what is organic farming?organic farming is an agricultural production system designed to take the best possible care of the environment, while ensu-ring that the agricultural system operates as naturally as possi-ble. when organic farmers respect the natural life-cycle system they can provide consumers with authentic, fresh and tasty food.

organic valuesthe farmer has to go through a conversion period after starting organic plant and/or livestock production. the conversion pe-riod normally takes two years. During this period the produce from the farm cannot be sold or labelled as organic.

environmentorganic farmers try to preserve the natural environment, in-cluding soil fertility, water resources and biodiversity. the most important agricultural principles are:• Carefulmonitoringof the soil fertility,what farmersput in

and take out of the soil, and how their activities affect its composition

• Adopting awide and varied crop rotation to breakweedand pest cycles, and allow soil recovery time while supplying useful nutrients

Biodiversityorganic farmers preserve and enhance the biodiversity as much as possible, for instance by means of multi-annual crop rotations or by employing mechanical and physical methods of soil culti-vation in order to achieve optimum results for soil health struc-ture. this means that organic farmers control weeds by cutting rather than using herbicides to kill them. this allows for more native plants and animals and a higher concentration of micro-organisms and earthworms in the soil.

mones or similar substances to control reproduction or for other purposes is prohibited. synthetic allopathic veterinary medicinal products are not used for preventive treatment

organic farming in DenmarkDenmark has been at the forefront of organic farming and pro-duction of organic foods for a long time. over the years Den-mark has developed a range of authentic, organic agricultural products and specialities. this is just one reason why the Danes buy more organic products than any other european consu-mers.

in 2011, the per capita consumption of organic food was about 168 euros in Denmark. the value of the retail market share of organic food was 7.6 per cent. organic retail sales have in-creased steadily to reach 734 million euros in 2011.

Dairy products account for a major part of the retail sales, but fruit and vegetables, eggs, bread and flour have seen the grea-test relative market growth in recent years. the most popular products are milk, egg, carrot, oatmeal and flour, but pork, beef and chicken have also manifested themselves on the Danish marked.

organic farmingat the end of 2011, 178,000 hectares were cultivated by or-ganic farms in Denmark. this means that almost 7 per cent of Denmark’s land area is cultivated organically, and the organic area increases year by year. 2,600 farms are certified for organic production, equalling 6.2 per cent of all Danish farms.

Dairy is the largest organic sector in Denmark, as the dairies processed almost 500 million kg organic milk in 2011. the mar-ket share of organic pig meat is lower, but amounted to about 100,000 organic pigs slaughtered in 2011.

the organic market worldwideorganic foods also have a strong market presence in other parts of the world. in 2010, global sales of organic food and drink reached 44.5 billion euros, corresponding to more than a three-fold increase over ten years. organic sales have continued to increase at a healthy pace in recent years despite the financial crisis.

tradeexports of organic products have increased significantly in the past years and amounted to about 130 million euros in 2011 (provisional figures). exports are mainly dairy products and meat but also include vegetables, eggs and feedstuffs.

Despite increasing exports, Denmark is a net importer of organ-ic products. Fresh fruit, vegetables, grain and feedstuffs are the main imports.

the Danish inspection system from farm to forkconsumer confidence is an important factor in the develop-ment and success of the organic sector in Denmark. this con-fidence has been built up through a public inspection system from farm to fork. the system covers the entire production chain from cow-sheds and organic cultivation in the fields to the organic products displayed by retailers.

inspections are carried out by Danish state authorities. this in-dependence of economic interests contributes significantly to the high degree of confidence that consumers have in the or-ganic control system.

inspections are subject to eU organic regulations, requiring in-spections of both physical conditions and documents. all farms certified for organic production, suppliers to agriculture and food producing businesses are inspected. there is a minimum of one annual visit, complemented by a number of spot checks at selected operators and businesses.

regulations on organic farmingin the eU member states organic farming has been protected by council regulation no. 2092/91 since the beginning of the 1990s. in 2007, a completely revised organic regulation, ‘council regulation (ec) no. 834/2007 on organic production and label-ling of organic products,’ was published. it came into force on January 1, 2009.

the new rules include mandatory use of the eU organic logo on pre-packed organic products produced in any of the eU mem-ber states which meet the necessary standards. the eU organic logo can be accompanied by national or private organic logos.

Processedproductswhere95%ormoreoftheingredientsarefrom organic farming, are allowed to display the organic logo and make reference to organic farming in the sales description. Products that bear any reference to organic farming alwaysinclude an identification number of the inspection authority/body.

the eU organic logo and the Danish logoorganic products sold in Denmark today are often labelled with both the green ‘eU-leaf’ logo and the Danish national logo. the latter is recognised by almost all Danish consumers.

when consumers choose to pay a premium for organic pro-ducts, they require certainty that they are getting what they pay for. the organic logos and labelling system provide the basis for maintaining this confidence.

Understand the eU organic logothe eU organic logo is accompanied by two lines of text indica-ting:

1) the origin of the agricultural goodseU agriculture – the agricultural product has been farmed in the eUNon-eU agriculture – the agricultural product has been farmed in third countrieseU/Non-eU agriculture – a part of the agricultural product has been farmed in the eU and a part of it has been farmed in a third country

2) an identification number indicating the national authority/body controlling the organic status of the goods, e.g.DK-ØKO-XXX (Denmark) De-ÖKO-XXX (Germany)
