ABOUT US
In 1993, our founder Gail Stephens decided to turn back the clock on industrialised baking practices and bake bread as it used to be baked: by hand, using quality ingredients and time-worn artisanal methods.
We’ve come a long way since those days of Gail bringing together a handful of London’s best bakers. Yet the stuff that matters – our ethos, suppliers, skill and our decades-old sourdough starter cultures – hasn’t changed.
We’re still baking many of the original breads we baked at the beginning, but we’re baking plenty of new breads now—as well as viennoiserie and cakes—on a daily basis too. We’re still delivering to some of the best chefs and retailers in London , but we’re also now going a bit further afield too.
Fundamentally though, 25 years on from our founding, we still strongly believe in that original mission—giving more people better access to the best-quality baked goods.

ABOUT US
Our main bakery is not free from the following allergens: nuts, sesame seeds, gluten, milk, eggs and soya. However, we do have a gluten free bakery that is a separate unit and free from gluten. Our specialist gluten free range can be found at the back of this brochure. Our specifications, full ingredient declarations and nutritional information are all available upon request.

SUFFOLK SOURDOUGH A strong, malty sourdough, sticky of crumb and sturdy of flavour, baked with rye flour, malt, barley, stout and extra virgin olive oil.

SOURDOUGHS
Our signature move; our pride and joy; our very literal bread and butter. We could go on, but the fact we’ve been nurturing many of our starter cultures for over 25 years says it all. We make and shape each loaf by hand, leaving them to prove and ferment for up to 18 hours to develop that distinctive tangy flavour and structure. That’s why we need two days’ notice for orders: because good sourdough takes time.

Your burgers are the stars of the show, our buns are the support act: specifically crafted to complement strong meaty flavours and the sweet sharpness of cheese. We have buns enriched with milk, cream or butter and glazed with a whole egg, designed to carry the beefiest of burgers. We also have vegan buns, dazzlingly infused with beetroot or carrots and glazed with extra virgin olive oil for colour and shine.
DEMI BRIOCHE POTATO BUNOur unique combination of half butter and half mashed potatoes makes this demi-brioche potato bun robust enough for the juiciest of burgers, and a rich, buttery flavour to boot.
DEMI BRIOCHE CREAM BUNHalf butter, half whipping cream and full flavoured, this luxuriously creamy bun comes in a variety of sizes and seeded toppings.
VEGAN BAPExtra virgin olive oil-glazed baps baked with a mix of white, wholemeal flours and mashed potato, infused with beetroot or carrot and turmeric for a softly sweet flavour, dark crust and dazzling pink or yellow crumb.

Offcut croissant dough reworked back into the pastry mix for the following day enriches our morning pastries with more butter, and a deeper flavour thanks to ongoing fermentation – making ours the breakfast of choice, and zero waste to boot.
CROISSANTA classic for good reason: a flaky, buttery and golden enriched with yesterday’s fermented croissant.
PAIN AU CHOCOLATOur croissant dough, shot through with a generous centre of dark, bitter-sweet chocolate.
ALMOND CROISSANTTwice baked for a crispier croissant shell and a richer flavour, our almond croissants are stuffed with real almond frangipane and crowned with a scattering of toasted almond flakes.
MINI DANISHESOur mini Danishes have a flaky, buttery pastry base, layered with a rich mix of crème pat and almond frangipane and topped with fresh blueberries, strawberries or raspberries.
PASTRY SWIRLSA modern take on our traditional pastries: swirls of pastry laced with various flavours, such as a chocolate crème pat, which is half dipped in chocolate and sprinkled with cocoa powder.

GLUTEN FREE
Our bakers, our artisanal methods and our alternatives to wheat flour form the basis of our gluten free breads, cakes and buns. Our breads and burger buns are baked with an egg to bind the dough and give them that burnished bronze colour, whilst the mix – a careful blend of potato, tapioca, maize, buckwheat and rice flours – makes for a texture and moistness of crumb that is indistinguishable to that formed by gluten flours.
TRAYBAKESRich, moist, deeply moreish – and vegan and gluten free. Our brownie is baked with intense cocoa, whilst our raspberry and almond bake is our own jammy take on a bakewell tart.
