    LI NI U Bng thnh phn thc phm (Food Composition Table) l mt trong nhng u ra nghin cu quan trng trong lnh vc Khoa hc v thc phm (Food science). Bng thnh phn thc phm l mt cng c khng th thiu trong nghin cu v dinh dng, c bit l cc nghin cu v khu phn n ung, dch t hc dinh dng v ch dinh dng-tit ch trong lm sng v n iu tr cho bnh nhn. Ngy nay, Bng thnh phn thc phm cn c s dng rng ri trong lnh vc xy dng chnh sch, lp k hoch v dinh dng, m bo an ninh thc phm cp quc gia v gia nh nhm p ng nhu cu dinh dng, t c k hoch pht trin sn xut thc phm ph hp. y cng l ti liu gc phc v ging dy, nghin cu v trin khai cng tc gio dc dinh dng cho cng ng, cho ngi tiu dng trong vic la chn thc phm ph hp vi tnh hnh sc kho.

    Trong iu kin hi nhp hin nay vi mt th trng thc phm Vit nam ngy cng a dng, nhiu i hi thng tin khng ch l cc cht dinh dng v phi dinh dng trong thc phm m cn c thng tin v cc cht chng oxy ha, cc hp cht c hot tnh sinh hc ng vai tr quan trng bo v, nng cao sc kho v phng chng bnh tt. Mt khc, do s giao lu trn th trng thc phm nhp khu ang din ra mnh m i hi cc thng tin cp nht v chi tit hn.

    Chnh v vy, Vin Dinh dng tin hnh nghin cu trong nhiu nm v phn tch thnh phn thc phm Vit nam, cp nht, b sung v xut bn Bng thnh phn thc phm Vit nam ln ny. y cng l cng trnh k tha, tip thu v nng cao hon thin t cc cng trnh Bng thnh phn ho hc thc n Vit Nam xut bn nm 1972, v tip theo l Bng thnh phn dinh dng thc phm Vit Nam xut bn nm 2000. Ln bin son ny, chng ti cp nht rt nhiu v thnh phn cc cht sinh nng lng, cc acid amin, acid bo, acid folic, cc loi ng, hm lng khong, cht x, vi khong, vitamin v c bit l thnh phn hp cht ho thc vt trong thc phm hin c trn th trng Vit Nam. Bn cnh , ln bin son ny, chng ti c gng cu trc bng thnh phn thc phm sao cho tin tra cu hn v p ng cc thng tin nhiu lnh vc m bn c mong mun.

    Do thi gian v iu kin thc t cn hn ch, chc chn khng trnh khi cc thiu st. Chng ti mong cc ng nghip v cc bn c gp ln xut bn sau c hon thin, p ng ngy cng tt hn nhu cu ca cng tc nghin cu, ging dy v ng dng trong dinh dng hp l, nng cao sc kho v nng cao cht lng cuc sng.

    1. TM QUAN TRNG CA BNG THNH PHN THC PHM

    Nhiu nghin cu trong nc v trn th gii khng nh mi lin quan cht ch gia thc phm v sc kho ngi tiu dng. Thnh phn thc phm, thi quen n ung c nh hng ln ti s pht trin th lc, tr tu ca tr em v s xut hin hoc phng nga mt s bnh mn tnh ca ngi ln nh bnh tim mch, i ng, bo ph, ri lon chuyn ha lipid. Khi i sng c ci thin, ngun thc phm v cc sn phm ch bin ngy cng phong ph th nhu cu tm hiu v thnh phn thc phm tr nn cn thit hn. Gn y, cc tin b mi trong nghin cu khoa hc dinh dng, khoa hc thc phm tng bc tr li nhng b n ca thc n, cung cp cc cn c xy dng mt ch n cn i, hp l, y cht dinh dng duy tr sc khe v phng chng bnh tt. Mt s thnh phn c hot tnh sinh hc trong thc phm nh cc acid bo khng no, vitamin A, vitamin E, vitamin C, carotenoids, cc hp cht ha thc vt nhm phytoestrogen, flavonoid cn c vai tr chng oxy ha, tng cng kh nng min dch v phng chng ung th c khm ph.

    Bng thnh phn thc phm (Food Composition Table) l mt cng c quan trng cho nhng ngi lm cng tc dinh dng trong iu tra v xy dng khu phn, phc v cng tc nghin cu v ging dy, hoch nh chnh sch v k hoch pht trin sn xut thc phm, p ng nhu cu ca nhiu i tng ngi tiu dng trong vic la chn thc phm ph hp vi tnh hnh sc kho. Bng thnh phn thc phm lun lun c cc t chc quc t, c bit l T chc thc phm v nng nghip ca Lin hp quc (Food Agriculture Organization - FAO) v cc quc gia quan tm.

    Trong hon cnh Vit Nam va gia nhp t chc thng mi th gii (WTO), th trng thc phm rt a dng, cung cp t ngun sn xut trong nc v nhp khu th nhng thng tin v thnh phn cc cht dinh dng v phi dinh dng, cc cht chng oxy ha, hp cht c hot tnh sinh hc ng vai tr quan trng bo v sc kho v phng chng bnh tt c cp nht s liu thng xuyn vo Bng thnh phn thc phm l yu cu rt chnh ng.

    2. LCH S PHT TRIN CA CA BNG THNH PHN THC PHM VIT NAM

    Vit Nam, nm 1941 M.Autret v Nguyn Vn Mu (Vin Pasteur H Ni), xut bn Bng thnh phn thc n ng Dng gm 200 loi. Nm 1972,

    Nm 2000, Vin Dinh dng trn c s tham kho cc cng trnh xut bn v cc kt qu nghin cu, phn tch thnh phn thc phm tin hnh trong 20 nm qua, kt hp vi ti liu tham kho cp nht ca mt s nc trong khu vc chu , ti bn Bng thnh phn dinh dng thc phm Vit Namgm 15 thnh phn dinh dng chnh ca 501 thc phm c chia thnh 14 nhm v cc bng hm lng acid amin, acid bo, cht khong, vi khong trong thc phm. Cun sch do tp th Khoa Ha-V sinh an ton thc phm, Vin dinh dng bin son.

    Nm 2005, p ng nhu cu ca ng o ngi tiu dng, cc cn b lm cng tc dinh dng tit ch ti bp n tp th, nhn vin y t lm cng tc t vn dinh dng c th tra cu nhanh cc s liu thnh phn thc phm thng xut hin trong ba n hng ngy, Vin dinh dng xut bn Bng thnh phn dinh dng ca mt s thc n thng dng bao gm 436 thc phm c chia thnh 4 nhm chnh l nhm cung cp cht bt, nhm cung cp cht m, nhm cung cp cht bo, nhm cung cp vitamin v mui khong.

    Tuy nhin, cc nh nghin cu v dinh dng, khoa hc thc phm, vn ha m thc v nhiu bn c vn mong c mt Bng thnh phn c s liu y , cp nht v thnh phn cc cht sinh nng lng, cc acid amin, acid bo, acid folic, cc loi ng, hm lng khong, cht x, vi khong, vitamin, hp cht ho thc vt...trong thc phm hin c trn th trng Vit Nam vi cu trc tin tra cu hn, do Vin Dinh dng bin son cun Bng thnh phn thc phm Vit Nam v c ra mt bn c trong nm 2007.

    - ng tng s v cc ng n: galactoza, maltoza, lactoza, fructoza, glucoza, sacaroza

    - Cc cht khong v vi khong: calci, st, magie, mangan, phospho, kali, natri, km, ng, selen

    - Cc vitamin tan trong nc: vitamin C, B1, B2, PP, B3, B6, folat, B9, H, B12

    - Cc vitamin tan trong du: vitamin A, D, E, K

    Nc: c xc nh bng phng php sy kh 100-105oC n trng lng khng i

    Gi tr nng lng: c biu th bng kilocalori (Kcal). Nu chuyn thnh kilojoul (Kj) th tnh theo h s 1 Kcal = 4,184 Kj

    Gi tr nng lng ca thc phm c tnh theo h s:

    1g protein cho 4 Kcal, 1 g lipid cho 9 Kcal, 1 g glucid cho 4 Kcal, 1 g cn (alcol etylic) cho 7 Kcal.

    Protein: c xc nh theo tng s nit trong thc phm theo phng php Kjeldahl, sau c chuyn i thnh protein theo h s sau:

    Lipid: c xc nh bng phng php chit Soxhlet

    Glucid tng s: c tnh ton theo cng thc: Glucid = 100 (nc + protein + lipid + x + tro). i vi cc ung cha cn, hm lng glucid tng s c xc nh theo cng thc: Glucid = 100 (nc + protein + lipid + x + tro + cn ethanol)

    Cc ng a v ng n: c xc nh bng phng php chun

    Celluloza: c xc nh bng phng php khi lng

    Tro: c xc nh bng phng php cn tro trng cn li sau khi nung nhit 500o 550oC

    Vitamin C: c xc nh bng phng php ha hc vi thuc th Tilman kt hp vi chun in th, phng php HPLC.

    Vitamin B1, B2, niacin, B5, B6, folat, acid folic, biotin v vitamin B12: c xc nh bng phng php sc k lng hiu nng cao (HPLC)

    Vitamin A (retinol): c xc nh bng phng php sc k lng hiu nng cao (HPLC). Hm lng vitamin A v caroten c quy v: tng ng vitamin A thc phm ng vt v tng ng -caroten thc phm thc vt, v chuyn i nh sau:

    1 mcg retinol tng ng vi : 1mcg retinol, 12 mcg -caroten, 24 mcg carotenoid

    1 mcg -caroten tng ng vi: 1 mcg -caroten, 2 mcg carotenoid Cc vitamin D, E, K) v carotenoid: c xc nh bng phng php sc k lng hiu nng cao (HPLC)

    Hm lng khong v vi khong: c xc nh bng phng php chun ha hc, phng php so mu v phng php quang ph hp th nguyn t (AAS)

    Hm lng purin: c xc nh bng phng php sc k lng hiu nng cao (HPLC)

    Hm lng cc isoflavon: c xc nh bng phng php sc k lng hiu nng cao (HPLC)

    Hm lng cc acid bo: c xc nh bng phng php sc k kh (GC)
