Orzo VeggiesBrowning the
orzo gives it a toastyflavor.
1 pound as-paragus, trimmed
3 bell pep-pers (red, green andyellow)
6 greenonions, chopped
1 cup grapetomatoes, cut intohalves
1 mediumzucchini
4 table-spoons extra-virginolive oil, divided
1 garlic clove,crushed
1 tablespoonItalian seasoning
1/2 teaspoonsalt
1/8 teaspoonfreshly ground blackpepper
1 cup orzo2 cups re-
duced-sodium veg-etable or chicken
broth1/4 cup pine
nuts, toasted3/4 cup crum-
bled feta cheese
1. Preheatoven to 350F.
2. Cut veg-etables, excepttomatoes, into bite-size pieces. Placefirst 5 ingredients(asparagus throughzucchini) in a 13 x9-inch baking dish.Add 2 tablespoonsolive oil, garlic, Ital-
ian seasoning, saltand pepper. Tosswell. Roast 30 min-utes or until vegeta-bles are tender.
3. Place re-maining 2 table-spoons oliveoil in a largesaucepan.Add orzoand sautéuntil brown.Add broth.Bring to aboil, reduceheat to low,and cook,
covered, until liquidis absorbed.
4. Add orzoto roasted vegeta-bles. Mix well.Sprinkle pine nutsand cheese over
top. Cover with foiland bake 30 min-utes. Serve hot or atroom temperature.Serves 8.

not only did this boybelong with us, butwe were a ‘fosterfail’ before we evenleft the clinic,’”O’Neill says. Theyadopted him.

Grilling is oneof America’s favoritepastimes and a pop-ular summer activityin backyards. Morethan 60 percent ofAmerican house-holds will cook onpropane grills thissummer, accordingto the Propane Edu-cation & ResearchCouncil (PERC).
PERC is anenergy check-off pro-gram dedicated tosafety and trainingfor the propane in-dustry.
“Summer is atime to enjoy the out-
doors with family andfriends,” says PERCPresident and CEORoy Willis. “And withthe onset of warm
weather, it’s also agood time to reviewoutdoor safety tips,including safe grillingtechniques.”
“If you buy a
propane-poweredgrill and assemble ityourself, follow themanufacturer’s in-structions to the let-
ter,”Willissays.
“Betteryet, havethe grillassem-bled be-fore youbring ithome.”
Next,the location of thegrill is an importantconsideration. PERCreminds families thatthe only safe locationfor any grill—includ-
ing propane cookingunits—is outside in awell-ventilated areaand a safe distancefrom the home.
“Grills shouldnever be placed in aconfined area,” Willissays. “Make sureyour grill is at leastfive feet from yourhouse on a level sur-face away from sid-ing, outdoor furnitureor anything else thatcould be a fire haz-ard. It’s somethingthat you don’t alwaysthink about whenyou’re grilling, but it’sa basic safety meas-ure that’s easy to im-plement.”
“Always usecaution when lightingthe grill and neverstray from the grillmanufacturer’s in-structions,” saysWillis. “If the flamesgo out for any rea-son, turn the grill andgas off and wait 15minutes before re-lighting it.”
PERC alsoencourages familiesto keep the top openwhen lighting thegrill. This allows forventilation and en-sures that propanevapors are not beingreleased into theconfined grilling area.
Finally, proper
storage of propanecylinders is an es-sential safety stepwhen using propane-powered grills.
“Be sure tostore propane cylin-ders upright and out-doors, and keepcleaning fluids, oil-soaked rags, gaso-line or otherflammable materialaway from cookingareas and gas appli-ances,” Willis says.
