    Honey bees collectpollen and nectarwhen most flowersand plants are inbloom.

    They use their long,tubelike tongues tosuck the nectar out ofthe flowers and they

    store it in theirstomachs and carry itto the beehive

    The nectar is mixed inside their stomach,with the proteins and enzymes convertingthe nectar into honey.

    The bees then drop the honey into thebeeswax comb.

    Once full the bees fan their wings, creatingheat across the honeycomb which reducesthe moisture content to34%-35%.

    This raises the natural sugar concentrationwhich prevents fermentation.

    When this is done, the bees cap thehoneycomb with wax and move on to thenext empty comb, starting all over again.

    So, in a nutshell, thehoney we eat is flowernectar that honeybees have collected,regurgitated and

    Honey is a high energy food due to thelarge carbohydrate content (glucose andfructose) it has.

    Honey contains a small amount of vitaminswhich include ascorbic acid, niacin,

    pantothenic acid, riboflavin and thiamine.

    There is a wide range of minerals found inhoney. These include potassium, sodium,

    calcium, magnesium, iron, copper,manganese, chlorine, phosphorus, sulphurand silica.

    As you can see below honey also serves in making foodmore aesthetically pleasing. In these photos of thehoney and almond slice, the cake containing honey hada more golden colour, was more well risen and has abetter texture than that containing sugar.

    Ingredients 250grs biscuits 60grs butter 60grs raisins 2 tbsps honey 1 tbsp cocoa powder

    Method

    This cake does not need anyheating. Grease a 23cm cake tin(which has a removable base) withbutter. Crush the biscuits using arolling pin. Melt the butter and

    honey in a pan under very low heattaking it off the heat as soon as itmelts. Add to it the cocoa powder,the crushed biscuits and the raisinsand mix well. Pour this mixtureinto the cake tin and compresswell. Place in the fridge for around3hrs. Cut into wedges and presenton a small plate covered with adoily.

    Ingredients 200g plain flour 100g butter 1 teaspoon sugar 3 tbsps cold water

    For the filling 250g walnuts 500g honey

    Method

    Sift the flour and salt together.Rub in the butter until themixture resembles bread crumbs.Add the sugar and mix in thewater and work it into dough.Open the dough and line it into a

    greased tin. Prick the base usinga fork, line it with foil and coverwith beans so that it does notrise. Put it in the oven, Gas 6(200oC/400oC F) for 20 minutes.

    For the filling, crush the walnutsand mix with the honey. Pour thismixture into the lined dish andbake in the oven for 10 minutes.
