Mixers are ideal machines to mix pre-ground meat and fat with salt, nitrite, spices or additives for theproduction of hamburger, coarse frying sausage, coarse spreadingsausage, kebab, various types of raw sausage, vegetables, cheese and salads.A cutter or grinder may be instal-led before or after the mixers.
Mixer as standardization unit
A weighing device at the mixer deter-mines the current weight of themixture in the machine. The neces-sary corrections are added relative tothis weight. Therefore, the mixers areessential in production in order tostrictly adhere to the composition ofrecipes.When employed in production lines,mixers are often used as buffersbetween the grinder and cutter. Whilea batch is being cut in the cutter, theupstream mixer simultaneously mixesand standardizes the next batch. Thisachieves optimised work processesand the shortest working times possi-ble. If the mixer is installed upstreamof a batch preparation system, itmixes the various types of meat. Thebatch preparation system is suppliedby mobile containers, belt conveyorsor screw conveyors from the mixer.

The vacuum-mixer
The use of vacuum mixers results inthe volume of the meat cell beingincreased. Intensive mixing opens thecells on the meat surface. Liquid cellplasma comes out and covers the sur-face of the meat pieces as a bindingprotein film.
In this manner, additives can best beabsorbed by the meat cell. The taste ofthe raw goods is significantly improvedin this manner. The mixed goods areheated only little due to the use ofvacuum. In further processing, the cut
fine-grained mixtures, results in signi-ficantly improved taste preservation inthe product. Due to the small amount of oxygen from air entrained in thevacuum-mixer, the reaction of oxygenwith fatty acids (fat oxidation) is signi-ficantly reduced. The product has better keeping qualities.
On the new Seydelmann Konti-Kuttertype KK250 AC-6 made of solidstainless steel (an emulsifier with acompletely new hole plate/cuttingplate system), the pre-mixed materialis being vertically sucked through asystem of successively-arranged holeplates /cutting plates.

On request, special, hydraulically ope-rated hopper covers are available foreach mixer for all requirements: onecover, for example for dust-producingproducts, or a hopper cover to attachfeeding connections for liquid nitrogenor carbon dioxide. For the P1000 andP1500 mixers, this is also available incombination with sliding hopper walls.For low room heights, a special, 2-piece cover with hydraulic operation isavailable for all mixers from P3000.

As a standard all mixers are preparedwith connections for cooling witheither liquid nitrogen (LIN) or LIC. In addition, there is an expansionchamber above the hopper.

The mixers type P 500, P 1000 and P 1500 can be additionally equippedwith direct steam heating. These exe-cutions with direct steam heating byLIC or LIN are equipped as a standardwith the temperature control systemPT100 with digital display and pre-adjustable switch-off. The heating willbe switched off automatically when thepre-adjusted temperature is reached.
All cooking mixers are equipped withnozzles for direct heating of the pro-duct for the connection of low pressuresteam.
Heating
The mixer is loaded with beef, veal or turkey pre-ground to 2 or 3 mm.During the mixing process, salt, spices,additive and yoghurt, milk and waterif desired are added and intensivelymixed within a short period of time.Due to the special mixing geometry ofthe Seydelmann mixer, intensive andstable blending is achieved within ashort period of time. Beef fat is mixedin very homogeneously. It is no longervisible in the cut. This produces aKebab-Spit of the best, smooth consi-stency, no grease drips out on the grill,the knife cuts optimally.

Moving the hopper walls towards themiddle of the mixer allows thoroughand safe cleaning of the hopper fromboth sides without problems. Only aminimum of material is lost if batchesare changed frequently.

Working platform

The screw, screw housing and bayonetlock of the mixer-grinder are made ofsolid stainless steel. Mechanical wearof the stainless steel screw housing islargely prevented by a special harde-ning process of the internal housingsurfaces. The work screw is fittedwith a short-term reverse gear. Thisallows to return small quantities ofthe mixing product to the mixingprocess.

On request, the mixers, vacuum-mixers, cooking-mixers and mixer-grinders can be fitted with a weighingunit with digital display to accuratelydetermine the weight of the hoppercontent. This allows the adding ofindividual constituents in sequence inorder to exactly achieve the desiredcomposition of the entire mixture. As the desired mixture is maintainedwithout deviations, exactly calculableproduction is possible. A uniformquality standard is ensured.
Weighing unit for the hopper content
A weighing unit with batch preparati-on unit and programmed discharge isalso available on request. Along withindication of the hopper content, it alsoallows batch and weight-oriented dis-charge under program control. Thecurrent weight of the mixture is deter-mined by the weighing unit of themixer. The nominal weight of spicesand additives are accurately calculatedand displayed relative to this weight.At the spice scale, which is availableas optional equipment on request, thequantities displayed are addedmanually and then acknowledged atthe terminal. A total of 5 recipes, eachwith up to 10 different components canbe saved with their compositions inpercent.

Quality advantage
Cooled pork is mixed and coarsly pre-ground in the mixer-grinder. Thenthe grinding set is changed to a 5 mmhole plate and 7-winged outside cut-ting knife. The meat is returned to themixer-grinder and mixed with saltedpork and spices. Grinding is continuedas long as the meat has little binding.This gives the sausages a good andclear cut.
Coarse sausage for spreading is made in the same manner, but using the 3 mm hole plate and 9-winged outsidecutting knife.
Nuremberg sausage, frying sausage,Krakow and other cooked sausageswith coarse show meat can be made in the same manner.
The sausages produced in this mannermeet the highest demands for appea-rance and quality. Working with themixer-grinder is rational, of highquality and cost-efficient.
Application example:Westphalian sausages
The mixer-grinders are loaded eitherby means of a column hoist, conveyorbelts or screw conveyors, each as optio-nal equipment. On request, the columnhoist is mounted to the machine or tothe floor (exclusively in the designwith weighing unit). It is fitted to ac-cept loading bins BW 200.
Loading
On request, special, hydraulicallyoperated hopper covers are availablefor each mixer for all requirements:one cover, for example for dust-produ-cing products, or a hopper cover toattach feeding connection for liquidnitrogen or carbon dioxide. For allmixer-grinders, this is also available in combination with sliding hopperwalls.

Useful accessories for Seyd elmann grinders
The holding device*
The holding device for the precuttingplate (kidney plate) allows a smoothand friction-free cut. The cutting setcannot be compressed by the highpressure of the flowing meat. The ma-chine runs softer, the power consump-tion declines. The wear of the knivesand plates is reduced to a minimum.
Outlet hand guard*
According to the European draft stan-dard EN 12331, the outlet hand guardis required for operation with end holedisks ≥ 8 mm hole diameter.
The aftercutting knife *
The aftercutting knife runs on the last hole disk. Meat leaving the cut-ting set in strands or strings duringgrinding is cut by it again. This grainsand mixes it to exactly the same size.Ideal for marinated meat, raw sausa-ge, frying sausage, medium-longkeeping sausage, etc..
The aftercutting device*
The aftercutting device drives the af-tercutting knife independently fromthe grinder screw via a separate mo-tor. The speed of the aftercutting devi-ce can be steplessly adjusted depen-dent on the desired length. For a hig-her speed, the grain is shorter, whe-reas it is longer at a lower speed. Itprovides an exactly uniform grain withdifferent raw materials.
Separating set*
Separating set for the improvement ofthe meat quality. Gain of time duringdeboning. Gristle and sinew, etc. do not have to be cut out. The separatingkit sorts out a great portion of the hardcomponents in meat. The grinding sepa-rator kit allows you to simultaneouslygrind the sorted-out hard components.No blocking of the cutting set as thehard particles are removed automatical-ly. Therefore improved throughput withclearest cut. The meat quality ist upgra-ded by 1 to 2 quality levels (GEHA).

Pneumatic unloading device*
The pneumatic unloading device, usedwith the separating kit or grinding se-parator kit, ensures even more exactand precise control of separation andsorting out sinew and meat. The pneu-matic unloading device controls thedesired flow by means of a ball valve(separate compressed air connectionrequired). The interval time betweenopening and closing of the valve can beset individually as required. Thetransparent discharge hose allows youto continuously check the quality ofthe discharged product.
