AIRMAIL 11.5 As to the precise origins of this potent little blend - a cross between the French 75 and the daiquiri - we cannot say. It simply turns up. The name, at least, isn’t much of a riddle; way back when, airmail was the last word in getting something from point A to point B. Ron zacapa 23, orange blossom honey, citrus and champagne. This will make you feel like you’ve taken the plane too high

SOUTHSIDE FIZZ 9.5 A classic variant of a gin fizz, this ultra-refreshing libation is seeing a bit of a revival nowadays. One to please any mojito lover, we like our southsides served effervescent with lots of mint and lots of ice

EL DIABLO 9.5 This devilish drink originating in 1940’s California is a must for any Moscow Mule lover. A classic combo of don julio blanco traditional tequila, lime and blackcurrant liqueur, topped up with homemade ginger beer

HEMINGWAY SPECIAL DAIQUIRI 9.5 The man himself gave his name to this Cuban corker. Dry cherry liqueur and grapefruit juice give a real edge to the holy trinity of Havana club rum, lime and sugar found in daiquiris

SINGAPORE SLING 9.5 Unfortunately the exact recipe for this classic is lost in the annals of time, but we’ve gone with our preferred recipe of this pimped-up tropical Tom Collins. Joining tanqueray gin, lemon and soda, enter: pineapple juice, cherry liqueur, cointreau, benedictine and bitters with a tiny touch of grenadine

EAST INDIA COCKTAIL 9.5 The drink of the British Raj and rulers of Queen Victoria’s East Indies Crown Colonies. Much of the cotton spun by Manchester’s many mills travelled from this far away land. Martell VSOP cognac, cointreau, maraschino stirred gently with raspberries. Only the best for royalty

1930s COSMOPOLITAN 9.5 Long before Carrie Bradshaw and the girls sipped on Cosmos in that 90’s show, there existed a suspiciously similar concoction in the 1930s. This sophisticated and classy version is tanqueray gin based with raspberry, as opposed to cranberry, giving its attractive pink blush

DELICIOUS SOUR 9.5 For those that swear by the deliciousness of their favourite amaretto sour, here is a sour so delicious they named it as such. An original and sinfully tasty combination of Summerset cider brandy, peach liqueur, lime juice, sugar and egg white, served with a baby apple

KNICKERBOCKER SPECIAL 9.5 Mid 19th century New York’s Knickerbocker Hotel produced a variety of specialities including desserts. And this is one of our absolute favourites. A fruity number we like to drink frappe, this could be a contender for the mai tai throne: Havana club rum, raspberry, pineapple, grand marnier and orange slices shaken with a little lemon

OLD PAL 9.5 For aficionados of seriously old school cocktails like the Manhattan or the Negroni, we’d like to introduce you to your new best friend: Old Pal. We’ve taken the liberty of adding a little Antiqua formula vermouth to the typical mix of rye whisky, campari and dry vermouth

MARKED MAN NO. 7 10 In deference to a Manchester legend. Mixed into glenmorangie quinta ruban we add: figs, maple syrup and bitters. An old fashioned well worth the wait

Over the years our cocktail offering has become renowned. Rather than replacing all of our previous cocktails completely, we have kept five of our most loved libations for our faithful patrons. We have however given them a bit of a reboot, adding a few tweaks and flourishes.
