Prep: 30 minutes | Refrigerate: 30 minutes | Serves 20 (2 balls each)1 cup Hy-Vee old-fashioned rolled oats1 cup whole grain brown crisp rice cereal
1 (2-ounce) package Hy-Vee sliced almonds
1⁄2 cup chopped Hy-Vee dried apricots1⁄4 cup ground flaxseed meal2 tablespoons chia seeds
2 tablespoons Hy-Vee mini semisweet chocolate chips
1⁄4 teaspoon Hy-Vee salt1 cup unsalted almond butter1⁄4 cup agave nectar1 teaspoon Hy-Vee vanilla extract
1. In a large mixing bowl, stir together oats, cereal, almonds, apricots, flaxseed meal, chia seeds, chocolate chips and salt.2. In a small bowl, combine almond butter, agave nectar and vanilla; stir until combined. Add to oat mixture; beat with electric mixer on medium-low speed until thoroughly combined.
3. Shape mixture into 1-inch balls. Transfer to an airtight container. Chill for 30 minutes.4. For convenience and portability, wrap balls individually in plastic wrap. Store in the refrigerator for up to 1 week or in freezer for up to 1 month.
