you and recommenda-tions can come from anywhere. Even here, of all places. One sure way to eliminatesome of the guess work is to follow the crowds. It’s not scientific, but it works. Onesuch popular place is Gyu-Kaku at Windward Mall, which has seen a rise of 25 per-cent in customers from last year. The Japanese restaurant with a local flair offers upa myriad of appetizers, or main entrees used as appetizers, to keep the first-timediner or experienced eater satisfied.
A good way to start is with Crispy Smoked Pork Tacos ($4.25, $3.75 happyhour). The pork is slow smoked daily and placd into fried won ton skins. The miniAsian taco is then layered with a yuzu pico de gallo and topped with a misoyakireduction sauce.
If you’re not very familiar with Japanese cuisine,but still need something tasty and quick, GarlicChicken Wings ($8.95) may be just want you want.Tender wings are lightly dusted in flour and deep-fried till crispy. The bird is then tossed with aKorean/Thai sauce that has a tangy, garlic flavorwith just a hint of heat.
There is not likely four better words in the world ofpupus than Kobe Trip Tip Steak ($13.95, $11.95happy hour). Four ounces of hand-sliced Kobe beefis served ready to grill. A quick minute on both sidesresults in the soft, tender appetizer that just drips withflavor. Add the coarse Japanese sea salt and enjoy.
With a nod to the holidays and the recognition thatpupus can easily be found on the dessert menu,
Pumpkin Spice Bundt Cake($8.95) is a good way to liter-ally get your cake and eat ittoo. The shareable bundt cakeis topped with ginger spicedwhipped cream and servedwith a caramel swirl icecream created byTropolicious just for theoccassion. Since it is the hol-iday season, treat yourself— begin with the cake.

In addition to a constantly changingassortment of entrees and offeringsselected and created by Nakata and hishighly skilled staff, the buffet also fea-tures regular favorites including pastries
and other baked delights, a stunningisland fruit selection, an omelet and eggstation with all the toppings and fillingsone could think of and, of course, a waf-fle station complete with all the fixings.
For dessert, the hotel’s bake shop pro-vides a swath of colorful, tasty treatsincluding Pink Haupia Lollipops, BreadPudding, Marshmallows and Fruit, andall sorts of cakes and pies. Handcraftedcocktails and refreshing drinks are avail-able from the nearby Mai Tai Bar, includ-ing the flavorful Mai Tais made fromfreshly squeezed juices.
“The desserts from our bake shop aredone so well, they’re unbelievably deli-cious,” Hamasaki says. “And, add in thisocean view of Diamond Head and ouravailable beachfront cabanas. What betterplace to have brunch?”
To sweeten the deal even further, com-plimentary parking is available for up tofour hours, both in the Sheraton Waikikigarage as well as with the resort’s valetparking service.
“Everybody needs to try it, it’s a reallywell-rounded buffet,” says Hamasaki.“You can’t go wrong, and you definitelyget your money’s worth. And, with theparking included, why not give it a try?”

“This recipe comes from my girlfriend who is from Thailand, andshe taught me how to make it,” Wong explains. “It’s really good, andvery flavorful. Once you try it, you will love it.”
And Osso Bucco ($15.95) is another special item not to be missed.The dish features a braised veal shank bathed in a red wine and tomatosauce and served over pasta.
Wong says that customers should also stay tuned for a forthcominglist of Christmas and New Years specials.
To gather ideas for menu additions, the Wongs occasionally ventureto Hong Kong for some culinary inspiration.
“I went back to Hong Kong in March and came back with moreideas and ingredients,” Wong says.
Within the next few months, Anytime Cafe also is looking to start apromotion called Green Monday — which will provide customerswith a discount on vegetarian dishes on Monday — a concept that ispopular in Hong Kong.

After fielding multiple requestsfrom his growing customer baseover the years, the owner and chefof the eatery, located convenientlyon South King Street, has expandedthe menu, which now features morethan 80 Japanese-inspired dishes.Chinpei Ramen offers a host ofitems made from scratch daily, andfeatures all-natural soups and brothsin its ramen selections. The restaurantalso has multiple vegetarian options,and its dishes are free of MSG.
Hashigami was influenced by hisfather, who operated a restaurant inJapan for 55 years, and after itclosed, Hashigami took over theoperation, moving it to Hawaii andrenaming the eatery to forge his ownidentity. He spent 15 years workingat the restaurant in Japan, learning awide range of cooking and preparationtechniques that are behind the qualityofferings on Chinpei Ramen’s ever-expanding and affordable menu.
One of the dishes that Hashigamichose for the menu because of itspopularity in Japan is Nira and Liver($10.25 with rice, $12.75 with
Teishoku, $8.25 for side order). Thechives and liver are stir-fried withbean sprouts to incorporate all theflavors of the colorful dish that alsocan be ordered as an appetizer.
For first-time customers, Hashigamirecommends Spicy Char Siu Ramen($10.60 small, $11.40 medium, $12.60large), which features large piecesof sweet, moist pork in a hearty, fla-vorful broth. Vegetable-Yasai Ramen($9.80 small, $10.60 medium, $11.80large) is chock full of fresh seasonalvegetables, including shiitake mush-rooms, carrots, corn, Chinese cabbage,bok choy, bean sprouts and greenonion.
“The miso is strong and spicy,” hesays, “and a lot of people order thegyoza, too.”
Gyoza ($1 per piece) is availablein multiple quantities, and the freshlymade pot stickers are delivered pipinghot to the table. Vegetable Gyoza($1.10 per piece) also is available inmultiple quantities, and provides ahealthier alternative to its meat-filledcounterpart. Another popular pupuitem is Shu Mai ($1.20 per piece),
and like Gyoza, the pork hash isavailable in an array of quantities tosatiate any appetite. Hashigami rec-ommends his homemade sesame oiland chili pepper dipping sauce, whichadds a flavorful kick to the meal.
Chinpei Ramen also offers a hostof side dishes, including Fried Ricewith Shrimp ($7) and Spicy ShoyuPickled Cucumber ($2.20). The afore-mentioned items pair well with theeatery’s large selection of domesticand imported beer, sake and shochu.Happy hour specials are availablefrom 5 to 7 p.m. on weekdays and 4to 7 p.m. Saturdays and Sundays.
The restaurant is open daily, andserves both lunch and dinner everyday except Monday, when it opensfor dinner at 5 p.m. Upon visiting,diners are encouraged to offer upideas for new menu items, and oneshould not be surprised if Hashigamiends up adding the dishes to his col-lection so that others may enjoythem, too.
