The MartiniP

P

The mixed drink in it’s simplest form - gin (or vodka if you must) flavoured with the delicate botanicals of vermouth. Although the word Martini has in recent times come to mean anything

that is served in the classic V-shaped glass. The martini has been getting drier and drier as the quality of base spirits has increased, with 19th Century recipes calling for sugar to be added! But by

prohibition is was a 3:1 ratio of gin to vermouth, and by the start of the 20th Century a ratio of around 11:1 had been established.

The ManhattanP

Named after the Manhattan Club in New York, and supposedly created for Lady Randolph Churchill at a banquet in honour of New York Governor Samuel Tilden in 1874. Although this is origin is somewhat unlikely due to her being pregnant with

Winston at the time! The appearance of a Manhattan cocktail in early cocktail records suggest that the formula (which originally

included orange Curaçao) was already in use from the 1860s onwards.

El Presidente £8.50Havana Club Barrel Proof rum, Punt e Mes Italian vermouth, orange curaçao, Briottet orange bitters and a dash of homemade grenadine. A superb rum twist on the classic Manhattan.

The DaiquiriP

If ever there was an example of the simplicity of a cocktail that perfectly balances sweet and sour, it’s the Daiquiri. Supposedly

invented by Jennings Cox, a mining manager who while stationed in Cuba with the Spanish-American Iron Company ran out of his usual gin and turned to rum to refresh his guests. He mixed it with lime and sugar to make it more palatable, although we

have the British Navy to thank for that idea, whose grog consisted of lime or lemon (to fight scurvy) the rum ration and sugar to

balance. Ahoy!

Natural Daiquiri £7.50Havana 3YO rum, fresh lime juice and sugar syrup.

Flavoured Daiquiri £7.50Choose from Raspberry, fig, vanilla or peach. We add a dash of Licor 43 to our Vanilla Daiquiri as well to give it an edge!

Hemingway £8.50Matusalem Platino rum, Maraschino liqueur, grapefruit juice, lime juice and a dash of sugar. Hemingway, a diabetic, favoured a sour Daiquiri balanced with grapefruit and cherry liqueur - we add a bit of sugar to make it more approachable!

The SourP

There can be no better drink than the sour - with its perfect balance, depth of flavour and generous mouth feel. We always use egg white to smooth the drink, the alcohol and citrus serving to

cure it, and render it safe to consume raw.

Gironde Sour £8.50Rittenhouse rye, Angostura and Old Fashioned bitters, lemon juice and sugar, topped with a dash of Lillet Rouge Aperitif. Our take on the New York sour, replacing the red wine with delicious Lillet.

Whisky Sour £8.50Your choice of Makers Mark, Woodford Reserve or Knob Creek (add £1) with bitters, lemon juice and sugar.

Amaretto Sour £7.50Disaronno Amaretto, lemon juice, sugar, Angostura and Boker’s Bitters.

Jerry Thomas, “the Professor” and author of the original cocktail guide How to Mix Drinks, or The Bon Vivant’s Companion is the

inspiration behind this section of our cocktail menu. His guide is a time capsule that shows how mixed drinks used to be, before

the dark ages of the 1970s and 80s made them the artificial, mixer-heavy travesties familiar to many today. We have tried to stay true to his memory by avoiding artificial ingredients and

wherever possible making them ourselves.

Last Word £8.50Beefeater Gin, Chartreuse Vert, Maraschino liqueur and lime juice. A superbly balanced classic that showcases the delicate herbal flavour of Chartreuse without being too overpowering.

Grenoble Flip £9.50Chartreuse, Maraschino liqueur, egg and nutmeg. With apologies to Milk and Honey, this simple but effective cocktail is a particular favourite of the bar staff.

Chocolate Martini £7.50Absolut vodka, Mozart Black Chocolate liqueur and milk.

Chocolate Orange Martini #1 £8.50Orange infused Absolut vodka, Mozart Black chocolate liqueur, Regan’s orange and chocolate bitters. For those who want chocolate flavour without the heaviness of a milky cocktail.

Passionfruit Tequila Smash £7.50Olmeca Altos Reposado tequila, a whole fresh passionfruit, lime and agave nectar. A potent but refreshing little drink.

Carthusian Sazerac £8.50Rittenhouse Rye whisky, sugar, Peychaud’s and Angostura bitters and a splash of Chartreuse Vert. A more approachable take on the classic Sazerac, using Chartreuse instead of Absinthe - simply delicious. Named in honour of the Carthusian monks who gave us the wonderful Chartreuse liqueur.

Mai Tai £8.50Havana Club Especial and Goslings Black Seal rum, Grand Marnier, pineapple juice, lime juice, Angostura bitters and almond syrup. The classic tiki drink!

Fig and Pear Crush £7.50Absolut Pear vodka, Boiron fig purée, honey and lemon juice. Mediterranean meets Somerset, with a rich, complex taste.

Between the Sheets £8.50Martell VSOP, Havana 3YO Rum, Cointreau, lemon juice and sugar. Is it a Daiquiri with cognac? Or a Sidecar with rum? Either way it’s a perfectly balanced, delicious drink.
