EDITOR-IN- CHIEF
e are all feeling the need to escape; whether that means the white-washed beaches of Greece or home for the holidays with family. It is that time of the year where, as the days grow longer, the living gets slower. And I for one couldn’t be happier for it.
The holidays are upon us and we are celebrating a – cautiously – optimistic summer: friends, freedom(ish) and, finally, a reprieve from the year that was. That is why, in this issue, we really wanted to dial it down and get back to basics, to explore the fundamentals of living life well. Our cover stars this month, actress Amanda du-Pont and her husband, businessman Shawn Rodriques, are no strangers to this notion. When they manage to eke out some ‘us time’ from their hectic schedules, you will find them right at home in Joburg, seeking calm and serenity in their carefully considered and precisely pared-back spaces. I have a feeling the rest of us will be doing just the same come year’s end.
Of course, what would a holiday issue be without beachside boltholes and impossibly far-flung bungalows that really make you feel you can disappear, even if only into the pages. From designer John Jacob’s megawatt Bantry Bay project that redefines the idea of coastal living to a blink-and-you-will-miss-it sanctuary on Cabo Verde, the House & Garden team certainly does not disappoint in their discoveries.
No matter your escape, I hope this issue soothes, transports and inspires you.
See you in the new year.

LA GRANGE INTERIORS OPENS ITS NEW SHOWROOM
IN CAPE TOWN
A SELECTION OF FURNITURE AND
ACCESSORIES FROM LA GRANGE
INTERIORS
15DECEMBER 2020/JANUARY 2021 HOUSEANDGARDEN.CO.ZA
With the opening of a new showroom, interior designer and founder of La
Grange Interiors, Sumari Krige shares her vision for the new year
A NewChapter
Now in its 25th year, La Grange Interiors is a cornerstone of the South African design landscape. Headed by interior designer and founder Sumari Krige, the company sources unique furniture pieces from around the world, and along with a lineup of South African designs, the brand marries the contemporary with the eclectic. In what feels like perfect timing for Sumari, La Grange Interiors finds a new home in Cape Town with the opening of a new showroom.
‘It was a natural move, and the timing was just right,’ says Sumari. ‘The old showroom had been in the same location for five years, so I think we were ready.’
Located in the Woodstock area, the space has a second floor as well as a mezzanine level, and takes more layout cues from the Joburg showroom. ‘There are still styled moments and grouped settings, but the furniture and objects are a little more mixed now,’ she says. For Sumari, this works especially well because everything is diverse and, she adds: ‘It allows each person to come into the space and discover what inspires them and speaks to their own style.’
Creating a personal and inspiring experience for visitors is especially important to Sumari after the last year, where so much of normal life as we know it came to an abrupt halt. ‘We are still facing challenges after the pandemic: travelling to source all the beautiful pieces you see in our showrooms, and also completing projects oversees.’ But she remains positive about the future, reflecting on the last 25 years of La Grange Interiors. ‘Decades of experience allow us to navigate the new normal with confidence, discovering new ways of doing things. There is so much to be excited about.’ La Grange Interiors

2Colour, pattern and a touch of the unusual: celebrate the end of the year with a sense of humour and a touch of eclecticism. For an
especially bold table setting, place the stand out pieces in the middle of the table (think
ice buckets, platters and carafes) for a delightful vignette that acts as a focal point.

n the archipelago of Cabo Verde, travel company Barefoot Luxury invites visitors to bask in the sun and nod off to the lapping of the waves at its ambitious new development of individual villas and a top-notch hotel, all to be built in the coming years. In a secluded bay on the island of São Vicente, only a stone’s throw away from the cultural capital Mindelo, one can find a picture-perfect getaway to enjoy the sublime scenery and unrivalled privacy. Barefoot Luxury introduces a new kind of understated luxury to Cabo Verde with this one-of-a-kind investment opportunity, offering 30 tailor-made villas. The project by Belgian entrepreneur Serge Hannecart (LIFE) is currently under construction.
Cabo Verde, an archipelago off the West-African coast, was unoccupied until the arrival of European colonists in 1456 – a scenery of arid and rocky hillsides that contrasts dramatically with the deep blue Atlantic ocean lapping in and out. On the island of São Vicente, near the former colonial capital of Mindelo, a tour de force of creation is taking place – this time of architectural proportions. Nestled into the rocky hillsides that flank the Baía de João d’Évora, Barefoot Luxury Cabo Verde is taking shape: a hospitality project spearheaded by Serge Hannecart and Jan Talboom, that consists of 30 serviced villas, all within this unspoilt bay.
POLO Architects and Going East Studio approached the bay with respect for its natural characteristics and its inhabitants. The villas, maximum four storeys in height, are built using raw concrete as a framework to a traditional Cabo Verdean way of erecting walls: by stacking basalt rocks dug directly out of the surrounding valley. A network of roads, also in basalt-stone, interconnects these structures. Going East added the rattan rooftop to use the outside as the inside space. Also adapted was the design of the garden so one could have maximum use of the open space as the climate asks for staying outside and watch the trillion of stars in the secluded bay.
Most of the villas’ furnishings, too, were made by local craftsmen, say Anaïs Torfs and Michiel Mertens of the Antwerp-based interior architecture studio Going East. ‘We scoured Mindelo’s markets for objects that connect these residences to their locale,’ they say. From shark teeth, to Awale game boards, wicker baskets and manioc mortars, the interiors are strewn with welcome reminders that we are on African soil. Both POLO Architects and Going East are in unison about the synergy between Western and local that made Barefoot Luxury Cabo Verde materialise. From the woven wicker sunscreens, to the ironwork needed for the sofas, the carpentry and the masonry. It’s become a work of architectural ambition. POLO Architects polo-architects.be

travel so often and are so blessed to experience the best of what countries and hotels around the world have to offer,’ says actress Amanda du-Pont of the recently completed Joburg home she shares with her husband Shawn Rodriques and their two dogs.
‘It was important to us that we come home to the same comfort and luxury we experienced while travelling, hence many spaces having a boutique-hotel influence.’
Given the site location, building outward was not an option, so upward they went, designing a home across three levels, each easily accessed via two staircases that cascade down a triple-volume space. As the couple headed up the project themselves (while working closely with Streamlight designer Brad Kalish), they found that, throughout the build, their vision changed and evolved. ‘We had to be dynamic and adjust certain elements as it progressed,’ says Shawn.
Today, the configuration sees the first floor accommodate an open-plan living space, kitchen, lounge and dining areas, where Amanda and Shawn spend most of their time. Above that are the private living areas – the master bedroom and en suite – as well as two additional bedrooms that have subsequently been converted into an office and ‘glam room’ space. Finally, the third level hosts entertainment and workout areas as well as offering a knockout view of the Sandton skyline. ‘We wanted a home that would fit into our lifestyle and schedules, a home that was easy to live and work in,’ says Amanda. ‘A space that we can host friends and family in, but is versatile enough for business meetings.’
(In March, Amanda will be launching Lelive, her natural skincare brand). Much of the home is also automated, from blinds to lights and appliances, all operated from an app. ‘We wanted a space that is autonomous and can be monitored, managed and controlled from wherever we are in the world,’ says Shawn. ‘A practical home that needs minimal upkeep.’
This sentiment is carried through to the interiors of the home where the brief was simple: a clean aesthetic with muted tones and a minimalist feel. This has to be a home that possesses a quietness, with spaces that serve as a serene antidote to the homeowners’ hectic lives.
‘We found inspiration everywhere,’ says Amanda. ‘We would often spend Friday nights on the couch, with a glass of wine, scrolling through Pinterest.’ For the couple, creating the interiors was always going to be about collaboration, with each room speak-ing to their tastes. ‘There isn’t a single space in the house that was touched without Shawn and I discussing it first and bouncing ideas around,’ says Amanda.
One name they always agreed on: Weylandts. ‘There’s this beautifully moody, clean approach to design that we just loved about the brand,’ says Amanda. ‘Anyone who walks into our home immediately notices those pieces, which was such an important deciding factor for us, because of our pared-back approach.
‘What makes me so happy is that it truly is a blend of both of us. We’ve managed to mesh both our styles together throughout the house.’ Weylandts

he sun was just beginning to sink beneath the horizon when I first visited the Brody family garden at Spook Hill, on the south-western slopes of the Helderberg mountains. It was one of those magical summer days in the Cape. The warm light at the end of the day highlighted the cloud-pruned hedges and velvety palette of perennials. Freshly mown avenues were being soaked a deep, glossy green. As I walked across the lawn with my camera, low light snuck through the overhead Rosewood canopies and scattered leafy patterns onto the grass.
‘I’ve always had a love affair with gardens – particularly formal gardens,’ says owner and gardener Larisa Brody. ‘On one of my first trips abroad, I visited the gardens of Sanssouci in Potsdam, Germany and fell in love with hedges and classical formality,’ she says. Years later, after being introduced to the work of Australian landscape designer Paul Bangay, his use of symmetry and architectural simplicity became the inspiration for the formal garden areas immediately surrounding their family home.
It was local horticulturist and head gardener at Rustenburg Estates, Pietman Diener, who reimagined the family’s brief for structure and symmetry, as well as natural woodland and wilder areas, into a masterplan tailored to the Cape Mediterranean climate. The long-lined avenues bordered by clipped privet and anastrabe hedging were the first to be planted. Pietman detailed a heady mix of fragranced heliotrope, murraya, gaura and salvia for the beds. A rose-picking garden, high on the family’s priority list, now fills vases with Larisa’s favourite Roberto Capucci and Rina Hugo roses. ‘I have armfuls of pink, long-stemmed which complement the roses beautifully. I love experimenting with all sorts of combinations from my garden, even just plain foliage looks beautiful,’ she says
Just below the main lawned avenue, a secret, meditative space is where the family’s garden ideals came together in the form of a small olive grove, underplanted with a fragranced carpet of chamomile, erigeron, thyme and Geranium incanum. ‘It’s a truly sensory experience to lie on your back on the chamomile,’ says Larisa. ‘It’s one of our favourite areas in the garden and where we go when we need quiet time.’
The informal woodland area creates an elegant screen between the house and the street. ‘Pietman was brilliant in designing this area,’ says Larisa. There’s always one grouping of plants that look spectacular at any given time of the year’. The existing, old viburnums have been pruned into oversized mounds and now create the perfect foil for an unrestrained palette of white anemones, New Zealand rock lilies, wild iris, Libertia grandiflora, white hydrangeas, azaleas and snowball viburnums.
As one moves further away from the home, the olive orchard is where Larisa gets to play with new plants and indulge her latest plant interests. It was dusk, and the sky above the Hottentots Holland Mountains a deepening, rosy pink. Looking through my camera lens over the olive orchard, the trees shone silver in the diminishing light. The faint sound of guinea fowl settling down to roost for the night, drifted through the silence. I pressed the shutter and took the final shot. A cut above
Hands-on gardener and owner, Larisa Brody, divulges her favourite garden
plants, somewhat guiltily, and why she’s singled them out above the profusion of
deserving candidates in her garden.
My favourite plant is Salvia leucantha. It’s gently arching growth habit creates a soft, graceful impression – and the
flower heads look and feel just like velvet. If you cut them back hard after flowering,
they grow back beautifully and do it all again for you the following year. There is often a breeze in Somerset West and the drama of velvety salvia flowers swaying in the breeze is the pièce de resistance of
the garden for me. For interesting foliage and unusual dusky-pink flower colour,
plume poppies (Macleaya cordata) are another favourite. I love the leaf shape
of our indigenous Melianthus major. The frothy, white flowers of the New Zealand rock lilies (Arthropodium cirratum) in the
shade garden are incredible and I love the dainty Japanese anemones which flower
in March when little else does.

Gardener’s intel
Nothing beats gardening advice from someone that spends time in their garden. Gardener Larisa Brody on keeping her garden looking good all year.
‘I spray our roses every two weeks during spring and summer, and feed the garden twice a year with eco-pellets. I add homemade compost to areas when necessary. When it comes to design and planting, create an evergreen
backbone to your garden with plants that look great all year round. Low-growing hedges are very effective for this. They create a framework that creates a good-looking garden no matter the season. I like using Mondo grass and
wild garlic for this purpose – they are very well behaved. One can then experiment with seasonal plants within the low hedges. I also find mass planting of a single plant is kinder on the eye and easier to maintain than having many
different varieties in a single area. Mass planting creates drama in a garden.’

Top considerations before embarking on a garden project.
‘I can’t begin to stress the importance of proper soil preparation. Great soil at the outset will reward you with healthy, happy plants
and vigorous growth. Have a professional do the hard landscaping if you can, especially if the project is large. Be realistic about the water you have at your disposal before you start planning and planting. We sunk a borehole, knew our water supply and planted accordingly. There is nothing worse than watching your plants shrivel.’

into any of the homes strung along Cape Town’s glittering peninsula, and you will find there is a particular aesthetic that has emerged over the past decade: sleek lines, voluminous gallery-like proportions, grand open-plan living spaces and jaw-dropping sea views. While this coastal bolthole – tucked away on a wind-free stretch of the Atlantic Seaboard – has no shortage of sea views, it eschews the ubiquitous vernacular for something altogether more welcoming. ‘This house is not about that unobstructed open living,’ says designer John Jacob of John Jacob Interiors. ‘It’ is about contained softness.’
Stretched over three floors, the space is undoubtedly vast, so to achieve softness, John opted for defined living areas over interconnectivity. ‘Because of its size, we conceptualised a more traditional layout, where a room has a function and it only has that function.’ As a result, there is no blurring the lines in this project: ‘There is a clear visual break between the lounge, dining room and kitchen.’ Rather than sweeping horizontals, John sought out lean verticals that lend the home its elegant proportions, evident in the slender windows that offer peeks out to the greenery and ocean, the grated screens and linear arches that frame a room without cutting it off, and the luxuriously long drops of curtain, which tickle the floor when nudged by a gentle sea breeze. ‘The use of verticals results in a very soft, way more classic feel,’ he explains.
While each living area is geared to a specific function, the same can be said of the home’s three stories, each carefully conceptualised for purpose. The top floor of the house – also its entrance – is the home’s nucleus, a showstopping series of entertainment areas each with intoxicating views of the icy Atlantic. Down on the lower level, you are plunged into an almost sylvan oasis planted with full-height trees. ‘We made the more personal, cosy zones in the green lushness, which is the ground floor level, so you have these two completely
different living experiences in the same house,’ John recalls. Sandwiched in the middle are the bedrooms, which enjoy the best of both worlds, overlooking the leafy canopies to the expanse of the ocean. ‘What is wonderful about this property is the combination of the green and ocean aspects. On the Atlantic Seaboard, it is usually one or the other, so to have both in a very strong way is not something you often find.’
Those familiar with John’s houses will know that his work is underpinned by the central architectural notion of proportion. ‘Ultimately, a volume is the first thing the body reads when it enters a space and if the volume is too great, you feel instinctively uncomfortable.’ To offset this John creates wildly outsized pieces of furniture, effectively balancing the scales in lofty rooms. ‘If you saw a three-metre-by-three-metre coffee table in a shop, you would say that is crazy,’ he explains, ‘but when you take that proportion and put it into this interior, it creates an anchor.’ Among the custom pieces, you will also find designer decorative features, like the Kelly Wearstler, Arteriors and Ralph Lauren lighting. ‘The client has lovely taste,’ says John, ‘and they are design informed – they know their Kelly Wearstler from their Aerin Lauder.’
Amid the dramatic scale, there is a sophisticated thread of cohesion woven throughout, as seen in the pared-back neutral palette and textural joinery, a quarter-cut veneer sprayed to a taupe or blue finish. ‘The cabinetry still has that texture, but it is very quiet, calm and restrained,’ he explains. ‘It is one of the things I love about this house.’ The result is an amalgam of timeless and modern, comfortable and upmarket, utterly vast yet effortlessly cosy. ‘I like for my interiors to embrace you and make you feel at peace,’ says John. ‘That is the design language.’

itting on the ridge of the hill of Aleomandra in Mykonos yet almost entirely hidden from view, Villa Mandra by architecture and interior design firm K-Studio, looks straight out to sea and the sunset over the neighbouring island of Delos. A six-bedroom holiday house built for a young, dynamic couple to enjoy with their family and friends, it celebrates its spectacular view from a grounded viewpoint blended into a sensitively landscaped, stone-walled garden that screens it from the road behind.
The house is built upon the idea of slow, laid-back summer living, and encourages mindful connection with family, friends and the freedom to exist peacefully in nature. Form follows emotion rather than function, as every space becomes another opportunity for rest, reflection and exploration.
‘To create a house that would allow guests to enjoy being outside throughout the day, we needed to filter the overwhelming intensity of the climate by providing shade and protection from the elements,’ says the K-Studio team. ‘And although the house needed to accommodate a large number of guests, we did not want to dominate the landscape with oversized volumes.’ Inspired by the humble complexity of the traditional island vernacular, they reduced the architecture to two small traditionally whitewashed volumes, and a third of stone dug from the site, built around a large ‘courtyard’ living area which is covered by an expansive but lightweight chestnut pergola. The courtyard became the focal point of the house, seamlessly connected to the living room and kitchen volumes and looking over the pool and gardens beyond. Beneath the pool garden are the private bedrooms, separated for privacy and quietly enjoying the uninterrupted view over the lower garden to the sea. This separation also reduces the overall impact of the house and cleanly divides social and private space.
Key to the character of the house is the palette of traditional materials such as lime-wash, stone and wood that have been applied and engineered with contemporary techniques to create un-nostalgic architecture that bridges heritage and locality with contemporary life. The hand-built stone walls are sharply confident; traditionally rendered, round-edged volumes are perfectly flat and smooth. The customary chestnut pergola has been engineered to increase its structural integrity, to form a glue-lam beam lattice that sits lightly on the white volumes, shading and protecting the extensive courtyard beneath.
The simple white volumes, straight stone walls and light pergola planes sit comfortably in the Cycladic landscape and the efficiency of their layout, centred around the courtyard living space, streamlines daily life. Villa Mandra is informed by humble Cycladic tradition, enriched by natural materiality and inspired by contemporary summer living.

natasha Sideris – better known as the mononymous founder of the Tasha’s brand of restaurants – is back. It has been six years since the release of Tasha’s fi rst cookbook, which demystifi ed her café classics (fi nally, the parmesan couscous crusted chicken, explained) and her latest offering is a beautiful tribute to the food – and art – that infl uences this dynamic chef.
Tasha’s Inspired: A Celebration of Food & Art is a tour de force of global dining, with each chapter focusing on a new location and its emblematic fare. From staples of the high-octane New York dining scene – think Waldorf salads and pastrami on rye á la Katz Delicatessen – to Spanish-inspired tapas and feel-good country comfort food.
To celebrate her new cookbook, Natasha shared recipes with Condé Nast House & Garden from the chapter ‘The Mediterranean Table’, the perfect selection for lazy summer afternoon entertaining with friends and family.Tasha’s Inspired: A Celebration of Food & Art (Quivertree) R849, loot.co.za

GEMISTA 4 Servings
A meal of baked vegetables stuffed with rice and minced meat is traditional Mediterranean peasant food. Potato slices underneath the stuffed vegetables prevent the vegetable parcels from sticking to the pan, and at the same time, they soak up all the cooking juices, becoming soft and delicious – an unexpected treat at the bottom of the baking dish. The vegetables should be more or less the same size to ensure even cooking.

GREEK SALAD WITH WHIPPED FETA 4 Servings
There are so many lacklustre Greek salads out there that you could be forgiven for thinking it is not very exciting. But if you get the proportions right and use only the best ingredients, it is a thing of great beauty.
WHIPPED FETA200g feta cheese50ml milk
DRESSING120ml olive oil 80ml red wine vinegarhandful of flat-leaf
parsley, chopped2 sprigs of oregano,
choppedsalt and black pepper
1. Vegetables: Slice off the tops of the tomatoes and keep to one side. Scoop out the flesh and set it aside. Also, slice off the tops of the peppers and aubergines and hollow them out — keep the tops but discard the seeds and flesh. Coat the insides of the vegetables with olive oil and season well. 2. Filling: Heat a little olive oil in a saucepan over medium heat, and sauté the onion and carrot. Once the onion is translucent, add the bulgur, tomato purée and the tomato flesh that has been chopped up; stir to combine. Add the beef mince and stir in the fresh mint, dried mint, parsley, dill and cinnamon. Season the mixture with salt and black pepper. Stir for about 2 minutes and remove the pan from the heat. 3. Gemista: Preheat the oven to 180°C. Line the base of an ovenproof tray with potato slices and pour the water into the tray. Gently place the vegetable cups on top of the potatoes and fill each one to the top with the bulgur-and-mince filling. Place the tops of the vegetables back on, to make ‘lids’ and place the cubes of butter on the lids. 4. Mix the lemon juice, tomato purée, olive oil, salt and black pepper and pour over the vegetables. 5. Cover the tray with tinfoil and bake for 30 minutes, then remove the foil and return the tray to the oven for another 30 minutes. Make sure the potatoes and mince are cooked, and the skin and lids of the vegetables are slightly charred. 6. To serve: Drizzle the vegetables generously with extra-virgin olive oil and serve with thick Greek yoghurt.

SAGANAKI PRAWNS WITH ORZO PASTA 4 Servings
Saganaki is the name of the pan, not the prawns. It is a Greek country-style dish made with prawns, a rich tomato ragu, and orzo, a pasta that looks like long-grained rice.
SAGANAKI PRAWNS120ml olive oil24 prawns, cleaned and shelled2t fish spicetomato ragu 160ml vegetable stock560g orzo pasta, partially
cookedsmall handful of flat-leaf
parsley, chopped plus extrafor garnish
200g feta cheese, crumbled
TOMATO RAGU500g cherry tomatoes1 small onion, finely chopped4 garlic cloves, finely choppedpinch of dried oregano 1t olive oil2t tomato paste salt and black pepper
TO SERVE1 lemon, quartered handful of flat-leaf parsley,
roughly choppedextra-virgin olive oil
1. Tomato ragu: Preheat the oven to 160°C. Mix tomatoes, onion, garlic, oregano and olive oil in an oven pan and roast for 30 to 40 minutes, or until the tomatoes blister and the onion has caramelised. Transfer half of the mixture to a saucepan with the tomato paste, season to taste, and cook to incorporate the paste. Transfer the mixture to a blender and pulse until you have a chunky texture. In a mixing bowl, mix the blended mixture with the other half of
the roasted mixture and set aside. 2. Prawns: Heat half the olive oil in a large ovenproof frying pan. Season the prawns with half of the fish spice and place in the hot frying pan; sauté until they are a nice charred colour, but do not cook them through. 3. Add the tomato ragu and the vegetable stock and stir. Add the pasta and the remaining fish spice, and scatter the parsley and crumbled feta on top. Place the frying pan in the oven for 10 to 12 minutes, or until the feta is golden brown. Do not overcook the prawns. 4. To serve: Plate the prawns with lemon wedges, parsley and a drizzle of olive oil.

WHOLE GRILLED FISH IN A GREEK PSAROTAVERNA 4 Servings
A whole grilled fish would be served with a side of vegetables such as potatoes, spinach, courgettes and carrots, simply boiled or steamed. We’ve used stumpnose, which belongs to the red roman family, but you
could use hake, cod, red mullet or sea bass.
FISH1–1.4 kg fresh whole fish,
cleaned and scaled salt flakes
SAUCE2 garlic cloves, crushed6T olive oiljuice and zest of 3 lemons1T chopped oregano1T chopped parsley1T dried oreganosalt and pepper
CABBAGE & RED ONION SLAW250 g green cabbage,
thinly shaved1 red onion, thinly shaved
handful of coriander, choppedhandful of coriander,
leaves picked2T olive oilzest and juice of 1 lemon salt and pepper
1. Cabbage and red onion slaw: In a mixing bowl, toss the cabbage, red onion and coriander together. For the dressing, combine the olive oil, lemon juice, zest and seasoning and dress the salad just before serving. 2. Grilled fish: On both sides, score the fish 3 times at an angle. Take care not to cut too deep. Rub the fish with the salt flakes and place on the grid. Place the grid over hot coals. Turn the fish every 10 minutes to ensure
even cooking. Continue to check whether the fish is cooked. Time might differ, depending on the size and thickness of the fish. Once cooked, the meat will be flaky and white. 3. Combine the sauce ingredients and brush the cooked fish with the sauce before serving. Serve the remaining sauce on the side, along with the cabbage and red onion slaw.

RIZOGALO – A CREAMY, EGGLESS RICE PUDDING 4 Servings
Like many other rice puddings, it is flavoured with cinnamon and vanilla. We’ve added a crunchy pistachio crumble topping that gives it texture and extra flavour and brings some visual punch.
RIZOGALO250g arborio rice500ml water500ml milk400ml cream
2 cinnamon sticks1 vanilla pod, split lengthwise
and seeds scraped out385g tin condensed milk
PISTACHIO CRUMBLE50g unsalted pistachios50g flour50g caster sugar50g butter, melted
1. Pistachio crumble: Preheat the oven to 200°C. Mix all the ingredients to form a dough, flatten onto a non-stick baking sheet and bake until golden brown and bubbly. Leave to cool and crumble into small pieces. 2. Rizogalo: Heat a saucepan over medium heat. Combine the rice, water, milk, cream, cinnamon, vanilla pod and seeds in the saucepan and bring to a boil.
Lower the heat and allow the mixture to simmer for 20–25 minutes, stirring continuously to prevent the rice from sticking to the base of the pan. 3. After 15 minutes, add the condensed milk, stirring frequently while allowing the rice to thicken. As soon as the rice begins to thicken, remove from heat and allow it to cool. 4. Remove the vanilla pod. The rizogalo can be served hot or cold. 5. Divide the rizogalo into 4 bowls or glasses and top with the pistachio crumble just before serving.
