    We fi nished planting corn on July 4 but still had to go around some mud holes. We needed the forages for our heifers. We had 3 inches of rain on June 28 and 2 tenths today (July 8). Our corn didnt make it knee high by the Fourth. South of us where the ground is lighter and they got in the fi eld earlier the corn stands waist to chest high and looks excellent. We plan to take out second crop hay July 12 and it varies in height quite a bit. We had a lot of compaction. The Rice Lake Regional Airport recorded 20 inches of rain for April, May and June.

    Weve been cultivating corn around the wet spots in the fi eld. We started planting the fi rst week of June and the corn is knee high. The corn is inconsistent in the area some is shoulder high and some is knee high. The alfalfa is coming along really well and we plan to start second crop on Saturday. A lot of neighbors have started. The soybeans in the area look better than the corn, but there is variation. Weve had 4 to 5 inches of rain the last two weeks and there are some places in the area that received 20 to 25 inches for the month. Its been one of the better years for our pastures.

    We did all the fi rst crop hay that we plan to try to get a second crop from. We small squared 500 to 600 bales and round baled 180 bales. The second crop is coming along nicely. There have been struggles with getting hay made and some is turning black in the area. I was cutting out our corn maze today with the tiller and most of the corn is knee- to waist-high. The wheat and oats are coming along nicely. We had a sprayer get stuck in the area that needed a trackhoe to pull out. A JD tractor with triple wheels on snapped the rope.

    I cut my meadow today. Hopefully we will cut the second crop in the next 4 to 5 days. Everywhere I look it looks short and thin. We are waiting for a run of dry weather so we can big square bale it. The corn looks excellent. It stands better than waist high. The soybeans in the area look nice and consistent. Yesterday (July 7) we got inch of rain and we needed that. It was the fi rst rain we had for a couple weeks.

    Were fi nishing cutting second crop hay today (July 8). The dairy guys around here are all cutting. Weve chopped 140 acres and plan to round bale the rest. Most of the second crop was really good except an old seeding fi eld that was about 70 percent. The corn looks really good and stands between waist- and shoulder-high. We plan to put nitrogen on through the irrigator tomorrow (July 9). Our no-till soybeans are a little behind. The row soybeans look a lot better. We havent had much rain the last couple weeks and would take an inch once we get the hay put up.

    We are working on stringing a couple nice days together to get the fi rst crop hay baled. The weatherman said 19 of the last 25 days weve had measurable rain. We chopped some of the hay July 3, 5 and 6, and that hay is coming back nicely. The corn has really shot up and now stands between knee- and waist-high. The soybeans are looking nice except the ones near standing water are yellow. The oats look nice, but havent headed out yet. We could use 10 days of dry weather.

    We havent started second crop hay. We plan to cut the oats this week that is underseeded with alfalfa. I want to save the new seeding. We just cut it and bale it up as straw. Its all headed out. We just got done spraying and have some corn thats waist high and others that is yellow. Well start second crop as soon as we fi nish the oats. The soybeans look decent, but some are too wet. We plan to bale waterways tomorrow (July 9). We round bale them. Weve had over 2 inches of rain the last couple weeks.

    The second crop hay is done. We chopped July 3 and 5. It was a small crop. I think everything was just too compact. In the last two weeks weve only had one tenth of rain. We could use inch of rain, but were not desperate. The corn looks better than it has all year. It fi nally looks green and is getting close to waist high. The roots are going down and getting the nutrients. The area soybeans are 4 to 5 inches tall. Everybody around here has part of a fi eld with black spots.

    Weve had a lot of rain and bad weather. We had tornadoes June 29 that missed my place by mile. It knocked trees down in the pasture and we had some property damage. Thankfully nobody was hurt. We had 8 inches of rain in June and 2 inches in the last few weeks. The corn is 7 feet tall and we will have corn in the area that will be tasseling in a week. The soybeans are between knee- and waist-high. We are working on second crop hay now. The crop looks great.

    We have the majority of the second crop hay done. We cut July 3 and we chopped it July 4 and 5 and put it all in bags. We just have 5 acres along our creek to do yet. We cut our triticale and peas that we underseeded with alfalfa today (July 8). We chop that and feed it to the heifers. We had a good stand, but some of that lodged. The corn looks either really good and stands head high or really horrible, where its too wet. The soybeans are probably 18 inches tall and look good. We are a little too wet.

    SOUTHEASTERN MINNESOTA

    We cut our new seeding hay July 4 and plan to bale it up tomorrow. In June it was so wet we couldnt spray it on ground so we sprayed it with a plane. We didnt want to go across it for three years with lots of ruts. There has been some second crop hay that has been done. The corn ranges from 5 feet to 8 feet tall and looks pretty nice. The soybeans look tremendous in the area. Its dried up the last couple weeks but were still sitting pretty good with moisture.

    Dairy Recipes

    Hot Cream Cheese Crab

    Dip1 (12 oz.) can crab meat 2 (8 oz.) pkgs. cream cheese 1 stick butterGround pepper to taste (optional)

    In a bowl, soften butter and cream cheese. Stir in crab, and mix until blended. Pour in a small baking dish (I use a dish similar to a pie pan) and bake at 350 degrees until bubbly. Serve with French bread or sourdough bread.

    1 (8 oz.) Neufachtel cheese, softened1/4 cup light mayonnaise1/4 cup grated Parmesan cheese (can add more)1/4 cup grated Romano cheese1/4 tsp. garlic powder (or 1 clove garlic)Salt and ground pepper to taste1 (14 oz.) can artichoke hearts, drained and chopped1 cup frozen chopped spinach, thawed and drained1/4 cup mozzarella cheese (up to 1/2 cup)

    Preheat oven to 350 degrees. Lightly spray a small baking dish. Mix together the rst six ingredients in a bowl. Gen-tly stir in artichoke hearts and spinach. Transfer mixture to greased baking dish. Top with mozzarella cheese. Bake until bubbly and lightly browned about 25 minutes.

    Princess Brownies

    1 boxed brownie mix8 oz. cream cheese1 egg1 tsp. vanilla1/3 cup sugar

    Prepare the brownie mix, but do not bake. Beat all other ingredients to-gether with a mixer in a separate bowl. Layer cream cheese blend on top of the brownie batter, or put tablespoon dol-lops on the batter and marbleize. Bake at 325 degrees for 30-35 minutes or until they test done with a toothpick.

    5 lbs. potatoes, cooked and mashed1 (8 oz.) pkg. cream cheese1 cup sour cream2 tsp. onion salt1 tsp. salt1/4 tsp. pepper1 stick of butter

    Make Ahead Mashed Potatoes

    Mix all of the ingredients well. Put it in a greased casserole pan. Preheat the oven to 350 degrees. Then, heat the potatoes for 30 minutes. These will keep for four to ve days.

    2 cups vanilla ice cream1 can of purple grape juice concentrate1 1/2 cups milk

    Combine all ingredients in a blender and blend until smooth and enjoy!

    Hot Artichoke and Spinach Dip

    Creamy Orange Fluff

    1 (6 oz.) pkg. orange Jello2 1/2 cups boiling water2 (11 oz.) cans mandarin oranges, drained1 (8 oz.) can crushed pineapple, und-rained1 (6 oz.)can frozen orange juice concen-trate, thawed Topping:1 (8 oz.) pkg. cream cheese1 cup cold milk1 (3.4 oz.) pkg. instant vanilla pudding

    Dissolve orange Jello in boiling water. Stir in the oranges, pineapple and or-ange juice. Grease a 9x13 pan. Add Jello to the other ingredients. Refrig-erate until rm. In mixing bowl, beat cream cheese until light. Add milk and pudding mix. Beat until smooth. Spread over the orange layer. Chill until rm.
