OperationThe cleaning cycles that use hot water and detergent are progra-mmable and run automatically. To improve filtration and preventdirt from sticking and becoming encrusted, periodic humidifica-

tion cycles using just cold water are run to keep interior surfacesmoist. The cleaning cycle is therefore shorter and water con-sumption is thus kept to a minimum (approx. 3.5 litres per metreof hood in each wash).

The hood should be cleaned at least once a day to ensuremaximum system efficiency. In the most demanding conditions,several cleaning cycles may be programmed per day. Sprayingwith just cold water may also be programmed.

Should the user consider it necessary, a command to run acleaning cycle may be sent manually from the control box at anytime.

The water and detergent are mixed inside the control box, whichalso houses the programmer, the control and safety valves, thedosing pump, a decalcifier (to prevent scale from blocking thenozzles) and an auxiliary pump (optional) for cases in whichthere is insufficient mains pressure.

Self-cleaning exhaust hoods provide a more pleasant and hygienic

working environment with less risk of fire. Elegance and CKV self-cleaning hoods also offer top-capacity filtration of the gases and fumes

generated during the cooking process, based on the high-turbulence

TURBO filter used in this application. This filter produces a series of

successive cyclones that make it much more efficient than conventional

filters.

The self-cleaning hoods are particularly suitable for use in hospitals,on ships, and also in all those circumstances that require an excellent

level of hygiene.

The following features apply to both hood types:

• Wall and ceiling versions available.

• TURBO model multi-cyclone filter cartridges. Efficacyexceeds 95% for particles of 8 microns and above.

• The whole hood perimeter is welded to prevent un-desired dripping.

• Easily accessible integrated light with tempered glassin each hood section.

• The standard versions of the hoods are manufacturedin 2,500 mm sections that are easily assembled toform larger units. This facilitates both transport andsubsequent assembly (please enquire about longerlengths for single units).

• Special dimensions upon request.

• All hoods are supplied duly packaged to protect themin transport or storage.

• The hood is delivered with as many standard-sizefilters as fit, or with the number of filters required toextract the volume flow stipulated in the regulations.

• The filters may be removed by hand and withouttools, which allows for them to be cleaned and forthe performance of the maintenance operations thatthe hood or its accessories (self-cleaning system, UVreactor, fan, etc.) may require.

• The hood includes a drainage plug, located at theback of the fat collector, to facilitate the emptying ofcondensates.

• Automatic fire-suppression system (optional).

The Elegance hood has been designed to combine sturdiness,beauty and performance in a minimum space and is thereforesuitable for kitchens that require the best machinery (in shipsfor example) even when space is short.

It is built entirely in AISI 304 (No. 1.4301) satin finished stain-less steel in thicknesses that vary from 1.25 mm to 2 mmdepending on the zone.

The CKV hoods have been specially developed in accordancewith the criteria of the UK Standard for Kitchen VentilationSystems, while the criteria established in the UL 710 Standardfor Exhaust Hoods for Commercial Cooking Equipment havealso been taken into consideration in order to provide a clean,hygienic and comfortable working environment in moderncommercial kitchens.

The hood has rectangular faces and features and extra-flatdesign, which makes it easily adaptable to low-ceiling areaswithout affecting its efficiency when used in large kitchens.

It has an extracted air compensation zone and induction flowto improve uptake of gaseous effluents.

It is built entirely in AISI 304 (No. 1.4301) satin stainless steel,the thickness of which ranges from 1.25 mm to 2 mm.
