Dear Friends,

Looking back on the past year at Feeding Tomorrow, it strikes me how far we have come as an organization.What began in the 1980s as a conduit for Institute of Food Technologists (IFT) scholarship funds has grown into a multifaceted foundation that motivates young minds to pursue an education and career in food science, supports students with scholarships and internships, and leverages our expertise to help solve global food challenges. None of our achievements would be possible without you, and I thank you for your support.

Our mission is to bring the best and brightest minds to the science of food, and our vision is an enduring culture of support for the world’s next generation of professionals in providing a safe, nutritious, and sustainable food supply for everyone. While we have made progress, much remains to be done. To reach our vision of tomorrow, we must begin by understanding where we are today.

This past year, Feeding Tomorrow invested in our fi rst research study to uncover students’ primary motivation in pursuing food science and to track the trends and attributes of academic programs in the United States. The insights we gained will inform new partnerships with institutions and organizations as we grow and nurture emerging leaders and propel our industry forward by harnessing the power of the top talent in our schools and universities.

In this annual report, you will meet Richie Li, who secured a rewarding full-time job through our Intern+ program, which includes an internship with a major corporation and a scholarship toward tuition. As we position our foundation for the coming years, we must ensure opportunities like this are available to all educators and students advancing in our fi eld. Last year, we awarded more than $100,000 in academic and travel scholarships.

I am especially proud to say that we have also laid the groundwork for a new global volunteer program. With this program, Feeding Tomorrow partnerships will help IFT members fi nd opportunities to use their expertise abroad to address challenges in agriculture, production, food safety and nutrition, as well as distribution. It will amplify our impact on local communities, spur scientifi c progress, and create a better world for the next generation.

The work we have done this past year has helped to build momentum and set the stage for an exciting future for the foundation. I look forward to updating you on our progress as we rise to the challenge of securing a global food supply that is safe, healthy, and nutritious.

minds engaged in the science of food in order to meet the challenges ahead of us to feed a projected population of 9

billion in 2050. Feeding Tomorrow is proud of the progress made to expand our portfolio of resources and exposure to

educators, such as the IFT18 Educator Expo Program. We’ve also launched our fi rst research initiative, in partnership

with IFT’s Council of Food Science Administrators, to understand the infl uences and motivations of students enrolled

in food science programs. We look forward to leveraging the results to encourage and recruit the best and brightest

Food engages people, especially children. It can be used to teach lessons in almost any subject from science experiments to the history of vanilla from a social studies perspective, according to Katie Sudler, director of community education at FONA International and a key organizer of Feeding Tomorrow’s Educator Expo Program.

Two years ago, Sudler collaborated with Feeding Tomorrow to offer programing at the Future Food Scientist Program at IFT’s annual event. In 2016, Feeding Tomorrow targeted students. But this past annual conference in Chicago, under Sudler’s leadership, Feeding Tomorrow hosted a group of about 40 middle and high school teachers. “Truly, that’s where my heart is: working with the teachers. When you work with a teacher, the things they learn become part of their curriculum. It takes on a new life for years,” says Sudler.

Educators attended presentations on the food industry in general and flavors specifically. Feeding Tomorrow provided them with a variety of different industry-related experiments that teachers could bring back to their students and show how classroom learning relates to the real world of food science. The teachers also walked the floor of the IFT18 Food Expo, where more than 1,100 exhibitors from the food industry met with more than 23,000 food science professionals.

We wanted to open their eyes to how multidisciplinary the food industry is. Sometimes you think only science, food, math, or chemistry work in the food industry as career venues. But there is design, marketing, and sales. There are so many different facets of the industry that every teacher could find something that relates to their classroom.

Sudler’s own career illustrates that point perfectly. Her passion for her work began in 2000 during her undergraduate studies in nutrition. In a seminar, a whiff of a beautifully complex orange flavor hooked her for life. “I knew instantly that I wanted to work in the flavor industry,” says Sudler. Within the flavor industry, she held regulatory and marketing roles. At FONA, she puts her master’s degree and teaching certificate to good use. She helped found Discover FONA in 2012. She describes the community education program as, “the perfect marriage of my background.”

Katie Sudler says she loves food and drink. It is a passion that drives her to introduce young minds to the possibilities of food science with each new educator she offers an exciting in-class experiment.

their dedication to their future profession. A new and growing component of our scholarship portfolio is the

Intern+ program, which is designed to connect students in the science of food to a variety of professional

internships and trainee programs plus (+) academic scholarships or travel stipends to attend the IFT annual event.

Food science first captured Richie Li’s imagination when he was a child in China watching television. “On TV shows, I saw that you can eat, and they’re paying you,” he says. He began looking into the science of food as a career option and pursued an undergraduate degree in it.

In 2008, something changed. A melamine contamination in baby formula in China caused kidney failure in a large group of children who were exposed to it.

I realized my major is really important. Food science can make a difference in people’s lives.

He deepened his engagement in the field and came to the United States to pursue a master’s degree. At that time, he also joined IFT on the advice of an academic advisor. After finishing his master’s, he worked toward a PhD at the University of Florida, focusing his research on bioactivity and the extraction of phytochemicals in grapes and wine.

“My research was on the nutrition side, but my attention was on food product development,” says Li. He supplemented his education by entering product competitions and hoped to see his own nutritious, healthy product on grocery store shelves one day.

Then he opened an email about Feeding Tomorrow’s Intern+ program. There were internship positions for large, global companies with an academic scholarship to supplement the internship experience. He applied.

Li landed a research and development internship with General Mills, working on the Progresso soup brand. He reformulated ingredients, cooked the soup, and tasted the product. With his childhood dream satisfied, Li’s work took on a new dimension: industry application. He was studying the science of food in school, but General Mills offered the opportunity to take it even further with cost evaluation, marketing, logistics, and food safety labeling. He was bringing a product he helped develop to market. “It was a lot of fun,” he says.

Like many food scientists, Li enjoys the work, but ultimately serves a higher calling. Food science is a way to directly impact global health, and Li takes pride in the fact that General Mills donates food and has a culture of social concern. When they extended an offer for a full-time job, he accepted. It is a place where he says he can help people. Artificial intelligence or data science may be popular, but what is the point of making a fancy car or an intelligent robot if you cannot feed people, he asks. “That is the most pressing question in the world,” says Li.

for those in need. Knowledge is power. And with an IFT community nearly 17,000 strong, the foundation will

contribute knowledge toward food and nutrition solutions, in particular for those at the bottom of the economic

pyramid. Feeding Tomorrow is partnering with several nonprofi t organizations to establish programs that leverage

the technical knowledge of the IFT community to provide scalable, sustainable, safe, and nutritious food technology

solutions for regions with the most critical needs.

”“ Pablo Torres-Aguilar helps

a small food business in Kenya scale up.

Mercy Mwende was ready to grow the dried food business she and her husband owned in Chuka, Kenya, when Pablo Torres-Aguilar first met them. He was a PhD candidate at Purdue University doing his research at the Whistler Center for Carbohydrate Research, and Mwende needed someone to help her launch a line of millets fortified with mango powder to increase vitamin A. Torres-Aguilar and another volunteer, Nadine Aubourg, connected with Mwende and her company, Sweet ‘n’ Dried through Catholic Relief Services in 2004.

It’s the opportunity of a lifetime. It’s a growth opportunity professionally. And it makes you really humble when you see how people invest in their companies abroad.

Before he arrived in the country, Torres-Aguilar studied Sweet ‘n’ Dried and its needs. The plan was to design a workflow to scale the business up. But on the ground, priorities changed. The company first needed to become compliant with food safety rules its team was unaware of. He advised them to work on those issues first. After that, he told the owners, they could expand to different geographic areas and export to other countries with food that is safe to consume.

Sweet ‘n’ Dried embraced these changes and worked not only to generate a healthy food supply, but to drive economic growth in the area. The company employs women to process the grains and hires people in the villages to sell the product. Mwende is dedicated to her business. She had traveled to Japan to learn about production facilities and put herself through college. According to the company website, Sweet ‘n’ Dried now provides steady employment to 20 women and sources its product from a network of 400 small farms in Kenya.

Her commitment to her business and community made an impression on Torres-Aguilar. “Micro-food companies, as they start working and become successful, have the capability of solving a social need,” he says. “They also become a very important economic driver for the region. These companies play a key role in lifting people out of poverty.”

Stories like Torres-Aguilar’s inspired Feeding Tomorrow to launch its own program called Volunteer Globally in 2017, which matches IFT members with opportunities to leverage their technical knowledge to provide scalable, sustainable, safe, and nutritious food technology solutions for regions with the most critical needs. With the Volunteer Globally program now in place, Feeding Tomorrow is better positioned to have a greater, global impact to help those who need it most.
